Chicken Broccoli Casserole Bariatric Food
CHICKEN & BROCCOLI CASSEROLE - BARIATRIC RECIPES
Steps:
- Preheat oven to 375F. Spray a 13x9 baking dish with cooking spray. Sprinkle the chicken with salt and pepper and place in the baking dish.
- Bake the chicken for 15 minutes or until cooked through. While chicken is cooking, thaw and drain the broccoli.
- In a bowl combine broccoli, fat-free cream of mushroom soup and almond milk. Mix together well.
- Add broccoli mixture to the casserole dish and using a rubber spatula, combine chicken mixture well and spread throughout the dish. Sprinkle cheese evenly over the top.
- Bake for 10 minutes or until the sides start to bubble and the top looks slightly browned.

EASY CHICKEN BROCCOLI CASSEROLE
Most of the chicken broccoli casseroles I've seen here all have mayonaisse. Ick! This recipe uses a mixture of three different soups instead for it's creamy texture. The original recipe calls for cooked chicken breasts and cooked broccoli. I don't have time to cook things before I cook them! So I've always used uncooked chicken and frozen uncooked broccoli. Seems fine to me! :) Cooking time doesn't reflect pre-cooking of the chicken or broccoli... I can't stand cheddar cheese so I substitute mozzarella because that's the only cheese I can eat. I don't like mushrooms either, so I never put them in. Feel free to experiment!

- Put broccoli in the bottom of a buttered 9x13 inch pan.
- Put chicken on top of broccoli.
- In separate bowl, mix remaining ingredients and pour over broccoli and chicken.
- Bake one hour at 350 degrees.

Steps:
- Lay chicken breasts in casserole dish.
- Place broccoli florets around the chicken breasts (around edge of dish).
- Sprinkle with salt, pepper and garlic powder.
- Mix soup and sour cream together.
- Pour over chicken and broccoli.
- Sprinkle shredded cheddar cheese over casserole.
- Sprinkle Parmesan cheese on top.
- Sprinkle Ritz cracker crumbs or bread crumbs on top.
- Bake at 350 for 45 minutes or until chicken is done.
- (I cover for the first 25 minutes or so.) Serve with rice.

- Cut chicken into bite-size pieces and place in a 9-by-13-inch pan or large casserole dish. Layer broccoli on top.
- In a saucepan, combine soup, milk, cheese and margarine; heat until thick. Pour sauce over broccoli.
- Sprinkle with French fried onions and bake at 350 degrees for 50 minutes or until broccoli is tender and dish is hot.
