KICKY HOT CHOCOLATE
I love hot chocolate with cinnamon schnapps. This is an adaptation of the "Favorite Hot Chocolate" recipe by Hershey's.

Steps:
- Mix sugar, cocoa and salt in saucepan.
- Stir in water.
- Cook and stir over medium heat until mixture boils.
- Boil and stir 2 minutes.
- Stir in milk and heat, do not boil.
- Remove from heat, add vanilla.
- Pour into mugs.
- Add a shot of schnapps.
- Top off with whipped cream and a sprinkle of cinnamon.

CLASSIC HOT CHOCOLATE

Steps:
- Combine the milk, heavy cream, sugar, cocoa powder and a pinch of salt in a medium saucepan. Cook over medium heat, whisking occasionally, until the sugar and cocoa powder dissolve and the milk is steaming; do not boil.
- Whisk in half of the chopped chocolate until melted, then whisk in the remaining chocolate until smooth. Remove from the heat and whisk in the vanilla. Pour into mugs and top with marshmallows or whipped cream.
BELGIAN HOT CHOCOLATE
One of the first recipes David Lebovitz put up on his site was a hot chocolate recipe from Wittamer, one of the best chocolate shops in Brussels, where he actually worked for a time. The head chocolatier, Michael Lewis gave him this recipe, which they serve in their chic tea salon overlooking the place Sablon. Try to find the best chocolate you can(30-40%). Adapted from The Great Book of Chocolate.

Steps:
- Warm about one-third of the half-and-half or milk, with the chopped chocolates and salt, stirring until the chocolate is melted.
- Whisk in the remaining half-and-half or milk, heating until the mixture is warmed through. Add the cinnamon.
- Use a hand-held blender, or a whisk, and mix the hot chocolate until it's completely smooth. Serve very warm. Enjoy!
- At Wittamer, it's served with a poof of whipped cream and chocolate curls.
FROZEN HOT CHOCOLATE
Oprah recently featured this treat as one of her favorite things. I ordered the mix from Serendipity in NYC. The food editor from our local paper went in search of the recipe after numerous requests from readers and here it is--straight from Serendipity 3 restaurant. When my mix arrives, I'll let you know how this recipe compares to the real deal.

- Chop chocolate into small pieces and place in top of double boiler over simmering water, stirring occasionally until melted.
- Add chocolate mix and sugar, stirring constantly until thoroughly blended. Remove from heat and slowly add 1/2 cup milk, stirring until smooth.
- Cool to room temperature.
- In blender, place the remaining 1 cup milk, room-temperature chocolate mixture and ice.
- Blend on high speed until smooth and the consistency of a frozen daiquiri. Pour into a giant goblet and top with whipped cream and chocolate shavings.
- Enjoy with a spoon or a straw.
GOURMET BELGIAN HOT CHOCOLATE

Steps:
- Start off by mixing together the milk and the vanilla bean in a saucepan.
- Heat the milk on medium flame.
- Do so till you see the appearance of bubbles around the edge of the saucepan.
- Reduce flame.
- Add the chocolate pieces.
- Whisk occasionally, until melted.
- Remove from flame.
- Remove the vanilla bean.
- You may rinse, dry and save the vanilla bean to use later on in another recipe.
- If the milk is too thick, add some more milk to thin it.
- Just before serving, whisk the milk vigorously to create alot of foam.
- Serve with a smile!

- Dice up the candy bars.
- Melt the candy bar pieces on medium-low heat until it forms a gooey mess.
- Pour in 1 cup of milk and whisk until smooth. And one cup of marshmallows. Stir until melted.
- Whisk in two more cups of milk, and heat until warmed through.
- Serve.
