We all love this sauce on most anything, but especially on chicken and ribs. Use on chicken, pork, beef, hamburgers, meatballs, egg rolls, etc.

- Combine brown sugar, chile sauce, grape jelly, mustard, vinegar, soy sauce, honey, salt, and chipotle powder in a saucepan over medium-low heat. Cook, whisking well until brown sugar and jelly are dissolved, about 5 minutes. Bring just to a boil; remove from heat. Add cornstarch; whisk sauce until smooth and thickened.

- Pour water and vinegar into a saucepan, and bring to a boil over high heat. Stir in sugar, ginger, garlic, chile pepper, and ketchup; simmer for 5 minutes. Stir in cornstarch. Remove saucepan from stove to cool. Then transfer to a bowl, cover, and refrigerate until needed.

- Combine all ingredients.
- If using as a sauce in a dish you are cooking, just stir and add to pan a few minutes before service.
- Then cook over med-high heat stirring constantly until sauce thickens and takes on a'glazed' appearance (1- 2 minutes).

MUSSELS IN SWEET AND SOUR CHILI SAUCE
Mussels make the perfect mid-week supper as they take virtually no time to prepare and taste absolutely delicious, especially with this sweet and sour chili sauce.

- Discard any mussels that do not close when tapped. Put them in a pan with the wine, cover and bring to the boil. Steam for 5-6 minutes, until the shells have opened. Drain and discard any shells that haven't opened.
- Heat a little olive oil in a pan and add the chilies, garlic, scallions and ginger. Fry for 1-2 minutes. Add the vinegar and 2 tablespoons of the sugar to make a sticky sauce. Taste and add more sugar if required.
- Add the mussels and herbs to the pan and toss in the sauce. Serve either hot or chilled with lime wedges.

CHINESE SWEET AND SOUR SAUCE
When dining at a "family-style" Chinese restaurant in San Francisco's China Town, I tasted the absolute BEST Sweet and Sour sauce. After many attempts to re-create that special taste, I finally captured it! This can be used for Sweet and Sour chicken, pork or shrimp. It is also a good dipping sauce for Wontons. It has a very festive red-orange color.

- Set aside.
- In saucepan heat all remaining ingredients until sugar is dissolved and liquid is hot.
