1 tablespoon extra-virgin olive oil, 1 turn of the pan
4 (8-ounce) portions red snapper fillets
Salt and pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 cloves chopped garlic
1 cup dry white wine
1 (14-ounce) can diced tomatoes in juice
3 tablespoons capers
1/4 cup chopped flat-leaf parsley, a couple of handfuls

Steps:

  • Heat a large nonstick skillet over medium high heat and coat with olive oil.
  • Score the snapper skins in a 1-inch crosshatch with a sharp knife. Season both sides of snapper with salt and pepper. Cook skin side down 4 or 5 minutes until skin is crisp. Turn fillets and cook on reverse side 3 minutes or until fillets are firm and flesh is opaque. Transfer fillets to a warm, shallow serving dish. Return pan to heat and reduce heat to medium. Add extra-virgin oil and garlic to the pan and saute garlic 2 minutes. Add wine and reduce by half, 2 minutes. Add tomatoes, capers and parsley and simmer a minute or 2 more. Pour sauce over fish and serve.

1 4-pound chicken, cut up into 18 pieces
1 teaspoon coarse salt
1/4 teaspoon ground black pepper
2 tablespoons olive oil
1 small yellow onion, chopped (1 cup)
2 cloves garlic, minced (1 tablespoon)
1 tablespoon tomato paste
1/8 teaspoon red-pepper flakes
3/4 cup white wine
1 14.5-ounce can whole peeled plum tomatoes
1/4 cup Gaeta olives, pitted
1 rounded tablespoon salt-packed capers, rinsed and chopped
1/4 cup chopped flat-leaf parsley

Steps:

  • Preheat oven to 375 degrees with rack in middle position.
  • Season chicken with salt and pepper.
  • Heat oil in a 12-inch braiser pan or oven-safe skillet over medium-high heat. Place chicken in skillet, skin side down, and cook for 3-4 minutes or until rich golden brown. Flip chicken and continue to brown for 3-4 minutes and transfer to a plate.
  • Add onion and garlic to pan and saute until translucent, 3 minutes. Stir in tomato paste and red-pepper flakes and cook 1 minute more.
  • Deglaze pan with white wine and reduce liquid by half. Stir in tomatoes, olives, and capers. Return chicken to pan, skin side up, and transfer to oven. Braise in oven for 35 minutes, or until a meat thermometer inserted into center of thickest piece of chicken registers 165 degrees. Sprinkle parsley over top just before serving.

3 tablespoons olive oil
4 chicken thighs with skin and bones
Salt and freshly ground black pepper
1 1/2 pounds small red-skinned potatoes, halved
4 large garlic cloves, minced
3/4 cup dry white wine
3/4 cup chicken broth
1 1/2 teaspoons dried oregano
1 teaspoon dried thyme
8 ounces frozen artichoke hearts or 1 cup frozen lima beans, thawed
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat the oil in large ovenproof pot over high heat. Sprinkle the chicken with salt and pepper. Working in 2 batches if necessary, cook the chicken in the pot until golden brown on all sides, about 10 minutes. Transfer the chicken to a bowl. Carefully add the potatoes to the same pot and cook until they are golden brown, stirring occasionally, about 10 minutes. Add the garlic and saute for 1 minute. Add the wine and stir to scrape up any brown bits on the bottom of the pot. Add the broth, oregano, and thyme. Return the chicken to the pot. Stir to combine. Bring to a boil over medium-high heat.
  • Cover and bake in the oven until the chicken is cooked through, about 20 minutes. Transfer the chicken to a platter. Arrange the potatoes around chicken. Add the artichoke hearts to the sauce in the pot. Cover and simmer over high heat until the artichokes are tender, stirring often, about 4 minutes. Turn heat to low. Stir in the butter. Pour the sauce over chicken and potatoes, and serve.

1 small yellow onion, diced
12 gaetta olives or oil cured black olives, pitted and chopped
2 tablespoons capers
4 Red Snapper fillets
1 cup marinara sauce
1 cup dry white wine
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350°F.
  • Heat the olive oil in a saute pan large enough to hold the snapper fillets, over medium heat. Add the onion and cook until it starts to soften, about 5 minutes. Add the olives and capers and continue cooking until onion is translucent 3-5 minutes.
  • Lay the red snapper fillets skin side down in the pan, and add the marinara sauce and white wine. Season with salt and pepper to taste, and place the pan in the oven.
  • Bake in the oven until fish is cooked through, about 15-20 minutes. Using a spatula, carefully transfer fish to serving plates, spoon sauce over fish and serve.

3 tsp. olive oil
12 oz. farfalle or rotini
8 oz. green beans
1 lb. tuna steak (1 1/4 inches thick)
salt
1 medium onion
1 clove garlic
1 can diced tomatoes
2 tbsp. capers
2 tsp. grated fresh lemon peel
1/4 tsp. crushed red pepper
1/4 c. fresh parsley leaves
Caper berries (optional)

Steps:

  • Heat large covered saucepot of salted water to boiling on high. Add pasta and cook as label directs, adding green beans to saucepot 2 minutes before pasta is done.
  • Meanwhile, sprinkle tuna with 1/4 teaspoon salt to season both sides. In 12-inch skillet, heat 2 teaspoons oil on medium-high until hot. Add tuna and cook 2 minutes on each side. Reduce heat to medium; cover skillet and cook 5 to 8 minutes longer or until tuna is almost opaque throughout, turning over once halfway through cooking. Transfer tuna to plate.
  • To same skillet, add remaining 1 teaspoon oil. Reduce heat to medium; add onion and garlic, and cook 6 to 8 minutes or until lightly browned and tender, stirring occasionally. Stir in tomatoes, capers, lemon peel, and crushed red pepper; heat to boiling on medium-high. Boil 1 minute. While vegetables are cooking, with 2 forks, flake tuna into bite-size pieces.
  • Reserve 1/4 cup pasta cooking water. Drain pasta and green beans, and return to saucepot; stir in vegetable mixture from skillet, flaked tuna, chopped parsley, and reserved pasta cooking water, and toss to coat. Transfer to warm bowls, and garnish each serving with caper berries if you like.

2 tablespoons olive oil
1 small yellow onion, chopped (1 cup)
1 teaspoon coarse salt
2 cups Arborio rice
2 cloves garlic, minced
2 cups chicken broth
1 cup water

Steps:

  • Heat oil in a 3- to 4-quart saucepan over medium-high heat. When oil shimmers, add onions and salt and saute until onions are translucent, 3 minutes.
  • Add rice and garlic to pan and saute until rice is toasted and fragrant, 2 minutes.
  • Add chicken broth and water to pan. Bring to a boil, stir once, cover, and reduce heat. Simmer rice, covered, until liquid is evaporated, 18-20 minutes.
  • Remove from heat and let stand, covered, 5 minutes before serving.

8 oz (½ pound) clean cod
3 sliced garlic cloves
3 tbsp extra virgin olive oil
2 tbsp capers
6 pitted and sliced kalamata olives
⅔ cup white wine
(1 bunch) freshly chopped, and extra for garnish parsley
⅛ tsp crushed red pepper flakes
1 cup crushed, or 1 cup marinara sauce tomatoes with liquid
to taste sea salt and fresh cracked pepper

Steps:

  • Season cod with some salt and black pepper.
  • In a large 10-inch deep non-stick skillet, heat olive oil on medium heat and toss in the garlic. Saute garlic for about 1 to 2 minutes.
  • Add in the codfish and sear cod for 1 minute. Pour in the white wine, and allow the wine to reduce a little, about 1 to 2 minutes until it softens.
  • Toss in the capers, fresh parsley, kalamata olives, crushed red pepper flakes, and crushed tomatoes.
  • Cover with the lid, and reduce the heat to low. Simmer the sauce with cod for about 5 to 8 minutes. Codfish should turn opaque and be fully cooked. Taste the tomato sauce, and adjust if needed, season with salt and black pepper to taste.
  • Using a large spatula, carefully transfer fish to a serving plate, spoon sauce over the fish. Garnish with a sprinkle of chopped parsley on top.
  • Serve immediately. Enjoy!

It's made with browned chicken-on-the-bone pieces, baked with garlic, onion, and yukon gold potato wedges sopped in white wine. Garnish with a lovely pan sauce and peas (or baby lima beans yummm!). Once an economic meal named for Mt. Vesuvio near Naples, it has turned into a signature Chicago dish that you'll absolutely love.

2 pounds bone-in, skin-on chicken pieces
salt and freshly ground black pepper to taste
¼ cup olive oil
2 cups Yukon Gold potato wedges
½ onion, chopped
5 cloves garlic, sliced
⅔ cup dry white wine
⅔ cup chicken stock
2 tablespoons chopped fresh parsley
1 tablespoon Italian seasoning
1 tablespoon butter, or more as needed
½ cup frozen peas

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Dry chicken pieces well and season liberally with salt and pepper.
  • Warm olive oil in an oven-safe skillet over medium heat and add chicken, skin-side down. Cook until chicken is browned and skin is crisp, 5 to 7 minutes. Turn over and cook until golden brown on the other side, an additional 4 to 5 minutes. Remove chicken and set aside.
  • Add potatoes, onion, and garlic to the skillet and cook until onion is translucent and potato wedges are starting to brown nicely on cut sides, 5 to 7 minutes. Remove vegetables from skillet and set aside.
  • Pour wine into skillet and cook until reduced to 1/2 volume. Deglaze the pan by scraping chicken bits and other browned bits up. Return potatoes, onion, and garlic to the skillet. Add chicken stock, parsley, and Italian seasoning. Stir to combine. Add chicken pieces on top.
  • Cover and transfer to the preheated oven. Roast until chicken is cooked through and no longer pink at the bone, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Return the skillet to stove and remove chicken and vegetables, leaving liquid. Bring to a simmer. Add butter and stir until smooth, about 5 minutes. Salt and pepper to taste. Add peas to sauce and cook 1 to 2 minutes longer. Serve chicken atop potato wedges and garnish with pan sauce and peas.
