A simple recipe for chicken and polenta with garlic, a typical Romanian polenta dish, full of comfort and flavor.

Garlic chicken:
6 whole chicken legs/ chicken quarters (See note)
2 tablespoons vegetable oil
1 teaspoon paprika
1 1/2 cups chicken stock
½ bunch parsley
4 large garlic cloves
fine sea salt and pepper
For the polenta:
1 2/3 cup polenta
4 2/3 cups water
1 teaspoon fine sea salt
2 teaspoons butter (optional)

Steps:

  • Remove the skin from the chicken legs and divide them at the joint. Sprinkle them generously with salt and pepper.
  • Brown chicken: Heat the oil in a large, heavy-bottom pan, a pan large enough to hold the chicken pieces in one layer. Place the chicken parts in the pan and brown all over. Sprinkle the paprika on top and stir well to coat the chicken parts with it. Add the chicken stock, it should cover the meat almost entirely, but the chicken should not be swimming in liquid.
  • Simmer: Chop the parsley and add half of it to the pan. Add some pepper, bring to a boil, lower the heat and cover the pan leaving a crack open. Cook for about 30 minutes (turning the chicken once in between) or until the meat is cooked through.
  • Polenta: Start making the polenta about now if you want to serve this immediately.
  • Sauce: By the end of the cooking time, the sauce should have been reduced by half. If you want a thicker sauce, remove the lid from the pot during the last 5 minutes of the cooking time. I don't find it necessary; I like to have a runnier sauce to soak the polenta.
  • Grate the garlic cloves and add them to the pan together with the rest of the chopped parsley. Cook for 1 minute, remove from heat, and season.
  • To make the polenta, heat the water in a large pan but do not let it come to a boil. Add the salt, stir to dissolve. Add the polenta in a slow stream while stirring all the time.
  • Bring to a boil, lower the heat, cover with a crack, and cook, often stirring, according to the packet's instructions. Mine takes about 20 minutes, but that can differ greatly depending on the polenta you bought.
  • Add butter: Once the polenta is ready, stir in the butter.
  • Serve as soon as the polenta is ready.

Nonstick cooking spray, for the baking dish
One 1-pound tube polenta, sliced 1/2-inch thick
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil, plus more for serving
2 boneless, skinless chicken breasts
1 teaspoon Italian seasoning
1/2 cup grated Parmesan, plus more for serving
6 cloves garlic
1 pint cherry tomatoes on the vine

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking dish with nonstick cooking spray.
  • Place about 5 slices of the polenta in an even layer on the bottom of the baking dish. Sprinkle with salt, pepper and 1 tablespoon olive oil. Place the chicken breasts on top of the polenta slices and sprinkle with salt and pepper. Top each with the Italian seasoning and Parmesan. Arrange the garlic cloves and tomatoes around the chicken. Sprinkle with salt and pepper and drizzle with the remaining 4 tablespoons olive oil.
  • Bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 30 minutes. Garnish with Parmesan and olive oil to taste. Serve warm.

4 chicken thighs and 4 drumsticks, bone-in, skin-on
Salt and freshly ground black pepper
2 tbs olive oil
1 yellow onion, chopped
1 medium orange bell pepper, seeded and chopped
1 medium yellow bell pepper, seeded and chopped
10 oz fresh cremini or white button mushrooms, brushed clean
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried rosemary
1 teaspoon dried oregano
⅛ teaspoon red pepper flakes
1 bay leaf
1 cup hearty red wine
1 can (28 oz) diced tomatoes, drained
1 tsp ground dried porcini mushrooms
1 cup non-instant polenta (coarse cornmeal), cooked (See https://www.daringgourmet.com/2013/02/18/polenta-lasagna/ for directions on how to prepare polenta, only change quantity to 1 cup coarse cornmeal and 3 cups chicken broth.)

Steps:

  • Sprinkle the chicken pieces with salt and pepper. Heat the oil in a Dutch oven over medium-high heat. Once the oil is hot, add the chicken pieces, four at a time to avoid over-crowding - and fry until both sides are browned, about 5 minutes on each side. Repeat with the remaining chicken and transfer to a plate.
  • Add the onion and bell pepper and saute over medium heat for 5 minutes, until softened. Add the mushrooms and garlic and saute another 5 minutes until the mushrooms are tender. Add the dried herbs and red pepper flakes.
  • Add the red wine and bring it to a boil over heat heat until the liquid is reduced by half, about 5 minutes. Add the tomatoes and ground porcini mushrooms. Stir to combine and return to a boil. Return the chicken to the Dutch oven and cover. Reduce the heat to medium low and simmer for 30 minutes, or until the chicken is cooked through, showing no signs of pink when cut into near the bone.
  • Transfer the chicken to a warmed platter and cover with aluminum foil to keep warm. Return the sauce to a boil over high heat and cook until it has thickened a little, 3-5 minutes. Add salt and pepper to taste.
  • Dish out the polenta onto four plates, arrange two pieces of chicken on top of each serving of polenta, and spoon the sauce and vegetables over the chicken and polenta. Serve immediately.

6 boneless, skinless chicken breasts, rinsed and patted dry
Salt and freshly ground black pepper

1 (14-ounce) jar pasta sauce
2 tablespoons tomato paste
1 teaspoon crushed garlic
1/4 cup dry sherry
1 (24-ounce) tube pre-made polenta, sliced 1/2-inch thick (recommended: Gennaro)
Grated Parmesan, for garnish

Steps:

  • Combine frozen vegetable medley in the bottom of a 5-quart slow cooker. Season both sides of the chicken breasts with salt, pepper, and Italian seasoning. Place chicken on top of vegetables.
  • In a large bowl, stir together pasta sauce, tomato paste, garlic and sherry. Pour 2/3 of the sauce over chicken and vegetables. Top the chicken with polenta slices and cover with remaining sauce. Cover and cook on the LOW setting for 4 to 5 hours.
  • Serve hot with Parmesan.

1/4 teaspoon pepper

12 ounces mushrooms
4 cloves garlic
4 teaspoons olive oil
1/2 pound onion
7 or 8 ears corn (2 cups kernels)
1 1/2 pounds zucchini
1 tablespoon fresh oregano leaves
2 cups instant polenta
2 1/2 pounds fully ripe tomatoes
6 ounces fresh Parmigiano Reggiano
1/4 cup chopped parsley

Steps:

  • Wash, trim, dry and slice mushrooms (use food processor); peel and mince garlic.
  • Heat 3 teaspoons of oil in a large nonstick pan. Add the mushrooms and garlic. Saute until the mushrooms begin to brown, stirring occasionally.
  • Chop onion in food processor. Heat the remaining oil in a small nonstick pan and saute the onion until it begins to soften and brown.
  • Shuck corn and steam for about 3 minutes.
  • Scrub, trim and slice zucchini in food processor.
  • Wash and chop oregano and add with the zucchini to the mushrooms and continue cooking over medium heat, five or six minutes, until zucchini is crisp but tender.
  • Bring water to boil for polenta, following package directions.
  • Wash, trim and slice the tomatoes in the food processor and add to onion; simmer until the rest of the dish is ready.
  • Coarsely grate the cheese.
  • Slowly add polenta to the boiling water and stir until mixture begins to thicken. It is ready when water is almost completely absorbed. Remove from heat and stir in half of the cheese. Then spoon immediately into large shallow baking dish, about 10 by 15 inches, and spread evenly.
  • Remove enough corn from cob to make 2 cups and stir into zucchini mixture. Spoon over polenta and top with tomato sauce; sprinkle with remaining cheese. Either serve immediately or run under broiler (do not preheat) for a couple of minutes. Just before serving, sprinkle with parsley.

My entire family loves this recipe. A quick baked polenta topped with red sauce. Very easy to make and great the next day too (and the day after that!) Top with additional Parmesan cheese if you like.

2 cups milk
2 cups chicken stock
1 cup yellow cornmeal
1 cup Parmesan cheese
2 cups spaghetti sauce, or your favorite recipe

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking dish.
  • In a large pot, combine the milk and chicken stock. Bring to a boil over medium-high heat. When it is at a rolling boil, gradually whisk in the cornmeal, making sure there are no lumps. Reduce heat to low and simmer, stirring constantly until thick, about 5 minutes. Remove from the heat and stir in the Parmesan cheese.
  • Pour the polenta into the prepared baking dish, and spread spaghetti sauce over the top.
  • Bake for 10 minutes in the preheated oven, or until sauce is bubbling.

BAKED POLENTA WITH TOMATO SAUCE AND RICOTTA

I turn to polenta when I am in need of some good, old-fashioned comfort food. I suspect it's because there is not much difference between polenta and the grits I was raised on in North Florida. This simple dish relies once again on my favorite tomato sauce and not much else other than freshly cooked polenta made better than ever with a little added ricotta.

For the tomato sauce:
4 tomatoes
1 medium yellow onion, skin on
1 small bulb garlic
2 tablespoons extra-virgin olive oil
Salt
For the polenta:
1 cup polenta
1 tablespoon extra-virgin olive oil
4 tablespoons chopped fresh basil
1/2 cup ricotta cheese
Salt and freshly ground black pepper
1/4 cup grated Parmesan cheese
For the garnish:
4 tablespoons chopped basil

Steps:

  • To prepare the tomato sauce:
  • Preheat the oven to 425°F. Place the tomatoes, yellow onion, and garlic in a baking pan. Bake for 45 minutes or until the garlic is soft and the skin is peeling away from the tomatoes. Remove from the oven and cool to room temperature. Remove the skin from the tomatoes and put in a saucepan. Squeeze the garlic out of the bulb and into the tomatoes. Remove the skin from the onion. Coarsely chop the onion and add to the tomatoes.
  • Add the olive oil to the tomatoes and puree with a handheld immersion blender until smooth. You may need to add up to 1/3 cup water if there is not enough liquid. Season with salt. Warm the tomato sauce just prior to use.
  • To prepare the polenta:
  • Preheat the oven to 400°F. In a medium saucepan, bring 3 cups of water to a simmer and stream in the polenta. Whisk together until there are no lumps. Cover with a lid and continue to cook over low heat for 20 minutes, stirring every 3 minutes. Be careful when you go to stir the polenta-it tends to spit out pieces of the cornmeal, which is very hot. Remove the polenta from the heat and stir in the olive oil and basil. Drop in teaspoon-size pieces of the ricotta cheese. Pour the polenta into an 8-inch square baking pan and spread evenly. Sprinkle with the Parmesan cheese and let sit for 1 hour or until the polenta has firmed up. Bake the polenta in the oven for 15 minutes or until heated through. Cut the polenta into 8 equal pieces.
  • To serve:
  • Place 1/2 cup warm tomato sauce in 4 shallow bowls and top with two pieces of the polenta. Sprinkle with the chopped basil.

FOR THE CHICKEN:
4 chicken legs skin removed (optional)
4 clove garlic split
1 pinch salt
1 pinch black pepper
FOR THE TOMATO SAUCE:
2 onions sliced
2 carrots sliced
1 parsnip diced or sliced
3 tbsp parsley fresh chopped roughly
1 tsp salt i used himalayan pink
1/2 tsp black pepper
1 bay leaf
1 glass white wine
2 tbsp tomato paste or 1 can of chopped tomato
FOR THE POLENTA :
1 l water
240 g cornmeal
2 tbsp rosemary dry or fresh
1/2 tsp salt
4 tbsp creme fraiche to serve

Steps:

  • 1. Cook the chicken: 1. Cook (covered) the chicken legs thoroughly into a frying pan or a skillet. Add salt and pepper to taste. Drizzle some water from time to time and when the chicken is almost cooked add half a glass of white wine and one or two crushed and finely chopped garlic cloves. Reduce all juices until it begins to sizzle. Brown slightly on both sides. Set aside. This should take about 20-25 min (depending on the legs size).
  • 2. Making the tomato and vegetable sauce: 1. While chicken is cooking, cut the onions into halves and then make it rings, strips, however you like. I cut them into half rings by cutting the onion into two and then slice it. Cook in a pan with a little salt and pepper for about 5-7 min over medium heat. Drizzle some water from time to time so this remains nice and soft rather than caramelise.
  • 3. 2. Add the carrot, parsnip, 1 bay leaf, white wine and cook (covered) for a further 5 minutes.
  • 4. 3. Add the tomato paste and a drizzle of water if needed. Cook for another 5 minutes.
  • 5. 4. Season to taste with salt and pepper.
  • 6. Make the polenta : 1. Add 1 l water to a larger saucepan. Add a teaspoon of salt and the dry or fresh rosemary. Bring to boil. Allow the water and herbs to boil for 1 minute then remove the rosemary needles. I usually use a sprig as it gets easier to remove.
  • 7. 2. Add the cornmeal with one hand while whisking with the other. Whisk continuously for a minute to avoid any lumps formation.
  • 8. 3. Cook for 20-25 minutes stirring every now and then. It will form a crust, do not worry that's how it should do.
  • 9. 4. When ready simply dish out on plates with the help of a serving spoon.
  • 10. 5. Dish out the chicken along with the tomato sauce and serve with a dollop of creme fraiche.

CRISP ITALIAN CHICKEN & POLENTA

500g pack ready-to-use polenta
25g parmesan , grated
2 skin-on boneless chicken breast fillets
250g pack cherry tomatoes
leaves from a few sprigs rosemary , torn
1 garlic clove , sliced
2 tbsp olive oil

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Using your fingers, roughly break up the polenta into small chunks and scatter in the bottom of a small roasting tin. Tip in the parmesan and mix. Sit the chicken breasts, cherry tomatoes, rosemary and garlic on top of the polenta, drizzle with olive oil, then season to taste.
  • Roast for 25 mins until the chicken skin is crisp and golden, and the polenta and cheese are turning crusty around the edges. Serve with a green salad.
