Usually I post things to get the nutritional info, but this one is so worth sharing. My husband says this is the best bread he has tasted. It's another recipe by the fabulous Laura Calder on Food TV Canada's 'French Food at Home.' I made this by hand and it was as easy as homemade bread can be. Any dried herbs can be used for this, and it can also be made without any herbs, but it's not as good. I used McCormick's Herbes de Provence, which is a blend of rosemary, marjoram, thyme, savory, basil, lavender and sage. Makes an excellent accompaniment for any French or Italian dish, or serve it toasted and open faced with butter, slices of fresh tomatoes and your favourite cheese. It's so good.

1 teaspoon sugar
2 1/4 teaspoons dry active yeast (1 envelope)
1 cup water, lukewarm
1/4 cup olive oil
1 teaspoon salt
2 1/2 cups flour, more if needed
1 tablespoon herbes de provence (I recommend McCormics)

Steps:

  • Stir the sugar and yeast into the water, and set aside for 10 minutes to dissolve.
  • Put the olive oil and salt in a large mixing bowl, and add the yeast mixture.
  • Beat in 1-1/2 cups/285 g of the flour, until smooth, along with the herbs.
  • Work in the remaining cup/125 g flour, turning it onto the countertop to knead, until you have smooth, springy dough, 10 to 15 minutes. (I found 15 minutes yeilded a much better bread than 10 minutes).
  • Cover with a tea towel and set in a warm place to rise to double, about 45 minutes.
  • Punch the dough down and shape into a loaf. (I shaped mine into a ball by pressing the dough slightly flat, folding in the corners, pinching them together and then flipping the ball over with the pinched corners on the bottom. I then made three long slices in the top for steam to escape. This is how Laura did it on the show.).
  • Let rise again 30 minutes (or not), and bake at 400ºF/200ºC for 25 minutes until done. I brush the loaf with an egg/milk wash before I bake it, but it's not necessary. The wash is 1 yolk beaten with a tablespoon or two of milk. You can also spray the loaf lightly with water, or put a pan of boiling water in the oven to give the bread a crispy crust.
  • Let the bread cool a little before slicing to serve.

3 zucchini, sliced into 1/4-inch rounds
3 tablespoons extra-virgin olive oil
2 teaspoon s fine sea salt
1 tablespoon herbes de Provence
1/4 cup bread crumbs
1/4 cup shredded parmesan cheese
3 tablespoons extra-virgin olive oil
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange a layer of zucchini slices into the bottom of a 9-inch pie pan so they slightly overlap one another; drizzle with 1 tablespoon olive oil and season with some of the sea salt and herbes de Provence. Repeat layering until the zucchini is all used.
  • Bake in the preheated oven for 30 minutes.
  • While the zucchini bakes, stir together the bread crumbs, parmesan cheese, and 3 tablespoons olive oil in a bowl; season with salt and pepper. Spread evenly over the baked zucchini and return to oven 10 minutes more; serve hot.

3 tablespoons olive oil
2 tablespoons brandy

1 1/2 cups milk (375 milliliters)
2 tablespoons butter
2 tablespoons flour
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Pinch freshly grated nutmeg
1/4 cup finely grated Parmigiano-Reggiano cheese (25 grams)
1 1/4 cups grated Gruyère or Emmental cheese, divided (150 grams)
8 slices sourdough multigrain rye, toasted, such as Stonemill
4 teaspoons Dijon mustard
8 thin slices ham, optional (about 150 grams)
4 eggs
Butter, for frying eggs
Fresh thyme, for garnish

Steps:

  • For the onions: Preheat your oven to 325 degrees F (160 degrees C). Scatter the onions onto a rimmed baking sheet along with the garlic and thyme. Drizzle with the olive oil, brandy and maple syrup. Season with salt and pepper and toss to combine. Cover tightly with foil and transfer to the oven for 2 hours.
  • Remove the foil and stir in the vinegar. Return to the oven for 15 to 20 minutes, or until caramelized. Season to taste with more salt and pepper, if needed, and set aside.
  • For the sandwiches: Set your broiler to low and line a baking sheet with foil. In a small saucepan, heat the milk over medium-low, until steaming.
  • For the mornay sauce, melt the butter in a medium saucepan over medium heat. Sprinkle in the flour and cook, whisking, for 1 minute. While whisking, slowly add the milk. Add the salt, pepper, herbes de Provence and freshly grated nutmeg. Bring to a simmer and cook, stirring occasionally, for 1 to 2 minutes, until thickened. Remove the sauce from the heat and whisk in the Parmigiano-Reggiano and 1/4 cup of the Gruyère or Emmental.
  • Lay half of the bread out on the prepared baking sheet and spread 1 teaspoon of Dijon over each slice. Top each with two slices of ham, if using, about 3 tablespoons caramelized onions and divide half of the cream sauce over top. Scatter about 2 tablespoons of the grated Gruyère or Emmental over each and sandwich with another piece of bread. Spread the remaining cream sauce over the tops of each sandwich and scatter over the remaining cheese.
  • Broil the sandwiches for 4 to 6 minutes, or until golden brown and bubbling.
  • Meanwhile, fry the eggs in a little butter over medium-high heat until crisp around the edges, leaving the yolks runny.
  • Top the sandwiches with the fried eggs, scattered with a few fresh thyme leaves and season with some extra salt and pepper.

1 or 2 ripe tomatoes, sliced
1/3 pound bloomy rind goat cheese, such as Bucheron
1/3 pound French-style ham, optional
1/2 teaspoon herbes de Provence
1 small handful of fresh arugula, optional
2 tablespoons extra-virgin olive oil, optional
1 tablespoons minced parsley
1 1/2 tablespoons red wine vinegar (just eyeball it)
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
12 turns fresh black pepper
2 anchovies
2 tablespoons minced shallot (about 1/2 of one shallot clove)
4 tablespoons olive oil, divided
1 fresh, crusty baguette
1 6.7 ounce jar of Italian oil-packed tuna, drained
1/2 bell pepper, red or green, sliced very thin
1 small handful raw haricots verts or green beans, cut into 1-inch pieces.
1 large handful arugula (about 1 ounce)
2 hard-boiled eggs, peeled and sliced
10 to 12 pitted black olives, preferably Niçoise, chopped
1 tomato, sliced

Steps:

  • Slice the baguette in half lengthwise, almost all the way through, and open.
  • Slather both sides with the butter. Layer with the ham and cheese. Close, press, and divide into two or three sandwiches.
  • Slice the baguette in half lengthwise, almost all the way through, and open. Drizzle the top and bottom baguette halves with olive oil.
  • Slice the tomato slices in half, so they are in half moons. Slice the goat cheese into thin rounds, then slice them in half into half moons.
  • If using, layer arugula, then ham onto the bottom of the sandwich. Then add alternating slices of tomato and goat cheese along the length of the sandwich.
  • Sprinkle with herbes de Provence. Close the baguette, press, and divide into halves or thirds.
  • Make the Vinaigrette: In a medium-sized mixing bowl, combine the parsley, vinegar, Dijon, salt, pepper, anchovies, shallot, and 2 tablespoons of olive oil. Whisk until emulsified.
  • Slice the baguette in half lengthwise, almost all the way through, and open. Drizzle the top and bottom baguette halves with the remaining 2 tablespoons of olive oil.
  • To the vinaigrette, add the tuna, bell pepper, haricots verts, and arugula. Stir to mix well. The tuna will break apart somewhat.
  • Spread the tuna mixture along the bottom half of the baguette. Layer the sliced hard-boiled egg and olives atop the tuna mixture.
  • Sprinkle with herbes de Provence. Close the baguette, press hard, and let rest for 2 to 24 hours, preferably weighted down. Tip: Suggestions for weighing down the pan bagnat: the bottom of a cast-iron skillet, or sheet pan with heavy cookbooks on it. Slice into halves or thirds, and serve. Note: If the sandwich will rest for more than two hours, wrap it in plastic wrap and refrigerate. Before serving, allow to return to near room temperature.

I mixed this up one night when I didn't want plain old garlic bread with dinner. We love it. The lavendar in the herbes really make this mix. I have never mixed my own Herbes de Provence, but have had success using Penzey's or Victoria Taylor's blend of spices. This may be mixed and stored in the fridge, or spread on bread and frozen for future use. The cheese is optional, and I have used provolone, mozzarela, or even white American with success. You could use French or Italian loaves, or some nice ciabatta rolls. I have a little crock of this in my fridge, and I use it on green beans and baked potatoes as well. It's very versatile!
