1 cup milk
1 cup fresh chicken stock (canned broth may be substituted)
1/4 teaspoon white pepper
2 teaspoons freshly chopped parsley leaves
Salt, to taste (only if using fresh chicken stock)
1/4 pound butter
1 stalk celery, minced
1 cup all-purpose flour
1 1/4 pounds cooked chicken meat, ground in food processor
2 cups milk
2 eggs
1/8 teaspoon salt
3 cups all-purpose flour or cracker meal
3 cups breadcrumbs
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups chicken stock
2 teaspoons chopped fresh parsley leaves
Pinch white pepper and salt
Salad oil or liquid shortening, for frying
Mashed potatoes, for serving

Steps:

  • For the croquette batter: In a heavy pot, heat the milk and chicken stock on the stove and then add the white pepper, fresh parsley and salt, if needed. In a separate heavy pot, melt the butter and add the minced celery. Stir in the flour and cook for 3 minutes. Pour in the hot milk and stock and stir until thickened and smooth. Fold in the chicken meat and allow to cool.
  • Breading the croquettes: Shape 3-ounce portions of croquette batter in the shape of a cone and place on a tray lined with waxed paper. Next make an egg wash from the milk, eggs and salt. Dip the croquettes in the egg wash and then into the flour and let stand a few minutes. Finish breading by dipping the croquettes back in the egg wash and then rolling in breadcrumbs.
  • For the chicken gravy: Melt the butter in a 1- or 2-quart saucepan, and stir in the flour. Pour in the stock and whisk until smooth. Bring to a boil, reduce the heat and cook for 20 minutes. Add the fresh parsley, white pepper and salt, to taste, (if fresh stock was used).
  • Cooking the croquettes: Fry the croquettes in a pot with salad oil or liquid shortening, heated to 350 degrees F, until golden brown, 2 to 3 minutes. Drain well and blot on paper towels. Place on a bed of mashed potatoes and top each croquette with chicken gravy.

1 onion
quartered with root end attached
2 carrots
peeled and cut into chunks on an angle
2 ribs celery
cut into chunks on an angle
2 large fresh bay leaves
2 full bone-in
skin-on chicken breasts
Salt
4 tablespoons butter
1 small onion
very finely chopped
2 large cloves garlic
minced
Salt and pepper
1/2 teaspoon ground thyme
A pinch of cayenne pepper
Freshly grated nutmeg
to taste
6 tablespoons flour
About 1/4 to 1/3 cup heavy cream
4 egg yolks
1 cup fine breadcrumbs
divided
1/2 cup Panko breadcrumbs
A small handful of flat-leaf parsley
very finely chopped
About 1/3 cup grated Parmigiano-Reggiano cheese
a couple small handfuls
1 extra-large organic egg
1/4 cup water
Frying oil
3 tablespoons butter
4 tablespoons flour
2 1/2 cups chicken stock
2 tablespoons Worcestershire sauce
Salt and black pepper
1 extra-large egg yolk
beaten

Steps:

  • To poach chicken, place onion, carrots, celery and bay in a pot
  • Add chicken, cover with water and bring to a boil
  • Season with salt and reduce heat to simmer; poach at gentle, low rolling boil for 1 hour
  • Remove chicken and let cool
  • Strain stock, simmer 30 minutes more and strain again
  • Remove chicken from bones and separate from skin
  • Chop chicken meat and add to food processor; pulse to fine-chop
  • You should yield about 2 1/2 cups chopped meat
  • Cool in refrigerator in a large mixing bowl
  • For the croquettes, heat butter in a skillet over medium heat
  • Add onions and garlic, and season with salt, pepper, thyme, cayenne pepper, and nutmeg
  • Stir 5-6 minutes to soften, add flour and whisk 1 minute
  • Whisk in chicken stock then cream
  • Add some to a small bowl with the egg yolks to temper then add everything back to the sauce and let thicken
  • Remove from heat and stir in about 1/2 cup breadcrumbs the sauce should be very thick
  • Let cool, then pour room temp sauce over cold chicken
  • Combine and chill at least 1 hour more
  • Heat a few inches of oil in a Dutch oven or in a countertop fryer to 360F to 365F
  • Heat oven to 275°F and place a wire rack in a rimmed baking sheet
  • Combine remaining breadcrumbs with Panko, parsley and cheese in a shallow dish
  • Beat egg with water in a second shallow dish
  • For the gravy, melt butter in a saucepot or skillet over medium to medium-high heat
  • Whisk in flour, cook 1-2 minutes, add stock and let thicken
  • Season with Worcestershire, salt and pepper
  • Ladle some gravy into egg yolk to temper then add back to gravy, adjust seasoning to taste and reduce heat to low
  • Use a conical ice cream scoop to form a pyramid shape or use damp hands to roll balls and form 12-15 croquettes
  • Turn croquettes in egg wash then gently press breading mixture evenly all over the croquettes
  • Fry croquettes 3-4 at a time until deeply golden, turning conical shapes gently as they cook to evenly brown, 5-6 minutes per croquette
  • Keep croquettes warm in oven on rack until ready to serve
  • Serve croquettes topped with gravy

This savory dish gets its devilish flavor from a mixture of spicy Calabrian chili paste, tangy Dijon mustard and sharp Pecorino Romano cheese. Charred bread and arugula on the side make sure you won't waste any sauce.

4 pieces boneless, skinless chicken breast (no tenders)
Salt and pepper
AP flour, about 1 cup
3 large eggs
1 scant tablespoon Dijon mustard
3 tablespoons milk
3 tablespoons Pecorino Romano or Parmigiano-Reggiano cheese
1/4 to 1/3 cup olive oil or vegetable oil (light in color olive oil or safflower oil)
2 lemons
3 tablespoons butter
2 large cloves garlic, 1 crushed or chopped, 1 halved
About 3/4 cup white wine
1 tablespoon Calabrian chili paste, harissa or sriracha
About 1 1/2 cups chicken stock
A handful flat-leaf parsley, for serving
1 loaf ciabatta bread, 12 to 14 inches long, halved
EVOO, for drizzling
Flaky sea salt, for sprinkling
1 large bundle arugula, cleaned, or boxed leaves

Steps:

  • Gather your ingredients and a gel board to prepare chicken.
  • Halve the chicken breasts horizontally and butterfly them. Use a mallet to thin meat or even it out if needed -- it depends on the size of the chicken breasts. Season meat with salt and pepper.
  • Set a station up: Flour in shallow dish; eggs beaten with mustard, milk, salt, pepper and cheese; large frying pan with oil (4 to 5 turns of the pan); a baking sheet with wire rack inserted and lined with parchment paper to remove the chicken to.
  • Preheat the oil in skillet over medium to medium-high heat. Coat chicken 2 at a time in flour, shake of excess, then in egg and allow excess to drip off. Cook chicken 3 to 4 minutes on each side. Repeat, removing cooked chicken to wire rack. Once chicken is cooked, slice and lightly brown 1 lemon; add to pan with chicken. Wipe excess oil from pan, return to heat and add butter. When it foams add 1 clove crushed garlic, juice of 1 lemon, wine and chili paste and reduce about 3 minutes. Add stock and reduce 5 minutes more. Pick and chop the parsley.
  • Char the bread over gas burner or under broiler. Rub charred bread with halved garlic, drizzle with EVOO, sprinkle with flaky sea salt and cut bread into chunks.
  • Add the chicken back to sauce and heat the meat through, 3 to 4 minutes, turning occasionally. Add the sliced lemons and coat with sauce. Add parsley and transfer to plates. Serve cutlets with a small handful of arugula leaves alongside and some charred bread for mopping.

1 clove garlic, cracked from skin
1/2 small onion
1 rib celery, chopped
1/4 small red bell pepper, chopped
1 cup cooked, chopped turkey meat, white and dark
1 cup leftover mashed potatoes
1 egg
Salt and pepper
2 teaspoons poultry seasoning
Few sprigs parsley, leaves only
1 cup Italian bread crumbs
3 tablespoons butter
4 tablespoons extra-virgin olive oil
12 cremini mushrooms, thinly sliced
3 to 4 sprigs fresh rosemary, finely chopped
2 tablespoons all-purpose flour
3 cups chicken stock
1/2 cup grated Romano, a couple of handfuls

Steps:

  • Place the garlic, onion, celery and red bell pepper in food processor and pulse to fine chop. Add turkey, potatoes, egg, salt, pepper, poultry seasoning, and parsley leaves then pulse to process and combine the mixture. Remove bowl from base and blade from the bowl. In a medium mixing bowl combine the turkey mixture with 3/4 cup bread crumbs.
  • Heat a small skillet over medium heat with 2 tablespoons butter and 1 tablespoon oil. When butter melts add the mushrooms and cook until dark and tender, 5 to 6 minutes. Season the mushrooms with salt and pepper and add rosemary to the pan. Sprinkle the flour over the mushrooms and cook a minute. Whisk in the stock, bring to a bubble and thicken, 5 minutes, over medium-low heat.
  • Preheat a nonstick skillet with 3 tablespoons extra-virgin olive oil over medium heat.
  • Use a conical or round ice cream scoop to form 8 croquettes. Combine cheese and remaining 1/4 cup of bread crumbs on a plate. Coat the croquettes in cheese and bread crumbs and saute in hot oil until deeply golden all over, 5 to 6 minutes for each batch. Remove and drain on paper towels. Serve the croquettes with rosemary gravy poured down over them.

My mom used to get chicken croquettes at a fancy restaurant when she was a young woman. I made these once for Mother's Day. She loved them.

1 (10.75 ounce) can condensed cream of chicken soup
1 ½ cups finely chopped, cooked chicken meat
¼ cup Italian-style dry bread crumbs
2 tablespoons minced celery
1 tablespoon minced onion
¼ teaspoon poultry seasoning
1 tablespoon shortening
½ cup milk
⅛ tablespoon poultry seasoning
½ cup Italian-style dry bread crumbs, for rolling

Steps:

  • Combine 1/3 cup of the soup, chicken, bread crumbs, celery, onion and 1/4 teaspoon poultry seasoning. Mix well and shape into 6 croquettes (I make patties). Chill in refrigerator for about 1 hour.
  • Remove croquettes from refrigerator and roll in additional bread crumbs. In a large skillet, melt 1 to 2 tablespoons shortening. Brown the croquettes in the shortening. Meanwhile, in a small saucepan, combine the remaining soup, milk and 1/8 teaspoon poultry seasoning. Heat over low, stirring occasionally. Serve sauce over croquettes.

1 lb ground turkey breast
1 celery rib, with leafy top finely chopped
1 large shallot, finely chopped
1/2 teaspoon ground thyme
1/2 teaspoon paprika
3 slices white bread, finely ground
1/2 cup milk
1 large egg
1/2 cup parmigiano-reggiano cheese
1/2 cup flat leaf parsley, finely chopped
salt & freshly ground black pepper
4 slices honey-baked ham
1/4 lb swiss cheese, thinly sliced
1/2 cup dry breadcrumbs
1/2 cup olive oil

Steps:

  • In a medium bowl, combine the turkey, celery, thyme and paprika.
  • In a small bowl, combine the ground bread and milk and then squeeze the crumbs as you transfer them to the meat mixture.
  • Mix in the egg, parmigiano-reggiano and parsley and season with salt and pepper.
  • Spread a foot-long piece of wax paper on a work surface. Using a rubber spatula, spread half the meat mixture on the wax paper to form an 8-inch-square. Top with the ham and swiss cheese, then the remaining meat mixture, forming the same square shape.
  • Seal the edges to enclose.
  • Cut into 4 square patties and coat each in the bread crumbs.
  • In a large skillet, heat 1 inch olive oil over medium-high heat. Add the patties and fry turning once, until browned, about 10 minutes.
  • Drain on paper towels and sprinkle with salt.
