Sauteed chicken and apples with rosemary image

One-skillet sautéed chicken and apples with rosemary is a great fall dinner!

Provided by Kathryn Doherty

Categories     Chicken

Time 30m

Number Of Ingredients 9

1/2 tablespoon unsalted butter
1/2 tablespoon extra-virgin olive oil
1 small sweet onion, thinly sliced (about 1 cup)
2 small red apples, sliced
1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch strips
1 heaping tablespoon fresh rosemary, finely chopped, divided
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons apple cider vinegar

Steps:

  • Heat butter and oil in a large saute pan over medium-high heat.
  • Add onion and apple slices and saute for 4-5 minutes, until softened and slightly browned.
  • Meanwhile, season the chicken strips with 2 teaspoons of rosemary, salt and black pepper.
  • Push the onion and apple slices to the sides of the pan and add chicken breast strips to the middle. Brown on both sides, about 6-8 minutes total. (If your pan is too crowded, do this in batches so you can properly brown the chicken.)
  • Add vinegar and remaining teaspoon of rosemary then cover the pan, reduce heat to medium and cook until chicken is cooked through, 3-5 more minutes.
  • Serve chicken and apples with extra pan juices and enjoy!

HONEY-MUSTARD CHICKEN AND APPLES

Honey-Mustard Chicken and Apples image

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

8 skin-on, bone-in chicken thighs (2 to 2 1/2 pounds)
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 large onion, cut into large chunks
2 cooking apples (such as Cortland), cut into chunks
1 cup low-sodium chicken broth
2 to 3 tablespoons honey mustard
1 1/2 teaspoons unsalted butter, softened
1 tablespoon all-purpose flour
1 to 2 tablespoons roughly chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F. Season the chicken with salt and pepper.
  • Heat the olive oil in a large ovenproof skillet over medium-high heat. Working in batches if necessary, add the chicken, skin-side down, and cook until golden, about 6 minutes. Flip and cook 2 to 3 more minutes, then transfer to a plate. Pour off all but 2 tablespoons of the drippings.
  • Add the onion and apples to the skillet and season with salt and pepper. Cook until slightly softened, about 4 minutes. Mix the broth with the mustard, then add to the skillet and bring to a boil. Arrange the chicken, skin-side up, in the skillet. Transfer to the oven and roast until the chicken is cooked through, 15 to 20 minutes.
  • Mix the butter and flour to form a paste. Use a slotted spoon to transfer the chicken, apples and onion to plates. Bring the pan juices to a simmer, whisk in about half of the butter-flour mixture and boil to thicken, 2 minutes. Continue to cook, adding more of the butter-flour mixture as needed to make a slightly thick gravy. Season with salt and pepper. Pour over the chicken and sprinkle with parsley.

SPICED CHICKEN WITH APPLES

Spiced Chicken with Apples image

This recipe is sponsored by Santa Margherita. Ease into autumn with this comforting dish of pan-seared spiced chicken breasts with roasted Gala apples and red onions. A side of garlicky sauteed Swiss chard provides the perfect earthy balance.

Provided by Food Network Kitchen

Time 30m

Yield 4 servings

Number Of Ingredients 11

4 skinless, boneless chicken breasts (about 6 ounces each)
1/2 teaspoon ground allspice
1/4 teaspoon turmeric
Kosher salt and freshly ground black pepper
2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 Gala apples, cut into wedges
1 red onion, sliced
Juice of 1 lemon
1/2 cup low-sodium chicken broth
2 cloves garlic, minced
1 bunch Swiss chard, chopped (stems and leaves separated)

Steps:

  • Season the chicken with the allspice, turmeric, 1/2 teaspoon salt and a few grinds of pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook until browned, 3 to 4 minutes per side. Transfer to a plate; set aside.
  • Add the apples, onion and a pinch of salt to the skillet. Cook, stirring occasionally, until softened and lightly browned, about 4 minutes. Add the lemon juice to the skillet and cook, scraping up any browned bits, 30 seconds. Add the chicken broth and bring to a boil, then reduce the heat to maintain a simmer. Arrange the chicken on top of the apple mixture. Cover and cook until the chicken is cooked through and the sauce is slightly reduced, 6 to 9 minutes.
  • Meanwhile, heat the remaining 1 tablespoon plus 2 teaspoons olive oil in a separate large nonstick skillet over medium-high heat. Add the garlic and cook, stirring, until golden, about 30 seconds. Add the chard stems and season with salt and pepper. Cook, stirring, until softened, 3 minutes. Add the chard leaves; cook, stirring, until wilted, about 2 minutes. Serve with the chicken and apples.

  • If using 2 small chickens, cut the apples into cubes and halve the shallots. If using a regular-sized chicken, only quarter the apples and leave the shallots whole.
  • Generously sprinkle the insides of the chickens with salt and pepper. Place one or two halved shallots and 2-3 whole sprigs of rosemary into the cavity of the chicken's body. Smear the chicken with butter all over. Generously sprinkle the outside of the chicken with salt and pepper as well. Chop the remaining rosemary and sprinkle it over the chicken.
  • Place the rest of the shallots and the apples into a Dutch oven or roasting pan. Add the olive oil, some salt, and pepper and mix well with your hands, so that all the fruit and vegetables are coated in oil.
