3 jalapeno peppers, halved lengthwise and seeded
1 teaspoon olive oil
6 bacon strips, cooked and crumbled
3 ounces cream cheese, softened
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon lemon-pepper seasoning
1/2 teaspoon pepper
1/4 teaspoon paprika
2 pounds ground beef
4 slices pepper jack cheese
4 hamburger buns, split
4 lettuce leaves
1 large tomato, sliced
3/4 cup guacamole

Steps:

  • Brush jalapenos with oil. Grill, covered, over medium heat for 3-5 minutes or until tender, turning occasionally. When cool enough to handle, finely chop. In a small bowl, combine the bacon, cream cheese and jalapeno until blended., In a large bowl, combine the garlic, salt, lemon pepper, pepper and paprika. Crumble beef over mixture and mix well. Shape into 8 thin patties. Spoon bacon mixture onto center of 4 patties; top with remaining patties and press edges firmly to seal., Grill burgers, covered, over medium heat or broil 4 in. from heat for 6-7 minutes on each side or until a thermometer reads 160° and juices run clear. Top with pepper jack cheese. Cover and cook 1-2 minutes longer or until cheese is melted., Grill buns, cut side down, over medium heat for 30-60 seconds or until toasted. Serve burgers on buns with lettuce, tomato and guacamole.

3 jalapeno peppers
1 1/2 lbs ground beef
1/2 teaspoon salt
1/2 teaspoon granulated garlic

1 cup grated sharp cheddar cheese
1 tablespoon olive oil
4 potato buns
2 cups shredded iceberg lettuce
1 large tomatoes, sliced
1 medium red onion, sliced
1 cup dill pickle

Steps:

  • Equipment:.
  • Skillet, Stove top grill pan.
  • Preheat oven to 350 degrees. Heat a small grill pan over medium high heat. Grill jalapeno peppers until charred, about 3-4 minutes per side. Let cool slightly, then remove stems and seeds and chop.
  • In a medium bowl, combine ground beef, salt, granulated garlic, granulated onion and black pepper. Divide into 8 equal balls.
  • On a clean work surface, flatten the balls into thin patties. Place about 2 tablespoons grated cheddar cheese into the center of 4 patties patty, then top with 1-2 teaspoons chopped jalapenos. Top with remaining 4 patties and close the beef around the cheese and seal to make smooth, completely enclosing the cheese and jalapenos into the center. Flatten burgers into uniform patties.
  • Heat olive oil in a large oven safe skillet over medium heat. Fry burgers on one side until lightly charred, about 4 minutes. Flip burgers and transfer skillet to oven. Cook for another 4-5 minutes until burgers are cooked through and cheese is melted.
  • Serve burgers on potato buns with lettuce, tomato, onion and pickles.

1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
4 ounces cream cheese, softened
1/2 teaspoon dried ancho chile powder
1/2 teaspoon ground cumin
1 tablespoon dried onion flakes
1 -2 tablespoon minced jalapeno pepper, seeded,to taste (you can add more if you like 'em HOT)

Steps:

  • Mix meat, Worcestershire sauce, salt, garlic powder, and pepper.
  • Shape the mixture into 12 thin patties, each about 4 inches in diameter.
  • Mix the cream cheese, ancho chili powder, cumin, dried onion, and minced jalapeno.
  • Top 6 patties with the cheese mixture, spreading it to within 1/2-inch of the edge (if the mixture is difficult to spread, try heating in the microwave for about 15 seconds).
  • Cover each patty with one of the remaining 6 patties, sealing the edges well.
  • Broil or grill the patties (4 inches from the heat), turning only once if possible, until preferred doneness and cheese is melted, about 10 to 15 minutes.
  • Low-carb serving: top with a bit of grated cheddar, guacamole, and enjoy!

1 stick (8 tablespoons) unsalted butter
1 chipotle pepper in adobo, chopped, plus 2 tablespoons adobo sauce
1 3/4 pounds ground beef
8 ounces bacon, finely chopped
Kosher salt and freshly ground black pepper
12 frozen jalapeno poppers
Twelve 1/2-ounce slices pepper jack cheese
24 pickled jalapeno slices (from a 12-ounce jar)
12 hamburger buns, split
Sliced red onion, sliced tomato and shredded lettuce, for topping

Steps:

  • Preheat the oven to 450 degrees F. Put a wire rack on a rimmed baking sheet.
  • Combine the butter, chipotle and adobo in a small saucepan over medium heat. Cook until the butter is melted and bubbly, about 4 minutes. Set aside.
  • Combine the beef, bacon, 2 teaspoons salt and 1 teaspoon pepper in a large bowl and mix together until well combined. Divide the meat into 12 balls (3 ounces each). Press a jalapeno popper into the center of one ball of meat and bring the meat up and around to completely encase the popper. Pat the meat into the flattest patty you can make while still keeping the popper completely covered. Put on the rack on the baking sheet and repeat with the remaining meat and poppers.
  • Bake until the burgers are caramelized around the edges, about 15 minutes. Meanwhile brush the cut sides of the burger buns with the chipotle butter and place cut-side up on a second baking sheet. Remove the burgers from the oven and top each with a cheese slice and 2 pickled jalapeno slices. Return to the oven along with the buns and bake until the buns are hot and the cheese is melted, about 5 minutes.
  • Serve the burgers on the buns topped with onion, tomato and lettuce.

1 1/2 lb ground beef
2 - 3 jalapenos, chopped small
3 - 4 Tbsp Worcestershire sauce
salt and pepper to taste
8 oz cream cheese, softened
1 1/2 c shredded sharp cheddar cheese
8 slice bacon, cooked
ranch dressing

Steps:

  • 1. Combine ground beef, jalapenos, Worcestershire sauce, salt and pepper.
  • 2. Form into 4 patties, grill or cook in skillet until done.
  • 3. Fry bacon.
  • 4. Combine cream cheese and cheddar cheese in food processor until mixed well.
  • 5. When burgers are done spread ranch dressing on each side of bun, spread cream cheese mixture on top of hamburger patty and top with bacon. I served it with cheesy jalapeno hash browns and buttermilk chipotle onion rings.

2 large eggs

1 cup panko breadcrumbs
1 red bell pepper, seeded and finely chopped

Steps:

  • Heat broiler to high. Place jalapenos, cut side down, on a foil-lined baking sheet and broil until totally blackened, about 10-15 minutes. Cover with the foil immediately upon removing from the oven and let sit for 5 minutes.
  • Remove the skin from the jalapenos and finely chop the flesh. Set aside.
  • Meanwhile, place 2 1/2 cups beans in a large bowl and mash until smooth. In a separate bowl, whisk together the eggs, 1 tbsp oil, cumin, salt and cayenne. Stir together the egg mixture, remaining beans, panko, bell pepper, cilantro and shallot. Mix into the mashed beans.
  • In a small bowl, whisk together the jalapenos and cream cheese.
