- In a small bowl mix chicken stock ,Soy sauce, Honey,2 tbsp flour, chilli flakes. Keep aside
- In a bowl take chicken cubes, add a dash of soy sauce, remaining 2 tbsp all purpose flour. Toss well.
- Heat 1 tbsp of oil in a heavy bottom pan preferably cast Iron pan. Fry chicken cubes in 2-3 batches on medium-high heat for 2-3 minutes until they are browned. Take out and keep aside.
- In the same pan add remaining 1 tbspn oil. Add chopped Ginger and garlic. Fry for a minute on medium heat. Add Sliced Onion. Fry for 2-3 minutes.
- Add mushroom, Snow Peas and Red bell pepper. Fry on medium-high heat for 2-3 minutes. ( The vegetables needs to tender and crisp.Don't overcook).
- Add chicken stock mixture. Boil for 2-3 minutes. When the Vegetable sauce mixture starts to thicken, toss in fried chicken cubes. Mix well. Season with salt if required. Switch off gas.
- Garnish with toasted Sesame seeds. Serve hot with white rice.
CHICKEN & MUSHROOM STIR FRY

- Prepare all the vegetables buy cut them into thin slices and cut the chicken breast into thin slices. Marinade the chicken slices with corn starch, sesame oil, sugar, baking soda and light soy sauce. Mix it well with hand and set aside for 10 to 15 minutes.
- In a small mixing bowl add the oyster sauce, light soy, sesame oil, sugar, corn starch, white pepper and vinegar. Mix well until sugar and con starch dissolve and set aside.
- Heat the large wok/pan into medium-high heat, drizzle 2 tablespoons of vegetable oil and stir fry the chicken slices 2-4 minutes until cooked through. Remove the chicken from pan and set aside.
- Clean the remaining crust from the pan, drizzle 1 tablespoon of oil, add onion slices and dry chillies and stir fry for few seconds, follow with the garlic slices, mushroom, and bell pepper slices. Continue cook for another 1-2 minutes and place the chicken slices back in.
- Pour the sauce mixture and toss well to combine the sauce and the ingredients evenly. Stir in the spring onions.
- Turn off heat and transfer to serving plate. Garnish with toasted sesame seeds and extra chopped spring onions. Perfect to serve together with hot steamed rice or stir fry noodles.

- Mix the cornstarch, light soy sauce, and oil in a bowl for the marinade. And add toss in the chicken. Set aside. Mix 1/3 cup of hot water or chicken stock with cornstarch into a slurry and set aside. If you like more sauce for the rice, increase your hot water/stock and add more salt or soy sauce to taste.
- Heat the wok over high heat until smoking, add a tablespoon of oil to coat the wok and spread the chicken around evenly. Let the chicken sear (don't move the pieces) for about 60 seconds until browned on one side. If the wok is heated properly, the chicken should not stick. Next, give the chicken a quick stir and add the minced garlic and snow peas. Add the shaoxing wine around the rim of the wok to deglaze and stir everything together using a bottom to top folding motion for about 30 seconds.
- Movement is important for the snow peas to cook evenly. The pods should be just starting to turn bright green now. Working quickly, add soy sauce, oyster sauce, sesame oil, salt, pepper, and sugar. Stir to combine, about 15 seconds.
- Stir up your slurry mix (the water and starch has probably separated by now) and add to the wok. Stir-fry for another 30 seconds, or until the sauce is thick enough to coat a spoon. All of the pea pods should be bright green by now. Don't overcook or you precious pea pods will become limp and turn yellow!
- Plate and serve immediately with steamed rice.

- With a sharp knife, cut the mushrooms on the diagonal into quarters, depending on the size. Prepare the seasonings and set by the stove.
- Heat a wok or a heavy skillet until very hot, add 1 teaspoon of oil and heat until hot. Add the snap peas, minced garlic, rice wine or sake, and salt, and toss lightly over high heat for about 1 1/2 minutes until the peas are just tender (snow peas will take slightly less time.) Remove from the pan and arrange around the outside of the serving plate.
- Reheat the pan and the remaining oil until very hot. Add the Seasonings and stir-fry about 10 seconds until fragrant. - String the snow peas.
- Heat a skillet over high heat and add the peanut oil.
- When hot, add the mushrooms and stir briefly over high heat.
- Add the garlic, ginger, and snow peas, and stir until well coated with the oil.

- Continue to stir over high heat until most of the liquid has disappeared and the peas are crisp yet tender.

- Lay the chicken breast on a chopped board and, holding your knife at a right angle to the board, cut it into thin slices. Place in a bowl. Add the marinade ingredients with 2 teaspoons cold water and mix well.
- Holding your knife at a steep angle, cut the spring onion on a bias into ⅜-inch (1 cm) slices, keeping the white and green parts separate. Clean the oyster mushrooms if necessary and tear or cut lengthwise into bite-sized pieces, discarding any hard bits at the base of their stalks.
- Heat a seasoned wok over a high flame. Add 1 teaspoon of the oil or lard, swirl it around, then add the mushrooms and stir-fry for a couple of minutes until nearly cooked. Set aside.
- Reheat the wok over a high flame, then add the remaining oil and swirl it around. Add the chicken and stir-fry to separate the slices. When the slices are separating but still pinking, add the ginger, garlic and spring onion whites and continue to stir for a few moments until you can smell their fragrances. Then return the mushrooms and stir to incorporate, adding salt and pepper to taste. Finally, stir in the spring onion greens, then serve.
