350g pasta shells or quills
200g broccoli, cut into very small florets and the stems thinly sliced
2 tbsp olive oil
350g boneless, skinless chicken breasts, thinly sliced
175g chestnut mushrooms, quartered
4 tbsp sundried tomato paste
80g soft cheese with garlic and herbs (such as Boursin)
284ml carton single cream
bunch of spring onions, finely sliced
85g mature cheddar, grated
1 garlic clove, finely chopped
50g flaked almonds

Steps:

  • Heat the oven to 190C/ fan170C/ gas 5. Bring a large pan of salted water to the boil. Throw in 350g pasta shells or quills, stir well and return to the boil.
  • Cook for 6 minutes, then add 200g broccoli, cut into very small florets and stems thinly sliced, and cook for 5-6 minutes more until the pasta is just cooked. Drain well, then return to the pan.
  • Heat 2 tbsp olive oil in a wide pan, add 350g thinly sliced boneless, skinless chicken breasts and fry until lightly browned.
  • Tip in 175g quartered chestnut mushrooms and stir fry for 1 minute, then stir in 4 tbsp sundried tomato paste, 80g soft cheese with garlic and herbs and a 284ml carton single cream.
  • Gently simmer, stirring, until the cheese has melted to thicken the sauce. Season with salt and pepper.
  • Pour the sauce over the pasta, stirring gently until coated, then tip into a shallow ovenproof dish (about 1.7 litre capacity) and level the top.
  • Mix a bunch of finely sliced spring onions, 85g grated mature cheddar, 1 finely chopped garlic clove and 50g flaked almonds for the topping and sprinkle over the pasta. Bake for 20 minutes until golden.

300 - 400 g / 10 - 14oz chicken tenderloin (raw) (, breast or thigh, cut into 1.5cm / 3/5" pieces)
Salt and pepper
1 tsp dried thyme ((or other herbs and/or spices of choice))
250 g / 8 oz spiral pasta, uncooked ((See Note 1 for other shapes))
1 1/2 cups / 375 ml chicken broth/stock (, preferably warmed)
2 cups / 500 ml milk (, preferably warmed (any fat %))
1 large garlic clove (, minced)
1 - 2 tbsp /15 - 30g butter ((optional))
1 large broccoli or 2 medium broccoli or cauliflower (, broken into small to medium florets (Note 2 for subs))
100 - 150 g / 1 - 1.5 cups shredded cheese (, any melting type (Note 3))
1/4 cup / 35g flour (all purpose / plain)

Steps:

  • Preheat oven to 200C/390F (standard) or 180C/350F (fan forced / convection).
  • Sprinkle chicken with salt (be generous), pepper and thyme, toss to coat.
  • Spread pasta in a baking dish. Sprinkle over flour.
  • Pour over milk and broth, add garlic and butter. Stir.
  • Spread chicken over the top, then broccoli.
  • Cover with foil, bake for 15 minutes (or 20 minutes if milk & broth were cold).
  • Remove foil, STIR WELL. Add most of the cheese, then STIR WELL again. Top with remaining cheese.
  • Return to oven. Bake for 15 - 20 minutes until top is golden and sauce is thickened (See note 4 for troubleshooting).
  • Stand for a few minutes then serve immediately!

1 head broccoli, separated into florets
1 skinless chicken breast (about 250g)
4 tbsp extra virgin olive oil
500g dried linguine
1 small brown onion, finely minced
3 cloves garlic, finely minced
150ml thickened cream
salt and black pepper, to taste
freshly grated parmesan cheese, to serve

Steps:

  • 1. Bring a large pot of water to the boil to cook the broccoli and pasta. First, boil the broccoli for one minute and remove to a cutting board, reserving the water for the pasta. Finely chop the broccoli. With a knife, coarsely mince the chicken. Boil the pasta according to the packet instructions. 2. While the pasta is cooking, heat a very large frying pan over medium heat and add the oil. Fry the chicken until lightly browned, then add the onion and garlic, continuing to fry until they are softened. Add the chopped broccoli and fry for a further three to five minutes. Add the cream and stir well. 3. When the pasta is al dente, drain the pasta and reserve about ¼ cup of the pasta water. Add the pasta and reserved pasta water to the chicken and broccoli over heat and mix well. Season to taste and serve with parmesan cheese. 1 cup chicken broth (low sodium)
2 cups milk

Steps:

  • Heat the olive oil in a large skillet. Add the chicken breasts to the skillet and season them with salt and pepper. Cook for about 5 minutes until the chicken is cooked through and starts to lightly brown.
  • Add the onions, garlic and cook for another 2 minutes until the onions softens a little bit.
  • Add the pasta, chicken broth, milk and bring to a boil. Turn the heat down to low, stir, cover the pot/skillet and simmer for 15 minutes, stirring occasionally, until the pasta cooks through.
  • Uncover the pot and stir in the broccoli. Continue cooking for a couple more minutes until all the liquid evaporates. Stir in the nutmeg and cheddar cheese. Taste for seasoning and adjust with salt and pepper if needed.

12oz frozen of fresh broccoli
1 (16oz) box of pasta
1 can of homemade cream of chicken condensed soup
½ cup shredded cheese
salt and pepper, to taste

Steps:

  • In a large skillet, place the chicken breasts and cook on medium heat for about 4-5 minutes on each side until done. Dice into small chunks and place back into the skillet.
  • In a large pot, boil the pasta under tender and drain. Place into the skillet with the chicken.
  • In the same pot, boil the broccoli until it is no longer frozen. Place into the skillet with the chicken and pasta.
  • Stir in the homemade cream of chicken condensed soup and mix everything together. Add salt and pepper, to taste.

'LIGHTER' CHICKEN PASTA BAKE

750-800g/1lb 10oz-1lb 12oz whole cauliflower, cut into small florets
1 chicken stock cube
250ml/9fl oz semi-skimmed milk
40g/1½oz Parmesan, finely grated
175g/6oz dried penne or other short pasta shapes
200g/7oz broccoli, cut into small florets
200g/7oz cherry tomatoes, halved
1 tbsp extra virgin olive oil
2 small boneless, skinless chicken breasts (about 300g/10½oz), cut into 15-mm/⅝-in strips
½ onion, finely chopped
freshly ground black pepper

Steps:

  • Place the cauliflower florets into a saucepan and cover with cold water. Crumble the stock cube on top and bring to the boil. Cook for 8-10 minutes, or until the cauliflower is very soft. Drain, reserving the stock water, and return the cauliflower to the saucepan. Add the milk, 200ml/7fl oz of the reserved stock and half the Parmesan. Blend with a handheld blender or transfer to a food processer and blend until smooth. Set aside.
  • Half-fill a large saucepan with water and bring to the boil. Add the pasta, return to the boil and cook for 8 minutes. Add the broccoli and cook for a further 2 minutes, or until the pasta and broccoli is tender. Drain and return to the saucepan. Add the tomatoes and toss together. Stir in the cauliflower sauce.
  • Preheat the oven to 200C/180C Fan/Gas 6.
  • Heat the oil in a large, non-stick frying pan. Stir-fry the chicken and onion for 3 minutes, or until lightly browned.
  • Tip half of the pasta mixture into a 2 litre/3½ pint shallow ovenproof dish. Top with the chicken mixture and then spread all of the remaining pasta mixture on top. Sprinkle with the rest of the Parmesan and season with pepper.
  • Bake for 20 minutes, or until golden brown and bubbling. Serve immediately.

3/4 lb broccoli florets
10 ounces linguine pasta
3/4 cup heavy cream
2 tablespoons butter
salt and pepper to taste
2 teaspoons lemon zest
1 tablespoon lemon juice
1/3 cup finely grated parmesan cheese
Optional garnishes: lemon slices and chopped parsley

Steps:

  • Cook the pasta in salted water according to package instructions. Add the broccoli to the pot during the last 4 minutes of cooking time.
  • Reserve 1/4 cup of pasta cooking liquid.
  • Melt the butter in a pan over medium-high heat until browned. Add the heavy cream, 1/2 teaspoon salt and 1/4 teaspoon pepper.. Bring to a simmer and cook, stirring, until thick enough to coat a spoon, about 4 minutes. Remove from the heat and stir in the lemon zest and juice.
  • Place the pasta and broccoli back into the pot you cooked it in.
  • Pour the cream sauce over the pasta mixture and toss to coat evenly, adding pasta water if needed to thin the sauce. Stir in the parmesan cheese. Arrange the chicken on top of the pasta.

  • Preheat oven to 375℉. Spray 9x13 pan with non-stick cooking spray.
  • Cook the penne pasta in a large pot of boiling water for 9 minutes. Add broccoli to the pot and increase the heat to return to a boil. Cook for one more minute. Drain noodles and broccoli in a colander and run under cold water to stop the cooking process. Nothing is worse than mushy broccoli!
  • Heat the oil in a large skillet, and add the chicken,onion, salt and pepper. Cook for 5 minutes on medium heat and then add the mushrooms and garlic and cook for 4 more minutes. 1 pound chicken breasts
1 broccoli
6 ounces pasta
1/2 cup shredded cheese
1 onion
3 garlic cloves
1 teaspoon olive oil

Steps:

  • Boil the pasta in water according to the package instructions. When the pasta is almost done, add broccoli florets and cook them together until the broccoli has softened.
  • Meanwhile, dice onion, garlic and chicken.
  • Heat up the oil in a skillet or frying pan on medium to high heat, and add the chicken, onion, garlic and all seasoning. Sauté for a few minutes, until the chicken is cooked through. Set it aside.
  • When the pasta is done, discard the majority of the pasta water, but leave a little in the pot. Add the chicken and onions, as well as shredded cheese to the pot. Stir to combine.
  • Add any extra seasoning to taste, and serve.

8 ounces rigatoni pasta (dry)
2 cups broccoli florets (frozen is fine)
1 1/2 lbs rotisserie-cooked chicken
1 (5 ounce) package garlic & herb spreadable cheese (semi soft)
3/4 cup milk
1/4 cup sun-dried tomato packed in oil (drained or snipped)
Italian parsley
fresh ground pepper
parmigiano-reggiano cheese (as garnish)

Steps:

  • In a large saucepan, cook pasta, add broccoli during last 3 minute of cooking time, when al dente remove, drain. pasta and broccoli.
  • While pasta is cooking, remove meat from chicken, coarsely chop.
  • In the same pan you cooked the pasta, combine cheese, milk and tomatoes; cook until cheese begins to melt.
  • Add pasta and chicken, heat thoroughly, season with fresh ground pepper; add parsley right before removing from heat.
  • If the mixture needs to be thinned, add a tad more milk.
  • Serve with Parmesan cheese or Parmigiano Reggiano Cheese if desired.

2 boneless/skinless chicken breasts (cut into bite-size strips)
1 tablespoon olive oil
3 cloves garlic (minced)
4 dashes Italian seasoning
1 (10 fluid ounce) can chicken broth
2 cups half-and-half
3 cups uncooked fusilli pasta
1 small head broccoli (cut into florets)
Salt & pepper (to taste)
Red pepper flakes (to taste )
Freshly grated parmesan cheese (to taste)

Steps:

  • Prep your chicken. Add it to a large pot along with the olive oil. Give it a good stir and sauté over medium-high heat for 3-4 minutes.
  • Add the garlic, Italian seasoning, chicken broth, half-and-half, and pasta to the pot. Increase the heat to high and bring to a gentle boil. Once boiling, reduce heat to medium (or medium-low if it is still bubbling a lot). Let it simmer for 8 minutes, giving it the occasional stir so the pasta doesn't stick to the bottom of the pan.
  • Meanwhile, prep your broccoli. Keep in mind that the smaller you chop the florets, the softer it'll be once the pasta is cooked (I prefer mine fairly crisp so don't cut them too small).
  • Add the broccoli to the pot. Reduce the heat to medium-low, cover the pot, and cook for 4-5 minutes.
  • Season the pasta with salt & pepper, and add the red pepper flakes if using. If the broccoli is still too crisp, cook it for another couple of minutes. Serve immediately with fresh parmesan.

2 tablespoons olive oil
1 lb skinless chicken breast half, cut into strips
1 red bell pepper, cut into strips
4 cups small broccoli florets
3/4 cup prepared basil pesto

Steps:

  • Cook the penne in a large pot of water for 8-10 minutes until tender but firm.
  • While pasta cooks, heat oil in a large skillet over medium high heat. Add chicken and pepper strips and cook for 3-5 minutes.
  • Set aside.
  • Place the broccoli florets in a colander and drain the pasta over it. Place the pasta and broccoli back into the large pot.
  • Add the chicken mixture, pesto and parmesan cheese. Stir to combine.
  • To freeze:.
  • Cool. Spoon into freezer containers, seal, label and freeze for up to 3 months.
  • To serve:.
  • Thaw in micro or fridge. Bake in baking dish at 350 degrees for 30-35 minutes or until heated through. Sprinkle with additional freshly grated parmesan before serving.

Steps:

  • Cook pasta in salted water one minute shy of al dente according to package instructions. Last 2 minutes of cooking, stir in broccoli florets. Drain and set aside.
  • In a bowl, toss chicken with paprika, garlic powder, onion powder, and salt and pepper. Heat olive oil in a large sauté pan over medium-high heat and cook chicken for few minutes until no longer pink on the outside.
  • Add chicken broth and let it come to a simmer. Once simmering, add cream cheese and stir until melted. It's okay to have small speckles of cream cheese. It will incorporate when baked. Stir in 3/4 cup mozzarella until melted. The sauce will slightly thicken.

Steps:

  • Bring a large pot of salty water to a boil and cook pasta al dente according to package directions.

500ml/18fl oz chicken stock
2 large skinless chicken breasts
1 broccoli, about 350g/12oz, cut into big florets including the stalk
4 tbsp olive oil, plus extra to serve
5 garlic cloves, finely chopped or crushed
1 rosemary sprig, leaves picked and finely chopped (or 2 tsp dried rosemary)
350g/12oz dried pasta
1 lemon, zest only
50g/1¾oz Parmesan, finely grated
freshly ground black pepper

Steps:

  • To poach the chicken, put the stock in a saucepan with a lid and bring to the boil. Drop in the chicken breasts, put on the lid and take off the heat. Leave for 25 minutes until the chicken is cooked through but still juicy. Set aside and reserve the poaching liquid.
  • Meanwhile, about halfway through poaching the chicken, boil or steam the broccoli until really tender, then drain well and roughly chop into small pieces.
  • Heat the oil in a frying pan and fry the garlic and rosemary for 2-3 minutes until the garlic is golden and fragrant. Pour in all of the chicken stock from the poaching pan. Add the broccoli and simmer, breaking down the broccoli with the back of a spoon. As it cooks, mash the broccoli into a very soft sauce. It won't be smooth but there should not be any noticeable lumps left. Dice the chicken. When the broccoli sauce is 'creamy', smooth and no longer watery, stir through the chicken until warmed.
  • Meanwhile, bring a large saucepan of water to the boil and cook the pasta according to the packet instructions. Drain thoroughly, reserving a cup of the water, then toss the pasta into the sauce with the lemon zest, half of the Parmesan and plenty of pepper. Add a splash of the pasta water if it looks dry. Serve with the rest of the Parmesan and a drizzle more oil.

1 tbsp olive oil, for frying
200g cooked chicken, torn into pieces
2 garlic cloves, thinly sliced
1 chicken stock cube
160g dried short pasta
100g frozen peas
200g long-stem broccoli, cut into 3-4 pieces
150g crème fraîche
1 lemon, juiced
30g parmesan, grated, plus extra to serve
small bunch fresh mint, leaves picked

Steps:

  • Drizzle a little oil into a large, high-sided frying pan set over a medium heat. When the pan is hot, add the chicken and garlic, and fry for 5 mins, stirring often so it doesn't burn. Pour in 900ml boiling water, then add the stock cube and pasta along with some seasoning. Bring to the boil, then cover and simmer for 8 mins.
  • Stir in the peas and broccoli for the last 4 mins of cooking time, and replace the lid. You might need to increase the heat slightly to get the temperature back up to a simmer. Add a splash more water if the pasta is looking dry. After 4 mins, remove the lid and reduce the heat to low, then stir in the crème fraîche. Taste for seasoning. Remove the pan from the heat and stir through the lemon juice, parmesan and mint leaves. Finish with some extra parmesan, if you like.
