Boneless chicken breasts coated in a Ritz cracker crumb coating, pan-fried until crispy, and served with a cheddar cheese sauce.

4 boneless (skinless chicken breasts)
salt and pepper
2 egg yolks
2 tablespoons water
1 sleeve Ritz crackers, (about 30 crackers)
1/3 cup all-purpose flour
1/2 teaspoon paprika
2 tablespoons grated Parmesan cheese
2 tablespoons butter
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese
Parsley for garnish, (optional)

Steps:

  • Preheat oven to 350 degrees and lightly grease a baking dish.
  • Season chicken with salt and pepper.
  • In a shallow bowl, whisk together egg yolks and water.
  • Pulse crackers in food processor until fairly fine crumbs are formed.
  • In a pie plate combine cracker crumbs, 1/3 cup flour, paprika, and Parmesan cheese.
  • Coat chicken in egg mixture and then dredge in cracker crumb mixture.
  • Melt 2 tablespoons butter over medium heat in a large nonstick pan. Add chicken, turn heat to medium-high and cook until golden brown on both sides, about 2 minutes per side.
  • Place in baking dish and bake for approximately 25 minutes, or until cooked through.
  • Meanwhile, melt 2 tablespoons butter in a medium saucepan. Stir in flour and cook for about 30 seconds. Gradually whisk in milk and cook until sauce simmers and thickens.
  • Whisk in Worcestershire sauce. Remove from heat and whisk in cheddar cheese.
  • Serve chicken topped with cheese sauce.

1 lb chicken breasts (boneless skinless)
2 tbsp olive oil
1 tbsp butter
Pinch of salt
For the sauce:
6-7 mushrooms ((or more if you love mushrooms))
1 tbsp butter
1 cup heavy cream
1 ½ cup cheddar (grated)
½ tsp chili flakes
1/2 cup fresh parsley leaves (chopped)

Steps:

  • Wash chicken breasts, pat dry with a tissue.
  • Cut each chicken breast in half, and then each piece into 3. Which will make a total of 12 chicken pieces. (If you want, you can also cut the chicken breast into long strips. The chicken will cook even faster this way)
  • Heat 1 tablespoon butter in a large skillet over high heat.
  • Season the chicken with salt and transfer to the skillet. Cook for 4 minutes on each side until golden brown. Leave it aside. (Cook on high heat, don't reduce the heat. Cooking this way will result in more tender chicken from the inside and slightly crispy from the outside.)
  • Add 1 tablespoon butter to the same skillet, add sliced mushrooms and cook for 2 minutes.
  • Add cream, take it to a boil, and reduce heat. Don't boil! Cook for 2-3 minutes.
  • Top with grated cheddar cheese and chopped parsley leaves, stirring and mixing everything well until cheese is melted.
  • Return chicken to the skillet, add chili flakes and cook on low heat for 5 minutes.
  • Taste if you need more salt. The cheddar is quite salty itself, so you may want to leave it as it is.
  • Garnish with parsley and you are ready to serve your delicious dinner!

1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, crushed
1/2 teaspoon red chili pepper flakes
2/3 cup chopped canned tomato
2 tablespoons brown sugar
2 tablespoons Dijon mustard
1 tablespoon soy sauce

Steps:

  • Sauce:
  • Heat oil in a medium pan over medium heat. Add onion, garlic and chili flakes. Cook, stirring until the onion begins to soften.
  • Add the remaining sauce ingredients and bring to the boil.
  • Reduce the heat to low and simmer, stirring occasionally for 8 minutes.
  • Preheat oven to 220c.
  • Line a baking tray with foil and spray it with cooking spray.
  • Place the chicken on prepared baking tray, skin side down. Brush with half the sauce.
  • Bake for 8 minutes, turn over, brush with remaining sauce and bake a further 7 minutes or until cooked through.
  • Serve at once.

They're as good as they sound: cheesy chicken cutlets coated with buttery Ritz crackers. Skipping the usual flour-egg-bread crumb dredge, this recipe relies instead on a flavorful base layer of tangy sour cream, which has lactic acid that tenderizes boneless, skinless chicken breasts beautifully. When it comes to breaded white meat, thin cutlets are ideal, which you can buy from the store or achieve by slicing thick breasts in half horizontally (no pounding necessary). They cook more evenly this way, staying tender throughout as they're quickly baked in a hot oven. Serve with something fresh - a big green salad, perhaps - to balance the wonderful richness of this nostalgic number.

1 tablespoon olive oil, plus more for greasing wire rack
1/4 cup sour cream
1 large egg white
1 teaspoon Dijon mustard
Kosher salt (Diamond Crystal)
2 large boneless, skinless chicken breasts (about 1 1/2 pounds total)
1 sleeve Ritz crackers (about 100 grams)
2 ounces extra-sharp Cheddar cheese, coarsely grated (about 1 cup)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Steps:

  • Position rack in the bottom third of the oven and heat oven to 450 degrees. Place an ovenproof wire rack over a sheet pan. Dab a folded-up paper towel with olive oil and rub it over the wire rack to grease it.
  • In a medium bowl, whisk together the sour cream, egg white and Dijon mustard until smooth. Season with salt. Lay the chicken flat on a cutting board and carve each breast in half horizontally so you end up with four thin cutlets. Add the chicken to the sour cream mixture, and using your hands, smear the sour cream all over the chicken.
  • In a large bowl, crush the Ritz crackers into coarse pieces with your fingers. Some crackers will turn to rubble while others turn to dust. Add the cheese, garlic powder, onion powder and olive oil. Season with 1/2 teaspoon salt and toss until evenly distributed. Holding one of the chicken cutlets by its thinner end, add to the bowl with the crumbs, and using your hands, pack the crumbs onto the chicken, pressing them in to create a thick coating. Transfer the breaded chicken to the rack in the sheet pan. Repeat with the remaining three cutlets.
  • Bake the cutlets until the outsides are crispy and the insides are no longer pink, 10 to 15 minutes. Let the chicken cool slightly so the coating can set, about 5 minutes, before transferring to plates and serving.

4 skinless chicken breasts
Olive oil, for sauteing
4 (8-inch) flour tortillas
8 ounces grated cheddar cheese
4 tablespoons sliced pickled jalapenos
1 can cooked black beans
3 tablespoons pickled jalapenos
2 plum tomatoes canned
2 teaspoons ground cumin
Salt and pepper
Water, to cover
1 tablespoon chopped garlic

Steps:

  • Saute chicken in olive oil over medium high heat for 3 to 5 minutes on each side. Lay tortillas flat on a clean dry surface. Add 2 ounces of cheddar and 1 tablespoon of jalapeno to each tortilla. Fold to form and 1/2 moon and heat griddle until crisp in a non stick pan.
  • In a sauce pot add the black beans, pickled jalapenos, tomatoes, cumin, salt and pepper, water and garlic. Bring to a boil and allow to simmer for 3 to 5 minutes. Pour into a blender and process until smooth. Serve hot.
  • To serve cut the tortilla in half and place in the center of the serving plates. Add a spoonful of black beans and the sliced chicken breast on top.

She showed Rachael Ray (who owns the copyright to the recipe) how to put this dish together on Rachael's new show. Haven't tried it yet, but I'm sure I will in the next couple of weeks or so, then I will revise this description. Enjoy:

4 quart-sized ziploc bags
4 small boneless skinless chicken breasts
1 (5 ounce) bag salted pretzels, any shape
1 tablespoon fresh thyme leave, chopped
salt & freshly ground black pepper
2 eggs
vegetable oil, for frying
2 tablespoons butter
2 tablespoons flour
2 cups milk
3/4 lb sharp cheddar cheese, shredded
2 tablespoons spicy brown mustard
1/4 cup flat leaf parsley, a generous handful, chopped
1/4 small yellow onion, finely chopped
1 large sour dill pickle, finely chopped
1 lemon, cut into wedges (garnish)

Steps:

  • Preheat a large non-stick skillet with a 1/4-inch of vegetable oil over medium-high heat.
  • Sprinkle a little water into four medium food storage baggies. Place 1 chicken breast in each bag and seal it up, pushing out excess air. Use the bottom of a heavy pot or pan and pound each breast until flat, just shy of busting out of the bag. Repeat with the other 3 chicken breasts.
  • Place the pretzels in a food processor or blender and grind until fine. Transfer the ground pretzels to a shallow dish, add the thyme and some salt and pepper.
  • Crack and beat 2 eggs in a second shallow dish with a splash of water.
  • One at a time, coat each chicken breast in the egg and then the ground pretzels.
  • Add the pretzel-coated chicken breast to the hot oil. Cook in a single layer, in 2 batches if necessary, about 3 or 4 minutes on each side, until the juices run clear and breading is evenly browned.
  • While the chicken is frying, in a medium saucepot over medium heat, melt the butter and add the flour to it.
  • Cook flour and butter for 1 minute and then whisk in the milk.
  • When the milk comes to a bubble, stir in the cheese and mustard with a wooden spoon.
  • Season with a little salt and pepper, and remove cheese sauce from the heat.
  • Transfer the fried pretzel-crusted chicken breast to a serving plate, drizzle with the mustard cheddar sauce, then sprinkle with a little parsley, finely chopped onion and sour dill pickle.
  • Serve lemon wedges alongside.

1 green pepper, sliced thin
2 jalapenos, minced
3 cloves garlic, sliced thin
4 chicken breasts
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1 cup shredded cheddar cheese
Tabasco sauce

Steps:

  • Preheat oven to 350.
  • Lightly oil a baking pan.
  • Place the green pepper, a quarter of the jalepeno, and the garlic in a pan and toss gently to coat with oil and push the vegetables to the side of the pan.
  • Add chicken and turn the chicken to coat with oil.
  • Place the vegetables on the chicken and bake 30 minutes.
  • While chicken is cooking, melt the butter in a sauce pan.
  • Add the flour and cook 2-3 minutes until lightly browned, then add the milk and cook over medium heat until thickened.
  • Add the cheese and turn off the heat.
  • Add the rest of the jalepeno and the Tabasco and stir well.
  • Let cool until chicken has finished baking.
  • Drain fat off the chicken, and pour the cheese sauce over the chicken and vegetables, and bake 30 more minutes.
