APPLE COBBLER FOR TWO



Apple Cobbler for Two image

You won't have days and days of leftover cobbler with this perfectly scaled-down recipe. It makes just enough for two!

Number Of Ingredients 12

1 large Honeycrisp or 2 Gala apples (about 12 ounces), peeled, cored and cut into 1/4-inch pieces (2 generous cups)
2 heaping tablespoons plus 1 teaspoon sugar
1 teaspoon all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1 tablespoon cold unsalted butter, cut into small pieces
1/4 cup all-purpose flour
Heaping 1/4 teaspoon baking powder
Pinch fine salt
2 teaspoons sugar
3 tablespoons heavy cream
2 small scoops vanilla ice cream, for serving

Steps:

  • For the filling: Preheat the oven to 400 degrees F. Toss the apples with 2 heaping tablespoons of the sugar, the flour, cinnamon and nutmeg. Add the butter, and toss. Divide the filling between two 6-ounce, 3 1/2-inch ramekins, tent each loosely with foil and bake until the apples are tender and the juice is bubbling, about 35 minutes. Remove the ramekins from the oven, remove the foil, give the apples barely a stir with a fork and press the top into the juices.
  • For the topping: Whisk together the flour, the baking powder, salt and 1 teaspoon of the sugar in a small bowl. Quickly stir in the heavy cream, then work the dough with your fingers as if you were working butter into pie dough, to make moist, slightly flattened chunks of dough.
  • Top each ramekin with dough, dividing evenly. Sprinkle each with 1/2 teaspoon of the remaining sugar, and bake until the topping is browned and crisp, 12 to 15 minutes. Let cool slightly, top with ice cream and serve.

3 cups apples, peeled and cut into chunks (any sweet, not tart, variety)
1/2 cup Fiber One cereal (original variety)
8 low-fat honey graham crackers (2 sheets=8 crackers)
2 tablespoons fat free egg substitute
2 tablespoons no-sugar-added applesauce
3 tablespoons Splenda granular, divided
2 tablespoons brown sugar (not packed)
1 tablespoon cornstarch
2 teaspoons cinnamon, divided
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Preheat oven to 400 degrees F.
  • Combine 2/3 cup of cold water with brown sugar, cornstarch, 1/2 teaspoons of cinnamon, vanilla extract, salt, and 1 tablespoons of the Splenda. Stir well.
  • In a medium-sized pot, combine apple chunks with this mixture and heat the apple mixture over medium heat, stirring occasionally.
  • Once liquid thickens to a syrupy consistency and begins to bubble, reduce heat to low and cover. Allow to simmer for 5 minutes, and then transfer mixture to a medium-sized round baking dish. Set aside.
  • Next, break graham crackers into small pieces. Place graham pieces and Fiber One in a blender or food processor, and grind to a breadcrumb-like consistency.
  • Transfer crumbs to a microwave-safe dish, and add egg substitute, applesauce, 1 1/2 teaspoons of cinnamon, and the remaining 2 tablespoons of Splenda. Stir well. Microwave graham mixture for 1 minute.
  • Use a fork to break up the toughened mixture as much as possible, and then allow it to cool for a few minutes.
  • Transfer graham mixture to a food processor or blender, and pulse until crumbly and uniform.
  • Evenly distribute graham topping over apple mixture.
  • Place the dish in the oven, and bake for 10 minutes.
  • Allow cobbler to cool slightly before serving.

6 granny smith apples, peeled and sliced
1 (18 ounce) box yellow cake mix
1 (12 ounce) can diet 7-Up or 1 (12 ounce) can Sprite

Steps:

  • Spray a 9x13 baking dish with non-stick cooking spray.
  • Add sliced apples evenly.
  • Sprinkle cake mix evenly over apples.
  • Pour soda GENTLY over cake mix.
  • DO NOT MIX- Just pour slowly.
  • Bake at 350 degrees Fahrenheit, covered, for 30 minutes, and uncovered for 30 minutes.
  • I halved the recipe using only 3 apples, 1 box of Jiffy Mix cake mix, 6 oz of Diet 7-up and 9" pie pan! It was still wonderful!

5 ounces unsweetened vanilla Almond Breeze, beverage
1/2 cup breyers double churn free fat free vanilla ice cream
1/4 cup Cap'n Crunch cereal (original)
1 ounce sugar-free vanilla syrup
1 teaspoon fat free Coffee-mate or 1 teaspoon sugar-free french vanilla powdered coffee creamer, dissolved in 1 tbsp. warm water
3 (1 g) packets Splenda sugar substitute
1/4 teaspoon vanilla extract
2 tablespoons fat free Reddi-Wip topping

Steps:

  • Place all the ingredients in a blender, and then blend with 3 ice cubes.
  • One at a time, add more ice cubes and then resume blending, until your ideal consistency is reached. (I like my shakes pretty thick, so I end up using about 5 - 7 cubes in total.)
  • Then pour your shake into a glass, and top it off with the Reddi-wip!

1/2 cup fat-free half-and-half

1 1/4 teaspoons vanilla extract
4 teaspoons granulated sugar

Steps:

  • Preheat oven to 325 degrees. In a medium pot, combine milk, half & half, and brown sugar. Bring to medium heat on the stove. Stir and cook until the sugar has dissolved and mixture is hot. Stir in the powdered creamer, blending well. Remove from heat.
  • In a large bowl, mix the egg substitute and vanilla extract together. Gradually whisk in the hot milk mixture. Set four 4-ounce baking ramekins or custard cups in a deep baking dish. Evenly distribute the custard mixture into the cups.
  • Carefully pour hot water into the baking dish, around the cups, being careful not to splash any water into the custard (or on yourself!). The water should come about halfway up the outsides of the custard cups. Carefully transfer pan to the oven, and bake for about 28 minutes, until custards are set.
  • Remove from the oven, allow to cool, and then refrigerate custard cups until completely chilled. Once ready to serve, top each custard cup with 1 teaspoons white sugar. Using a hand-held butane kitchen torch, caramelize the sugar (in other words, blast with fire 'til browned).

1 vegan burger, Boca Original Vegan Meatless Burger
1 slice fat-free cheddar cheese
1 pineapple ring, packed in juice
1 slice tomatoes
1 leaf lettuce
1 tablespoon teriyaki marinade, thick kind with about 20 - 25 calories per tbsp. (like the one by Lawry's)
1 teaspoon fat-free mayonnaise

Steps:

  • Bring a pan sprayed with nonstick spray to medium-high heat on the stove. (If you have a grill pan, use it -- you'll get neato grill marks.) Lay pineapple ring in the pan, and cook until slightly blackened and caram elized, about 3 minutes per side. Set aside to cool.
  • Cut a slit in the burger pouch. Place burger, slit-side up, in the microwave. Microwave for just 1 minute (not the time given on the box). If your microwave is low wattage, microwave for an additional 15 seconds. Remove patty from the microwave and place on a microwave-safe plate. Pour half of the teriyaki marinade on top, spread it around, and flip patty to coat evenly on both sides. Lay cheese slice on top of the patty, and microwave for 30 additional seconds.
  • Place the burger patty on the bottom half of the bun, and top with the remaining teriyaki sauce. Add the pineapple ring, tomato, and lettuce. Spread mayo on the top half of the bun, and finish your burger off with the bun's top half. Now CHOMP!
