This is another recipe from Paula Deen's show on Food Network. I've tried both and both recipes are delicious and just a little bit different. It calls for her "House Seasoning" which I added to the recipe.

1 cup sharp cheddar cheese, grated
1 cup monterey jack cheese, grated
1/2 cup mayonnaise
1 teaspoon onion, grated (optional)
1 (4 ounce) jar pimiento, chopped
salt, to taste
cracked pepper

Steps:

  • Using an electric mixer, beat cream cheese until smooth and fluffy.
  • Add all of the remaining ingredients and beat until well blended.
  • It can be used as a dip or for a sandwich filling.

1 cup grated sharp cheddar cheese
1 cup grated monterey jack cheese
1/2 cup mayonnaise
2 -3 tablespoons pimientos, minced
1 teaspoon grated onions or 1 teaspoon equivalent dried onion
cracked black pepper
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

  • Beat cream cheese until smooth and fluffy.
  • Add rest of the ingredientss and mix well.

  • Combine 8 ounces each shredded cheddar and pepper jack, one 4-ounce jar diced pimientos (plus 2 tablespoons juice), 1/2 diced red onion, 1 cup mayonnaise, 1 to 2 minced garlic cloves, 1 teaspoon hot smoked paprika and 1/2 teaspoon ground celery seeds with a rubber spatula. Season with salt and pepper. Refrigerate until ready to serve.

1/4 tsp. Kosher salt
1/4 tsp. ground black pepper
1/4 tsp. cayenne powder
1/4 lb. extra sharp white cheddar cheese, coarsely grated
1/4 lb. extra sharp yellow cheddar cheese, coarsely grated
1/3 cup drained and finely chopped roasted red peppers or piquillo
1-1/2 lbs. lean ground beef
4 hamburger buns
8 thick slices double smoked bacon, crisp-cooked

Steps:

  • 1. Combine Hellmann's® or Best Foods® Real Mayonnaise, salt, pepper and cayenne in large bowl with fork. Stir in cheese and roasted peppers. Cover and refrigerate at least 30 minutes.
  • 2. Meanwhile, shape ground beef into 4 patties. Season, if desired, with salt and black pepper; set aside.
  • 3. Grill or pan fry burgers, turning once, 8 minutes or until desired doneness. During last 30 seconds of cooking, evenly top each burger with cheese mixture, then cook covered until

12 ounces mayonnaise
6 ounces cream cheese, softened
1 1/2 pounds extra-sharp Cheddar, grated
Kosher salt and freshly ground black pepper
Crackers, for serving
4 ounces shishito peppers
2 teaspoons vegetable oil
1 tablespoon sesame oil
Kosher salt and freshly ground black pepper
2 tablespoons black sesame seeds
1 jarred piquillo pepper, chopped
1/4 cup chopped pickled banana peppers
10 dill pickle slices, chopped
Kosher salt and freshly ground black pepper
1 roasted red pepper, seeded and diced

Steps:

  • For the cheese base: Beat the mayonnaise and cream cheese in the bowl of a stand mixer. Stir in the Cheddar by hand until well combined. Taste and season with salt and pepper. Divide the mixture among three bowls.
  • For the shishito pepper: Preheat the oven to 500 degrees F. Place a 10-inch cast-iron skillet in the oven to heat up.
  • Toss the shishitos with the vegetable oil. Very carefully remove the skillet from the oven and add the peppers. Return to the oven and cook until the skins start to color on the bottom, about 3 minutes. Stir and continue to cook until the skins are golden and blistered in spots, about 3 more minutes. Remove from the oven and let cool, then seed and chop.
  • Fold the shishitos and sesame oil into the first bowl of cheese base; stir gently to combine. Season with salt and pepper, and garnish with the sesame seeds.
  • For the pickled pimento: In the second bowl, fold the piquillos, banana peppers and dill pickles into the base. Taste and adjust the seasoning.
  • For the roasted red pepper: In the third bowl, fold the red peppers into the base; stir gently to combine.

1 cup mayonnaise
1/2 teaspoon cayenne powder
Kosher salt and freshly ground black pepper
1 cup drained and finely diced roasted red peppers
12 ounces extra-sharp white Cheddar, coarsely grated
12 ounces extra-sharp yellow Cheddar, coarsely grated
1 1/2 pounds ground chuck (80/20 percent)
2 tablespoons canola oil
4 hamburger buns, split and toasted
8 slices double-smoked bacon, cooked until crisp
4 slices Vidalia or other sweet onion, grilled
4 thin slices ripe beefsteak tomato
1 large dill pickle, thinly sliced
Romaine lettuce leaves, optional

Steps:

  • Whisk the mayonnaise, cayenne, 1/2 teaspoon salt and 1/2 teaspoon black pepper in a large bowl. Add the red peppers, white Cheddar and yellow Cheddar and gently fold until combined. Cover the bowl and refrigerate for at least 30 minutes before using.
  • Meanwhile, preheat the grill to high for direct grilling. Divide the ground chuck into four equal portions, 6 ounces each. Form each portion into a 3/4-inch burger and make a deep depression in the center with your thumb. Brush both sides of the burgers with the oil and sprinkle liberally with salt and pepper. Grill the burgers until golden brown and slightly charred on both sides and cooked to desired doneness, about 4 minutes each side for medium doneness. During the last minute of cooking, place a dollop of the cheese mixture on top of each burger and close the grill lid. Cook until the cheese has just melted, about 1 minute.
  • Place the burgers on the buns and top with the bacon, onions, tomatoes, pickles and lettuce if desired.

A Pimento Cheese Bobby intends to use on burgers. You might be lucky if it lasts that long. For the cheese I used a Wisconsin Extra sharp cheddar and a white New Zealand sharp cheddar. One jar of roasted red peppers rounded out the mix.
