TUSCAN CHICKEN WITH WHITE BEANS AND WILTED GREENS

2 cups sliced red onions
1 cup sliced fennel bulb
2 cloves garlic, minced
1 (15-ounce) can white (cannellini) beans, rinsed and drained
1 cup reduced-sodium chicken broth
4 (5-ounce) skinless chicken breast halves (with bone)
Salt and freshly ground black pepper
2 tablespoons chopped fresh rosemary leaves
1/2 cup sliced roasted red peppers (from water-packed jar)
4 cups chopped Swiss chard leaves
1 crusty loaf of bread
2 tablespoons olive oil
1 clove garlic

Steps:

  • Arrange onions, fennel and garlic in bottom of slow cooker. Place beans on top of vegetables. Pour over chicken broth.
  • Season chicken all over with salt and pepper and place on top of vegetables and beans in the slow cooker. Sprinkle rosemary over chicken. Place roasted red pepper slices on top of chicken. Arrange Swiss chard all around chicken.
  • Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  • Slice bread and grill or toast, then drizzle with olive oil. Rub hot bread with garlic clove and serve with meal.

1 chicken (3 to 4 pounds), cut into 6 pieces
5 black peppercorns
Kosher salt
1/2 cup sesame seeds
5 whole cloves
1 cinnamon stick
1/2 teaspoon anise seeds
1/4 teaspoon coriander seeds
6 dried guajillo chile peppers
4 dried ancho chile peppers
6 tablespoons canola oil
1/4 cup raisins
1/4 cup whole blanched almonds
1/4 cup hulled pumpkin seeds
2 6-inch corn tortillas, torn into pieces
1 2.7-ounce disk Mexican chocolate, broken into pieces
Pinch of sugar

Steps:

  • Put the chicken and peppercorns in a large pot, cover with water and season with salt. Bring to a gentle simmer over low heat and cook until tender, about 40 minutes. Transfer the chicken to a large plate and set the cooking liquid aside.
  • Toast the sesame seeds in a dry skillet over medium heat, tossing, until golden, about 5 minutes. Set aside 2 tablespoons for garnish and transfer the rest to a blender. In the same skillet, toast the cloves, cinnamon stick, and anise and coriander seeds until fragrant, about 3 minutes. Add to the blender.
  • Remove the stems and seeds from the dried chile peppers. Heat 4 tablespoons canola oil in the same skillet over medium heat. Add the chiles and fry until lightly toasted, about 2 minutes. Transfer to a bowl, cover with hot water and set aside to soak until pliable, about 30 minutes.
  • Meanwhile, add the raisins, almonds, pumpkin seeds and tortilla pieces to the oil in the skillet and cook, stirring, until the seeds and tortillas are golden brown, about 2 minutes. Add to the blender along with the oil from the skillet. Add the softened chiles and puree, pouring in 2 to 3 cups of the soaking liquid to make a thick, smooth sauce.
  • Heat the remaining 2 tablespoons oil in a large pot over medium-high heat. Add the chile sauce and fry, stirring, until thickened, 5 to 6 minutes. Add 4 cups of the reserved chicken cooking liquid and simmer until the sauce starts to thicken, about 20 minutes. Add the chocolate and simmer, stirring frequently, until the chocolate melts and the sauce reduces, about 20 more minutes. Add the sugar and season with salt.
  • Add the chicken pieces to the sauce and warm through over low heat. Garnish with the reserved sesame seeds.

2 boneless skinless chicken breast halves
3 1/2 teaspoons chili powder, divided
1 1/2 tablespoons olive oil
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 (14 ounce) can stewed tomatoes, with juices
1/4 ounce unsweetened chocolate

Steps:

  • Using 1 tsp of the chili powder, season the breasts, along with salt and pepper to taste.
  • In a heavy skillet that comfortably holds both breasts, heat the oil over mediium-high heat and cook the chicken until brown on both sides (about 2 minutes per side); transfer cooked chicken to a plate and add the remaining chili powder, along with the cumin and cinnamon, to the skillet and saute, stirring, for 15 seconds.
  • Stir in the tomatoes and their juices along with the chocolate and simmer until the sauce thickens up, about 5 minutes.
  • Add chicken, along with any juices that have accumulated on the plate, back into the skillet and simmer until the chicken is cooked through, about 4 minutes.
  • Taste sauce; add salt and pepper if desired.

3 tablespoons oil
1 cup golden raisins or 1 cup sultana
1 cup blanched almond
1 cup peanuts
1 cup pumpkin seeds
1 cup sesame seeds
2 hot peppers, seeded and sliced (yellow ones work best for this dish)
2 plantains, fried
1 slice white bread, toasted and crumbled
1 onion, fried
1 garlic clove
1 cup white chocolate, chopped (make sure your chocolate contains cocoa butter)
10 cups chicken broth
salt and pepper, to taste

Steps:

  • Fry first eleven ingredients together until golden.
  • Remove from pan, place in container of blender or food processor with a little chicken stock; whirl until smooth and return to the pan.
  • Add the remaining chicken broth and the white chocolate and set to simmer for half an hour.
  • Season to taste with salt and pepper.
  • Once it has reached the desired thickness, it is ready for dressing any meat you would like, preferably chicken.

BRAISED CHICKEN WITH OAXACAN MOLE

This recipe was given to me by a friend. The sauce freezes well and I usually make up the sauce and freeze in 2 cup portions. The 2 cups is perfect for 10 chicken legs which will serve 4 to 5 people.

5 dried ancho chiles
2 dried new mexico red chili peppers
1/3 cup sesame seeds
1/4 teaspoon anise seed
1/2 teaspoon cumin seed
1/2 teaspoon coriander seed
2 whole cloves
12 black peppercorns
1 cinnamon stick, 1/2 inch diameter
4 -5 tablespoons cooking oil, divided
1/2 tablespoon raisins
20 whole almonds
1 corn tortilla, quartered
1 large onion, chopped
5 plum tomatoes
5 garlic cloves
5 cups chicken stock
3 1/4 ounces mexican chocolate, coarsely chopped
salt and pepper
2 whole chickens, cut in pieces (3 to 4 pounds each)

Steps:

  • Wash the chile, remove stem and seeds. Place in a medium bowl and cover with warm water. Let stand for 30 minutes. While chile is soaking, add the sesame seeds and spices to a large skillet and toast over moderately low heat, stirring until fragrant. Place toasted mixture in a grinder and process to a fine powder. Set aside.
  • In the same skillet add in 1 tablespoon oil and warm slightly. Stir in raisins, almonds and tortilla. Cook over low heat until almonds are toasted and raisins plump. Transfer to a large bowl and set aside.
  • Add the tomatoes to the skillet and cook, turning frequently until skins are blistered on all sides. Transfer to a bowl. Add onion and garlic to the skillet and cook, stirring until lightly browned taking care not to burn the garlic. Place contents in a blender or food processor container and lightly chop.
  • Add a tablespoon of oil to skillet, stir in chopped vegetables and spice mix. Cover over medium heat until warmed through. Drain the chiles and add along with chicken stock. Partially cover, bring to a boil, reduce heat to simmer and cook for 1 hour. Remove from heat, add in chocolate and process in a blender in batches or using stick blender process until smooth. Season to taste with salt and pepper.
  • Preheat oven to 350 degrees. In a large skillet warm 2 tablespoons of oil and in batches if necessary brown chicken over high heat, turning as needed to brown all sides. Place browned chicken in oven proof dish, pour prepared mole over all. Cover and bake in preheated oven until chicken is cooked through, approximately 1 hour. Transfer to a serving platter and garnish with additional sesame seeds and chopped fresh cilantro.
  • Note: The mole can be prepared ahead of time and frozen in 2 cup portions. Defrost in refrigerator and warm before pouring over browned chicken. Bake chicken and mole as directed.

2 cups with small white beans
4 skinless chicken leg with thighs attached, on the bone
1 (14 1/2-ounce) can reduced-sodium chicken broth
1 medium (about 6 ounces) white onion, cut into chunks
6 cloves garlic (large), peeled
1 carrot, scrubbed and cut into chunks
1/4 teaspoon crushed red pepper
1/2 pound fresh tomatillos, husked, rinsed, and quartered
3 large jalapeño peppers (3 ounces), seeded, veins removed, and chopped
1 teaspoon ground cumin
1/2 teaspoon ground allspice
1/8 teaspoon ground cloves
1 tablespoon vegetable oil
3/4 cup loosely packed flat-leaf parsley
3 sprigs , (6-inch) epazote, leaves only, or 1 teaspoon dried epazote
2 medium size hoja santa leaves, torn into pieces (or 1/2 cup loosely packed fresh cilantro sprigs)
2 tablespoons masa, harina, (flour for corn tortillas)
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground pepper, or to taste
1/2 teaspoon sugar, or more is sauce is too tart

Steps:

  • 1. Prepare the beans and reserve. Put the chicken into a large saucepan. Add the broth, 1 cup of water, half of the onion, half of the garlic, the carrot, and the crushed red pepper. Bring to a boil, then reduce the heat and simmer the chicken, covered, until tender, 30 to 35 minutes. Remove the chicken pieces to a bowl and cover to keep moist. Pour the cooked broth through a strainer into a bowl and reserve for the sauce. Discard the debris. 2. In a blender or food processor, blend the tomatillos, jalapeños, cumin, allspice, cloves, the remaining half of the onion, and the remaining garlic. Add 1 cup of the chicken broth, and blend until smooth. 3. In a large saucepan, heat the oil until it shimmers. Slowly pour in the tomatillo mixture (so it won't splatter), and cook, stirring frequently, 5 minutes. 4. In the same blender jar, blend the parsley, epazote, hoja santa, masa, salt, pepper, and sugar with 1/2 cup of the cooked chicken broth. Purée the mixture until smooth, and pour into the pan with the sauce. Cook over low heat, stirring frequently to prevent sticking, 20 minutes. Add the cooked chicken and the white beans.
