2 cups cut-up cooked chicken
1 carton (32 oz) Progresso™ chicken broth (4 cups)
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh thyme leaves
2 cloves garlic, finely chopped
2 2/3 cups frozen mixed vegetables, thawed and drained
1 cup Original Bisquick™ mix
1/3 cup milk

Steps:

  • In 3-quart saucepan, heat all ingredients except Bisquick mix and milk to boiling, stirring occasionally.
  • In small bowl, stir Bisquick mix and milk with fork until soft dough forms. Drop dough by 18 teaspoonfuls onto boiling soup. If dumplings sink into soup, carefully bring them to top of broth using slotted spoon. Reduce heat to medium-low.
  • Cook uncovered 10 minutes. Cover and cook 15 minutes longer.

1-2 teaspoons olive oil
1 cup diced celery (about 2-3 stalks)
1 cup diced carrots
1 cup diced yellow or white onion
1 teaspoon salt (I use coarse, kosher salt)
1/2 teaspoon dried thyme
1/4 teaspoon pepper
8 cups chicken broth (I use low-sodium)
1 to 1 1/2 pounds boneless, skinless chicken breasts or 3-4 cups cooked chicken (see note)
1/2 cup water + 1/4 cup all-purpose flour to thicken
1/2 cup frozen peas
1 cup all-purpose flour (use 1 1/4 cups flour for sturdier dumplings)
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon dried thyme or sage
1/2 cup sour cream
1/2 cup milk
1 tablespoon vegetable or canola oil

Steps:

  • In a large pot, heat the oil over medium heat. Add the celery, carrots, onions, salt, pepper and thyme. Cook for 2-3 minutes, stirring often, until the vegetables start to soften. Add the chicken broth and chicken (if using uncooked chicken). Bring to a simmer and cook for 10-15 minutes until the chicken is just cooked through and/or veggies are tender. Remove the chicken to a plate and cut into small pieces.
  • In a small bowl (or blender), combine the 1/2 cup water and 1/4 cup flour until smooth. Whisking vigorously, slowly add the flour mixture into the hot broth and stir until well combined. Stir in the frozen peas and cooked chicken and bring the soup back to a simmer.
  • For the dumplings, in a medium bowl, stir together the dry ingredients. Add the sour cream, milk and oil. Stir just until combined (don't overmix).
  • Drop teaspoon-sized amounts (the dumplings should be fairly small, they'll expand while cooking) of dumpling dough into the boiling soup, covering the entire surface of the soup. I use a #60 small cookie scoop. Cover the pot and simmer the soup and dumplings for 12-15 minutes. Do not lift the lid of the pot while the dumplings cook! Add time if the dumplings haven't cooked all the way (or if they are bigger in size than teaspoon-sized portions).
  • When the dumplings have cooked fully, remove the lid and gently stir the dumplings to break them apart, if needed. Serve.

2 tablespoons olive oil
Pinch crushed red pepper
1 chicken (3 pounds) boned, skinned, and visible fat removed, diced, (save the bones and carcass)
3 quarts chicken stock
1 pound assorted small dried pasta shapes, such as stars, tubes, shells, etc.
12 small thermoses
Creole seasoning, recipe follows
1 1/2 cups chopped onions
1 cup chopped celery
1 cup diced carrots
1/2 cup chopped green onions
2 tablespoons minced garlic
1/4 cup fresh parsley leaves
2 tablespoons chopped fresh basil
4 bay leaves
2 cups assorted chopped fresh vegetables, such has beans, zucchini, yellow squash, or cabbage, small dice
1 1/2 cups torn spinach leaves, cleaned and stemmed
1 cup finely chopped fresh parsley leaves
12 small resealable plastic snack bags
2 1/2 tablespoons paprika
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
2 tablespoons salt
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large sauce pot, heat the olive oil. Season the chicken with Creole seasoning. When the oil is hot, add the chicken, bones, and carcass and saute for about 5 minutes, or until the meat and bones are brown. Remove the bones and carcass. Add the onions, celery, carrots, green onions, garlic, parsley, basil, and bay leaves. Season with Creole seasoning. Saute the vegetables for 4 minutes. Add the chopped vegetables, spinach, and crushed red pepper and saute for 1 minute. Add the stock and bring the liquid to a boil. Add the pasta. Reduce the heat to a simmer, uncovered, for about 20 minutes, or until the pasta is tender. Reseason if necessary. Serve hot. Ladle the soup into thermoses and seal tightly with the lid. Place a spoonful of the parsley into each bag and seal completely.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

This looks like a difficult recipe but it really isn't, just a lot of notes. It's really easy I promise. I have been tinkering with chicken soup the last two winters and found this to work for me. It's still a work in progress but by far this has been the tastiest way of making it. If you want to add the noodles please only put in half of the amount or cook them separately from the soup to help minimize the noodles from soaking up all the tasty broth. As you can see from my photos, the noodles that were cooked in the soup soaked up the majority of the broth, but no one cared as it tasted just fine. Also, pick the veggies that you like. That is the beauty of this soup, you can put what ever veggies that you like in the pot. If it's a softer veggie that will cook up quickly then you'll most likely want to add that towards the end of the cooking time, rather than towards the end unless you don't mind it being too mushy.

5 chicken thighs (with skin and bone in)
1 brown onion (medium in size)
1 garlic clove (large in size or two small sizes)
1 tablespoon parsley flakes
1 tablespoon oregano

2 tablespoons chicken bouillon powder
2 cups celery (Chopped)
2 cups baby carrots (sliced)
4 medium russet potatoes (quartered and cut into bite sized pieces)
1 yellow squash (quartered and cut into bite sized pieces)
17 5/8 ounces pasta (your choice pasta) (optional)
2 cups flour
1/2 teaspoon salt
3 teaspoons baking powder
1 cup broth (from soup)
4 tablespoons oil

Steps:

  • Place chicken in 7 Quart pot fill with water, leaving about an inch from the top of the pot (don't want it to over flow while it cooks.).
  • Add the ingredients from the Chicken and Seasoning Section immediately after you have done the above step. NOTE: I like to crush up the parsley flakes and oregano in my hand over the pot after I've measured it. You don't have to, it's just something that I did. As for the garlic clove, either use a garlic press or mince finely as it will not be removed from the soup. This is so that you will have flavorful chicken and will be the start of the tasty broth.
  • Cook on a medium heat for at least an hour and a half to two hours, especially if frozen. I choose to use the chicken with skin and the one bone because it always seems to come out most tender and give the broth extra flavor. But if you use boneless skinless thighs or breasts that's entirely up to you, but I can't guarantee that it will turn out the same. At this time you want to prepare your carrots and slice them up so that you can just dump them in the pot in the next step to save you some time.
  • When the chicken has been cooked through, using tongs carefully remove the chicken and set on a plate. Then fish out the bay leaves, it will be easier to this now rather than later when you have lots of other goodies in your pot. And dump in the sliced baby carrots now as they are more of a hard vegetable and will take probably the most time to cook.
  • Using tongs and a knife set a piece of chicken on your cutting board and carefully remove the skin, bone, and any cartilage from the chicken. You want to do this while it's still hot as you're going to toss it back into the pot and don't want it to cool down too much.
  • Chop into big chunks and put back in the soup pot, you don't want them to be too small or they will fall apart and shred. I like my soups hearty so I do big chunks, but make this soup as you desire.
  • Wash your cutting board and knife, then wash (peel if you like), quarter and chop potatoes into bite size pieces not too thick and not too thin. Put into pot and do the same to your squash, you can do half of a yellow one and half of a green one if you want. Pick whatever veggies you want and keep in mind that if they're soft veggies like squash they will cook quickly and will need to be added to the end of the soup rather than at the beginning.
  • If you choose to put pasta in I would do this immediately after the last veggie is tossed in to help it cook up, I would probably only put half a bag of the pasta in as it swells up and will steal a lot of the broth. Or you could cook it in another pot and add it to the soup when it is cooked. It's up to you. I cooked mine with my soup and it stole all of the broth not leaving me very much broth. It was still tasty though and no one cared that the broth was missing.
  • If you chose to add the pasta, once you have added it to your soup or started it in a different pot I would recommend getting the dumpling mixture ready.
  • I doubled my mom's dumpling recipe as there never seems to be enough to go around. It makes around 12 -15 dumplings. Feel free to scale back if that's too much. Simply take all of the ingredients for the dumplings and put in a bowl and mix throughly. You should have a tacky ball of dough. If it's too dry either add a splash of milk, or more of the broth from the soup.
  • Gently drop golf ball size or slightly larger pieces of tacky dough into the soup to allow to cook. They cook for about 5 to 10 minutes before completely done. DO NOT cover with a lid while they are cooking or you'll have a very moist looking dumpling which for me was always harder to tell if it was cooked all the way or not. Better to leave uncovered. When the dumplings are cooked turn off the flame and serve with your favorite crackers.
  • NOTE: I used Casarecce Pasta which is not recognized by this site. It's a partially rolled long pasta pieces. But use whatever pasta that you prefer for this type of soup or none at all if you wish.

2 tablespoons olive oil
2 carrots, peeled and chopped
1 parsnip, peeled and chopped
1 medium onion, chopped
2 celery ribs, chopped
2 bay leaves
salt and pepper
6 cups vegetable broth (I recommend Imagine No-Chicken broth)
1 lb vegetarian chicken strips, cubed (I recommend Lightlife's Chik'n Style Strips)
1/2 lb egg noodles (I recommend De Boles Organic Eggless Ribbon Style Pasta)
2 tablespoons fresh parsley, chopped
1/4 cup fresh dill, chopped

Steps:

  • 1. Heat the oil in a large pot over medium heat.
  • 2. Add the carrots, parsnip, onion, and celery and cook until soft, about 5 minutes.
  • 3. Add the bay leaves and season with salt and pepper, to taste.
  • 4. Add broth, turn up the heat, bring to a boil.
  • 5. Add the veggie chicken chunks, return to a boil, then reduce heat to medium.
  • 6. Add noodles and simmer until the noodles are tender, about 8 minutes.
  • 7. Remove from heat.
  • 8. Add parsley and dill, stir, remove the bay leaves and serve.
  • 9. (Add water or more broth to reach desired thickness.).

I used to make this with home made noodles insted of dumplings but there are heaps of chicken noodle soup recipes. It takes a bit of time but it is worth it. This is delicious served with heaps of crusty bread.

3 skinless chicken breasts, chopped
1 cup of chopped onion
1 cup of chopped carrot
1 cup of chopped celery
1 cup of chopped sweet potato
1 small parsnip, peeled and chopped

1 small turnip, peeled and chopped
2 tablespoons butter or 2 tablespoons margarine
3 bay leaves
1/4 teaspoon thyme
1/2 teaspoon salt and pepper
4 chicken bouillon cubes
6 cups water
dumplings
2 cups plain flour
1/2 teaspoon salt
1 teaspoon baking powder
3 tablespoons butter or 3 tablespoons margarine
3/4 cup milk
1/4 cup of tepid water
1 tablespoon of chopped fresh parsley (optional)

Steps:

  • On a medium heat melt 1 tablespoon of the butter in a large pan add the chicken and brown for about 5 minutes.
  • Remove the chicken to one side then add the rest of the butter to the pan. Add all the vegetables and salt. reduce the heat to low and saute the vegetables for at least 10 minutes, stirring often to stop them burning. (add a little more butter if needed). This draws out all the vegetable flavours.
  • Return the chicken to the pan and add the bay leaves, thyme, builion cubes, pepper and water.
  • Bring to the boil and reduce to a simmer for twenty minutes.
  • Preheat the oven to 150. Remove the soup from the pan and place in an oven proof dish with a tight fitting lid. place the soup in the oven for one hour.
  • Dumplings.
  • In a bowl add the flour, salt, baking powder and parsley. mix gently, add the butter in bits, cut in until the mixture is coarse and grainy.
  • Stir in the milk and water with a fork until the mixture comes together.
  • Divide the dough into about 16 small dumplings. Then roll each dumpling into balls.
  • After the soup has been in the oven for one hour remove from the oven, discard the 3 bay leaves, taste to check seasoning then add the dumplings. cover the soup and return to the oven for 15 minutes. Remove the lid and bake in the oven for a further 5 minutes.
  • Remove from the oven and serve immediately.
  • Enjoy with crusty bread.

This is a WONDERFUL hearty meal, for a sick person especially; the veggie version of chicken noodle soup. Great winter soup meal. You could always do the stock in the crock pot, transfer it to the stove, and make the dumplings when you are about ready to eat. But know that the veggies will get super soft this way. If you use eggs and prefer, sub 1/2 cup water with 2 beaten eggs. This will cut the dumpling cooking time to 20 minutes at most altitudes.

2 tablespoons canola oil
1 onion, chopped
1 leek, cut into rounds (white part only, or 1-inch of greens if they look good)
1 bay leaf
1/4 teaspoon thyme (dry, or bunch fresh)
1/4 teaspoon parsley (dry, or bunch fresh)
4 small carrots, chopped
2 celery ribs, halved the long way, then chopped
4 garlic cloves, minced
1/4 cup nutritional yeast flakes (optional)
8 cups water or 8 cups vegetable broth

2 cups flour
1 1/2 teaspoons celery salt
4 tablespoons canola oil
1/2 cup water
6 tablespoons soymilk

Steps:

  • Heat oil; add onion, leek, bay leaf, thyme, and parsley.
  • Cook on a low setting for 10 to 12 minutes until soft and translucent.
  • Bring up the heat to medium or medium-high.
  • Add the carrots, celery, and garlic.
  • Stir occasionally until carrots are done or mostly done, 10 minutes or so. When vegetables are cooked, stir in the nutritional yeast flakes; they will get creamy with the veggies and oil.
  • Add 8 cups water (2 quarts), and salt.
  • Cover and bring to a boil.
  • While water is coming up to a boil (it will do so quickly!) put the dumplings together.
  • DUMPLINGS:.
  • Mix wet in one bowl, dry in another. Pour wet into dry and combine until a heavy dough forms.
  • Knead on lightly floured surface for 1 minute. If dough is sticky add a bit more flour until it is fairly dry.
  • Let dough rest 5 minutes.
  • Roll out to 1/8" thickness and cut into 2 x 1" strips (or whatever size you find easy to work with though they'll take a lot longer to cook if they are bigger).
  • Drop into boiling broth; cover and simmer 20 to 35 minutes.
  • The non-egg version needed to cook longer than my original version, but I'm also high altitude. Taste for doneness. They'll seem mealy if they're not done yet. When done they are sort of like thick noodles or a biscuit or something. Yummy and hearty. If in doubt, let them cook another 5 minutes and taste again.

10 quarts water
3 bunches celery, chopped
