These Stuffed Chicken Breasts are an impressive dish for a Sunday night dinner or a Holiday. These breasts are stuffed with cheese, prosciutto, basil and sun dried tomatoes. Totally delicious chicken rolls with a surprise filling.

2 chicken breast (skinless and boneless)
¼ cup cream cheese (I used spreadable garlic and herb cream cheese)
4 slices prosciutto (thinly sliced)
2 tablespoon sun-dried tomatoes (packed in oil, chopped)
6-12 leaves basil
2 tablespoon olive oil
¼ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)

Steps:

  • Preheat oven: To 450 F degrees.
  • Prepare the chicken: Flatten the chicken breasts using a meat mallet to pound them until they are about ¼ inch to ½ inch in thickness.
  • Assemble the chicken breasts: Spread ½ the cream cheese on each chicken breast. Top with basil leaves, then 2 slices of prosciutto on each breast and a tbsp of chopped sun-dried tomatoes on each breast. Carefully roll up the breasts and secure with toothpicks. Season with salt and pepper.
  • Cook the chicken: Heat the olive oil in an oven proof skillet and brown the chicken, placing first with seam side down until just slightly golden brown. You may need to remove toothpicks to brown on all sides. Place skillet in oven and bake chicken for an additional 20 minutes, until chicken is cooked through.
  • Finish the dish: Remove chicken from skillet onto a cutting board, discard toothpicks and wait about 15 minutes before slicing each chicken breast. To double the recipe simply double all the ingredients.

6 boneless skinless chicken breast halves (6 ounces each)
6 thin slices prosciutto or deli ham
6 slices part-skim mozzarella cheese
2 large eggs, lightly beaten
1/2 cup Italian-style panko bread crumbs
1/2 cup butter, cubed
1 shallot, finely chopped
2 garlic cloves, minced
3 cups Madeira wine

Steps:

  • Pound chicken breasts with a meat mallet to 1/4-in. thickness; layer with prosciutto and mozzarella. Roll up chicken from a short side; secure with toothpicks., Place eggs and bread crumbs in separate shallow bowls. Dip chicken in eggs, then roll in crumbs to coat. Cut each chicken breast crosswise into 3 slices; place in a greased 13x9-in. baking dish, cut side down. Refrigerate, covered, overnight., Preheat oven to 350°. Remove chicken from refrigerator; uncover and let stand while oven heats. In a small saucepan, heat butter over medium-high heat. Add shallot and garlic; cook and stir until tender, 1-2 minutes. Add wine. Bring to a boil; cook until liquid is reduced to 1-1/2 cups. Pour over chicken., Bake, uncovered, until a thermometer reads 165°, 30-35 minutes. Discard toothpicks before serving.

2 half chicken breast fillets (no skin, trimmed of fat)
1/2 onion, finely chopped
2 garlic cloves, crushed
10 button mushrooms, finely sliced
2 tablespoons olive oil
1/2 cup cream cheese
4 slices of thin prosciutto (or bacon)

Steps:

  • Sit your chicken breast on a chopping board and slice it all the way through the middle (like you are filleting a fish).
  • You should have two almost identical top and bottom pieces of chicken.
  • Repeat for the other breast; set aside.
  • Heat 1 Tbsp oil in pan and add onion, fry until almost transparent and then add garlic. Stir occasionally.
  • Cook for 2 minutes then add sliced mushrooms.
  • Remove from heat and allow to cool.
  • Put your chicken breast between two freezer bags and pound it so that it is quite thin then cut it half along the long edge.
  • Ok you should now have four chicken pieces- spread each with cream cheese then divided the onion/mushroom mixture between them (spread the cream cheese and the mushroom all over the chicken).
  • Roll the chicken up tightly then roll a piece of prosciutto around it and secure with a toothpick, repeat.
  • Heat 1 tbsp oil in pan and over medium/high heat seal the chicken parcels on all sides.
  • Lower the heat and continue cooking until chicken is cooked through (about 10-15 minutes, depending on the size of your breast-- lol).
  • Either serve as is with your favorite sauce or cut into slices to serve as nibbles or entrée.

1/4 cup dry white wine
2 teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
4 medium boneless skinless chicken breast halves
4 slices thin prosciutto, trimmed of fat (about 1 oz total)
2 ounces Fontina cheese, thinly sliced
3 1/2 ounces jars roasted red sweet peppers, cut into strips (about 1/2 cup)
fresh thyme (optional)

Steps:

  • For sauce, in a small bowl combine wine and the 2 tsp fresh or 1/2 tsp dried thyme.
  • Set aside.
  • Rinse chicken; pat dry.
  • Place chicken piece between 2 pieces of plastic wrap.
  • Using the flat side of a meat mallet, pound the chicken lightly into a rectangle about 1/8 inch thick.
  • Remove plastic wrap.
  • Repeat with remaining chicken.
  • Place a slice of prosciutto and one-fourth of the cheese on each chicken piece.
  • Arrange one-fourth of the roasted peppers on cheese near bottom edge of chicken.
  • Starting from the bottom edge, roll up jelly roll style; secure with toothpicks.
  • Grill chicken directly over medium heat for 15 to 17 minutes or until chicken is tender and no longer pink.
  • Turn to cook evenly and brush with sauce.
  • If desired, garnish with fresh thyme.

1 clove garlic, minced
6 fresh sage leaves, roughly chopped
4 chicken cutlets (about 1 1/4 pounds)
Kosher salt and freshly ground pepper
8 to 12 thin slices prosciutto
3 tablespoons extra-virgin olive oil
Juice of 1 lemon
1 teaspoon dijon mustard
10 cups mixed baby lettuce (about 5 ounces)
1 cup cherry tomatoes, quartered
3/4 cup low-sodium chicken broth
1 tablespoon unsalted butter

Steps:

  • Sprinkle the garlic and sage on the chicken cutlets; season with salt and pepper. Wrap 2 or 3 slices prosciutto around each cutlet.
  • Heat a large nonstick skillet over medium heat; add 1 tablespoon olive oil. Working in batches if necessary, add the chicken and cook, flipping once, until the prosciutto is golden brown and slightly crisp, 6 to 8 minutes. Transfer to a plate.
  • Meanwhile, whisk half of the lemon juice, the mustard, a pinch of salt and a few grinds of pepper in a large bowl. Gradually whisk in the remaining 2 tablespoons olive oil until smooth. Add the lettuce and tomatoes; toss to coat.
  • Add the chicken broth and the remaining lemon juice to the skillet; cook over medium heat until slightly reduced, 1 to 2 minutes. Add the butter and cook, stirring with a rubber spatula, until the butter melts and the sauce thickens, 1 to 2 minutes. Serve the chicken with the salad. Drizzle with the pan sauce.

6 (3-ounce) chicken cutlets, pounded to evenly flatten
Salt and freshly ground black pepper
6 paper-thin slices prosciutto
1 (10-ounce) box frozen chopped spinach, thawed
3 tablespoons olive oil
1/4 cup grated Parmesan
1 (14-ounce) can low-salt chicken broth
2 tablespoons fresh lemon juice

Steps:

  • Place the chicken cutlets flat on the work surface. Sprinkle the chicken with salt and pepper. Lay 1 slice of prosciutto atop each chicken cutlet. Squeeze the frozen spinach to remove the excess water. Season the spinach with salt and pepper. In a small bowl, toss the spinach with 1 tablespoon of oil to coat. Arrange an even, thin layer of spinach atop the prosciutto slices. Sprinkle the Parmesan evenly over each. Beginning at the short tapered end, roll up each chicken cutlet as for a jellyroll. Secure with a toothpick. Heat the remaining 2 tablespoons of oil in a heavy large skillet over high heat. Add the chicken and cook just until golden brown, about 2 minutes per side. Add the chicken broth and lemon juice, and scrape the browned bits off the bottom of the pan with a wooden spoon. Bring the liquid to a boil. Reduce the heat to medium. Cover and simmer until the chicken is just cooked through, about 8 to 10 minutes. Transfer the chicken to a platter. Simmer the cooking liquid over high heat until it is reduced to about 2/3 cup, about 5 minutes. Season the cooking liquid with salt and pepper, to taste. Remove toothpicks from the chicken. Drizzle the reduced cooking liquid over the chicken and serve immediately.

CHICKEN WITH PROSCIUTTO AND SAGE

Versatility is what you get with this dish, which borrows its flavors from the Italian staple saltimbocca, a combination of veal, prosciutto and sage. Here, the dark meat of chicken takes the place of veal, and instead of meat slices topped with the ham and herbs, there are plump bundles with the sage inside. Boneless chicken thighs make for easier slicing. Leaving the skin on to brown, provides more flavor, especially with some of the sage tucked underneath. Fingerling potatoes simmer as the chicken braises, and fresh peas contribute a touch of spring for a one-pot meal, not instant but hardly demanding. A final, judicious splash of balsamic vinegar intensifies the sauce.

1 tablespoon unsalted butter
6 large boneless, skin-on chicken thighs (about 6 ounces each)
1/2 cup finely chopped fennel bulb (about 1/4 bulb)
1/2 cup finely chopped red onion (about 1/2 onion)

1/2 teaspoon ground sage
18 medium-size fingerling potatoes (about 1 pound)
1 1/2 cups chicken stock
18 fresh sage leaves (from a small bunch), plus a few sprigs for garnish
12 thin slices prosciutto (about 5 ounces)
2/3 cup shelled peas
1 teaspoon good-quality balsamic vinegar

Steps:

  • Melt butter in a large sauté pan over medium-high heat. Add chicken thighs, skin side down, and sear until skin is nicely browned, about 5 to 7 minutes. Remove chicken to a platter, skin side up. Reduce heat to low, add fennel and onion to sauté pan, season with salt and pepper, stir in ground sage and cook until translucent, about 5 minutes. Add potatoes, stir, add stock, bring to a simmer, cover and cook until potatoes are just about tender when pierced with a paring knife, 15 minutes.
  • While potatoes are cooking, tuck a sage leaf under the skin of each thigh. Turn thighs over and season the flesh side of each with salt and pepper, and place 2 sage leaves on each. Roll each thigh into a bundle, skin side out, and wrap in prosciutto, using 2 overlapping slices for each to fully enclose the chicken. Tuck wrapped chicken, seam side down, in among the potatoes in the sauté pan. Add the peas. Cover and cook for 20 minutes, basting chicken with pan juices halfway through.
  • Remove chicken to a warm platter and surround with potatoes. Stir vinegar into the pan sauce, add salt and pepper if needed, and pour, including the peas, over and around the chicken and potatoes. Garnish platter with sage and serve.
