Chicken escalopes are flattened chicken breast fillets - they cook quicker than normal breast portions and absorb flavors more readily. Can be assembled in advance. Can substitute boneless chicken thighs for breasts and bacon or prosciutto for serrano ham. If using chicken thighs, spread apart, no need to flatten with rolling pin.

4 skinless chicken breast fillets
4 slices serrano ham
1 lemon
3 tablespoons butter, softened
salt and pepper (to taste)

Steps:

  • Preheat oven to 350 degrees. Mix butter with plenty of pepper. Place chicken breasts in plastic wrap and beat with a rolling pin until 1/2 their original thickness.
  • Place chicken in large, ovenproof dish with a slice of serrano ham crumpled on each one. Cut 8 thin slices from the lemon and place on edged of chicken/ham.
  • Dot with pepper butter, salt if wanted, and bake for 30 minutes.

2 star anise
1 cinnamon stick
1 teaspoon coriander seeds
1 cup white wine vinegar
1 cup water
1/2 cup white sugar
3 pieces lemon rind
1/4 seedless watermelon, peeled and cubed
1/2 cantaloupe, peeled and cubed
8 thin slices Serrano ham
1 cup mixed good olives, preferably Manzanillas, Kalamatas or green garlic
Olive oil, for drizzling
Dash coarse or kosher salt

Steps:

  • In a medium saucepan, combine the cloves, star anise, cinnamon stick, coriander seeds, vinegar, water, sugar, and lemon rind. Set the pan over medium heat, and simmer for 3 minutes.
  • Cut the watermelon and cantaloupe into large cubes, and drop them into the pickling liquid. Let the melon pickle for about 1 minute to allow the exotic flavors to infuse the flesh lightly.
  • To serve: Lay 2 slices of ham in the center of a serving plate and top with a nice mound of the pickled melons. Scatter some olives around the portion, drizzle with the olive oil, and a dash of coarse salt. Repeat with the remaining ingredients

3 cups mashed potatoes, leftover or freshly made
1/4 pound manchego cheese, frozen 1 hour then finely chopped with a food processor (1 cup), plus shaved manchego cheese, for serving
6 ounces serrano ham, frozen 1 hour then finely chopped in a food processor (1 cup)
2 large eggs
Kosher salt and freshly ground black pepper
2 cups panko bread crumbs
Vegetable oil, for deep-frying
Romesco Sauce, for serving
Chopped chives, for serving
1/2 cup slivered almonds
1/2 poumd roasted red peppers, drained
*1 egg yolk
2 large garlic cloves, peeled
1/2 teaspoon orange zest and 1/4 cup juice, from 1 orange
Kosher salt and freshly ground black pepper
1/2 cup extra-virgin olive oil
1 tablespoon sherry vinegar

Steps:

  • In a large mixing bowl or in the food processor combine mashed potatoes, cheese, ham and eggs. Season with plenty of salt and freshly ground black pepper. The mixture should still be wet enough so the bread crumbs stick to the croquettas. Form into croquettas (makes about 2 dozen, medium-sized) and dip into panko bread crumbs, seasoned with salt and pepper. Pat lightly so the crumbs stick. Lay out on a tray, cover and refrigerate for at least 30 minutes before frying.
  • To fry, heat 1-inch of vegetable oil in a deep-fryer or heavy bottomed pot, over medium heat to about 360 degrees F. Fry in small batches, turning once until evenly browned. Each batch should take approximately 5 to 6 minutes. Drain on paper towels and season with kosher salt. Transfer to a serving platter and sprinkle with chives and shaved manchego. Serve with Romesco Sauce.
  • Toast almonds in a skillet over medium heat until golden, about 3 minutes. Transfer almonds to a blender. Add roasted red peppers, egg yolk, garlic, zest, and season with salt and pepper. Pulse a few times to combine the ingredients. With the blender on low speed drizzle in the olive oil. Once it begins to emulsify, stop the blender and add the orange juice, and sherry vinegar. Buzz once more to fully emulsify.

4 skinless medium chicken breast fillets
salt and freshly ground black pepper
12 small sage leaves
8 slices Parma ham
2 tbsp sunflower oil
3 tbsp olive oil
1 onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
400g can Cirio Cherry Tomatoes
I tbsp SuperCirio Tomato Puree
8 black olives, pitted and sliced
1 tbsp capers
sage leaves for decoration

Steps:

  • Trim chicken breast fillets and lay on a board or worktop. Remove inner fillets and reserve. Season all pieces with salt and freshly ground black pepper. Lay sage leaves along the length of large fillets. Replace inner fillets to enclose sage.
  • Wrap each fillet neatly with Parma ham. Heat sunflower oil in a pan and fry wrapped chicken breasts over medium heat all over to brown ham and cook chicken through - about 5 minutes - depending on size of fillets.
  • Meanwhile make the sauce. Heat remaining oil in a pan and fry onion and garlic over gentle heat to soften but not brown. Add Cirio Cherry Tomatoes and SuperCirio Tomato Puree and bring to bubbling. Cook 2-3 minutes to reduced slightly. Stir in black olives and capers and season.
  • Serve fillets whole, or halved, with sauce poured around. Decorate with sage leaves.

2 tablespoons ricotta cheese, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking tray.
  • Place flour in one bowl, beaten egg in another bowl, and mix panko and Parmesan together in a third bowl.
  • Butterfly chicken breasts and season with salt and pepper. Dredge chicken in flour, then in beaten egg, and finally in panko mix to coat.
  • Heat vegetable oil in a pan over medium-high heat. Add chicken to the hot pan and cook until browned and crispy but not fully cooked, about 3 minutes per side. Remove chicken and place on the prepared baking tray.
  • Add more oil to the pan if needed. Add shallots and tomatoes and saute until soft, 3 to 4 minutes. Season with salt and pepper and add taco seasoning. Remove from the heat.
  • Pour tomato mixture over the chicken, then dollop with ricotta and sprinkle with mozzarella. Season with salt and pepper and drizzle with olive oil.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/2 cup 1/2-inch cubes peeled boniato (Cuban sweet potato) or tan-skinned sweet potato
1/3 cup (generous) chopped peeled ripe plantain (yellow with black spots)
6 skinless boneless chicken thighs, pounded to 1/4-inch thickness
6 thin slices Serrano ham or prosciutto
All purpose flour (for dredging)
1 tablespoon butter
1 tablespoon olive oil
1/4 cup water
2 tablespoons fresh lemon juice

Steps:

  • Place boniato and plantain in small saucepan. Add enough cold water to cover by 1 inch. Bring to boil, then reduce heat to medium. Simmer until tender, about 8 minutes. Drain. Return to same pan. Mash boniato and plantain. Season with salt and pepper.
  • Sprinkle both sides of chicken thighs with salt and pepper. Place 1 thigh on work surface. Top with 1 ham slice. Form 1 tablespoon of boniato mixture into 2x1/2-inch log. Place atop ham at 1 end of thigh. Roll up thigh and secure with toothpick. Repeat with remaining thighs, ham, and boniato mixture. Dredge stuffed thighs in flour to coat.
  • Melt butter with olive oil in heavy large skillet over medium-high heat. Add chicken thighs to skillet and cook until browned on all sides, about 5 minutes total. Add 1/4 cup water to skillet; reduce heat to low; cover and simmer until chicken thighs are cooked through, about 15 minutes.
  • Transfer chicken thighs to platter. Remove toothpicks. Add lemon juice to drippings in skillet. Increase heat to high and stir 1 minute. Pour sauce over chicken thighs and serve.
