1/2 pound boneless skinless chicken breasts, cut into strips
2 small red potatoes, thinly sliced
3/4 cup shredded cheddar cheese
1/2 small sweet red pepper, julienned
1/2 small green pepper, julienned
2 tablespoons barbecue sauce
1 green onion, chopped
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Divide chicken strips between two pieces of heavy-duty foil (about 12 in. square). In a small bowl, combine the remaining ingredients; spoon over chicken. Fold foil around mixture and seal tightly., Place packets on a baking sheet. Bake at 375° for 25-30 minutes or until chicken is no longer pink and potatoes are tender. Open foil carefully to allow steam to escape.

Heavy Duty Foil
4 boneless skinless chicken breasts (pounded to even thickness)
1/8-1/4 teaspoon seasoned salt (I used Lawry's, or to taste)
Black pepper (to taste)
1-2 tablespoons olive oil
1 ear of corn (kernels removed)
1 zucchini (chopped)
1/2 red bell pepper (cut into chunks)
1/4 red onion (cut into small chunks)
2 tablespoons chopped fresh parsley (for garnish)
!For the Honey Barbecue Sauce
1/3 cup barbecue sauce (I used Stubb's)
2 tablespoons honey
1 1/2 tablespoons apple cider vinegar
1/2 teaspoon smoked paprika
1/4 teaspoon chili powder

Steps:

  • Preheat grill to medium-high heat. Cut four 12 x 12 inch squares of heavy duty foil and lay out on a flat surface. Divide the vegetables evenly among the foil packets then nestle one chicken breast in the middle.
  • Drizzle the chicken and vegetables with olive oil and season with seasoned salt and pepper to taste.
  • In a bowl, whisk together the barbecue sauce, honey, apple cider, paprika and chili powder. Brush sauce on both sides of the chicken - reserving enough for later. Sprinkle with half of the chopped parsley.
  • Lift the sides of the foil over the chicken and seal to close off the packets.
  • Place foil packets onto grill and grill for 7-8 minutes, then flip over and grill for an additional 7-9 minutes (depending on the thickness of the chicken), or until chicken is cooked through.
  • Remove from the grill and carefully open the foil packets. Brush chicken with reserved sauce and top with fresh parsley and serve immediately.

1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon ground coriander
1/2 teaspoon garlic powder

1/2 teaspoon freshly ground black pepper
3 6-ounce skinless, boneless chicken breasts

Steps:

3 chicken breasts (cut lengthwise into 4 pieces each)
1 1-pound 8 -ounce bag petite red potatoes (cut lengthwise into 4 pieces each)
1/2 yellow onion ( finely chopped)
6 tablespoons melted butter
1 tablespoon minced garlic
1 teaspoon smoked paprika
1/2 teaspoon chipotle chili powder
2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons garlic powder
6 strips bacon ( cooked and chopped)
3 cups Colby Jack cheese (shredded)
1/4 cup chives (chopped)

Steps:

  • Preheat the oven to 400°F. Rip 4 long pieces of foil, and fold each piece in half to make it stronger and prevent leaks. Set aside.
  • Place the cut petite red potatoes in a large pot and cover with cold water. Bring water to a boil over medium-high heat and allow to cook for 6 minutes. Drain potatoes, return to pot, and let cool.
  • Add chicken pieces, chopped onions, melted butter, minced garlic, smoked paprika, chipotle chili powder, salt, ground black pepper, and garlic powder. Toss to coat all pieces of chicken and potatoes.
  • Place about 1½ cups of potatoes in each foil packet (you'll want to divide the potatoes equally between the 4 foil packs), top with 3 chicken pieces. Bring up the two lengthwise pieces of foil and fold over to seal. Roll the two edges of foil together. Place the foil packets on a baking sheet.
  • Bake in the oven at 400°F for 30-35 minutes, or until the potatoes are tender and the chicken juices run clear.
  • Remove from the oven and open each chicken packet. Drain the liquid from each packet and place the packet back down on the baking sheet, still open.
  • Divide the Colby Jack cheese evenly between each packet and sprinkle directly on top of the chicken. Add cooked and chopped bacon to the tops of the cheese and place back in the oven for 2-3 minutes, or until cheese is melted.
  • Top with chives, serve and enjoy!

¼ teaspoon fresh ground black pepper, (or to taste)
crushed red pepper flakes, (for serving, optional)

Steps:

  • Preheat oven to 450˚F.
  • Cut out 4 sheets of foil, each measuring about 12"x12". Set aside.
  • In a large mixing bowl combine the chopped chicken, peppers, zucchini, onion, and garlic.
  • To the chicken mixture add olive oil, paprika, Italian Seasoning, garlic powder, onion powder, salt, and pepper; mix well until thoroughly combined.
