CHICKEN IN CREOLE SAUCE
This recipe is loosely based on a Creole Sauce recipe from "The Joy of Cooking". I've tweaked it over the years. Hope you enjoy it.

Steps:
- Cut ham into strips if desired; roll in chicken breast or thigh and place cut side down in large baking dish. (You can use deli ham for this, also. Pound chicken flat, lay a slice of ham over, and roll up).
- FOR SAUCE: Saute onion, celery, green pepper,and garlic in oil until soft.
- Add tomatoes, broth, chili sauce and all other ingredients.
- Bring to a simmer; Pour over chicken pieces.
- Cover and bake@ 350F for 1 to 1 1/2 hours.
- Serve over hot cooked rice.

CREOLE BAKED CHICKEN

- Preheat oven to 350 degrees F.
- Place chicken in a baking pan or baking dish and squeeze lemon juice over. In a small bowl combine onion powder, thyme, ground rosemary, salt, and ground black pepper. Sprinkle over the chicken pieces, cover with foil and bake until the juices run clear and the flesh is fork tender, about 45 minutes to 1 hour. Remove foil during the last 10 to 15 minutes of baking time. Remove from oven and let rest.
- Make the creole sauce while the chicken is in the oven. Heat grapeseed oil over medium heat in a sauce pot. Saute shallots and garlic until shallots turn translucent, being careful not to burn the garlic. Stir in rosemary and thyme, add crushed tomatoes, season with salt and pepper, cover and let simmer for 15 minutes. Add grape tomatoes, red and yellow bell peppers, diced onion, cayenne, and Creole seasoning, and simmer for 15 minutes more. Remove from heat and whisk in butter.
- Remove chicken from oven, transfer to a platter and let rest. Spoon sauce over and sprinkle with minced parsley leaves.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, heat the oil over medium heat. Add the garlic, onion, celery and bell pepper. Cook, stirring occasionally, until tender (about 4 minutes). Add the tomatoes, bay leaf, salt and cayenne pepper. Cook this Creole sauce 3 minutes longer, stirring often.
- Arrange the chicken breasts in an 8 x 11 inch baking dish. Pour the Creole sauce over the chicken.

CHICKEN WITH CREOLE MUSTARD CREAM SAUCE
Steps:
- Season chicken with salt and pepper.Heat oil and butter in a large skillet over medium-high heat.
- Add chicken and cook for 5 minutes per side.Add 1/2 cup of broth, cover and cook another 5 to 6 minutes. Remove chicken from skillet.
- Add onion to skillet and cook for 3 to 4 minutes to soften.
- Add remaining chicken broth and simmer for 2 minutes.
- Stir in creole mustard, honey, heavy cream, and cayenne pepper. Simmer for 3 to 4 minutes to thicken the sauce.
- Return chicken to skillet. Cook for a minute or two to warm the chicken.
- Sprinkle thyme over chicken. Check sauce for seasoning and add salt and pepper if needed. Serve.

CHICKEN BREASTS CREOLE STYLE

- Place half a chicken breast between sheets of plastic wrap. Pound lightly to a thickness of one-quarter inch with a flat mallet or meat pounder. Repeat with the remaining halves.
- Heat the olive oil in a large skillet. Add the onions, green peppers, celery, garlic and bay leaf. Cook, stirring, until the onions become transparent. Add the paprika, the tomatoes, and salt and pepper to taste. Stir well. Continue cooking for 3 to 4 minutes.
- Add the Worcestershire sauce and the hot-pepper sauce. Simmer until the sauce is reduced, about 5 minutes. Set aside.
- Meanwhile, sprinkle the chicken with salt and pepper to taste. Heat the butter in a heavy skillet over medium heat, and cook the chicken breasts until golden on one side, about 4 minutes. Turn the pieces and cook for 4 minutes more or until done. Be careful not to overcook.
- Add the vinegar, water or chicken broth, cover, bring to a boil, and simmer for 2 minutes. Remove the bay leaf. Keep warm.
- To serve, divide the creole sauce among 4 serving plates. Place the chicken breasts over the sauce and pour the gravy from the skillet over them. Sprinkle with parsley.

- Heat olive oil in a large pot over medium heat. Stir in celery, onion, green bell pepper, carrot, and garlic; cook and stir until the vegetables are tender, about 10 minutes.
- Stir tomatoes with their juice, water, chicken bouillon cubes, and bay leaves into the vegetable mixture.

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Crumble bacon and set aside. HAITIAN CHICKEN IN SAUCE
This recipe was found on islandflave.com & this way I was able to obtain the correct amounts of the ingredients & proper cooking times. I have enjoyed making this chicken for a long time now, as it was given to me in Creole and without amounts. It is great the following day, that is if you have any left.Update: 07/18/2009 so as to make some more of the sauce w/out lessening all the good flavors, this time we made it with 6 cloves of garlic, 3/4 cup crushed tomatoes,1/4 cuo brandy or cognac & added broth as needed - low-sodium, low-fat chicken broth! As far as the peppers go I love Scotch Bonnet Peppers and their flavor is wonderful! As I was going to serve this to our friends - one of the kitchen aides asked me if I wouldn't put sliced olives in the dish and we did and it tasted awesome - on white rice or brown rice, if you choose and with string beans almondine.;)

- Wash chicken well & pat dry.
- Rub each piece with limes/lemons and sprinkle with salt.
- Heat oil in heavy ovenproof pan.
- Preheat oven to 375°F.
- Fry chicken pieces in hot oil.
- Meanwhile, in a bowl, combine garlic, sugar, tomato sauce and salt; mix well.
- After 5 minutes of frying the chicken, add sliced onions and chopped pepper, for 5-7 minutes.
- Remove pan from heat and drain excess oil and add the tomato mixture, stirring well.
- Place the pan in oven & bake uncovered for 20 minutes or until chicken is cooked completely.
- Transfer chicken to serving platter lined with lettuce and onion rounds and with a pile of "Picklese" #148276 vegetables.
- Served with diri blanc (plain white rice) - pour sauce over rice.

- Cut whole chicken into pieces and trim excess fat and remove skin if preferred. Take one lime and cut in half. Clean each chicken pieces by rubbing lime halves while squeezing some of the juice out. Repeat process for each chicken pieces. Rinse chicken well with water and pat dry. Add chicken to a large bowl and set aside. In a small bowl, mix juice of 1 lime (approximately 2 tablespoon), chicken bouillon, scallions, vinegar, parsley, thyme, cloves, garlic, pinch of salt, and black pepper. Add spice mixture and make sure all pieces are well coated. Cover and refrigerate for at least 2 hours or overnight.
- Remove bowl from refrigerator and bring to room temperature. In a heavy skillet, heat 2 tablespoon oil with 1/2 tablespoon of tomato paste under medium heat while stirring to mix. Remove chicken from marinade and slowly add to hot oil. Do not crowd the pan. Brown chicken on all sides in batches. Transfer to a plate.
- Heat remaining oil in skillet add marinade to cook for 1 minute. Add chicken to pan and stir to incorporate. Add remaining tomato paste into 1 cup of boiling water to dilute and add to chicken. Cook covered over medium heat until chicken is fully cooked. Remove from heat, remove chicken from pan and strain liquid to remove extra spices residue. Reheat sauce in same pan, add 1/4 water (or more if necessary), season with additional salt and pepper and hot pepper or hot sauce if preferred. Add onion slices and bell pepper if using, and bring to a boil. Once sauce starts to thickens, add chicken and cook uncovered for 5 to 7 minutes on medium to low heat. Remove from heat and serve immediately.
