1-1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1/4 teaspoon lemon-pepper seasoning
6 bone-in chicken breast halves, skin removed (7 ounces each)
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup sour cream
1/2 cup dry white wine or chicken broth
1/2 pound fresh mushrooms, sliced
1/4 cup water
2 tablespoons cornstarch
Additional paprika, optional

Steps:

  • In a small bowl, combine the first 4 ingredients; rub over chicken. Place in a 3-qt. slow cooker. In a large bowl, combine the soup, sour cream and wine; stir in mushrooms. Pour over chicken. , Cover and cook on low for 4 hours or until meat is tender. In a small bowl, mix water and cornstarch until smooth; stir into chicken mixture. Return to a boil, stirring constantly; cook and stir until thickened. If desired, sprinkle with additional paprika.

4 small bone-in chicken breasts (1-1/2 lb.)
2 Tbsp. butter or margarine
1 tomato, seeded, chopped
2 Tbsp. tomato sauce
2 cloves garlic, minced
1/2 cup fat-free reduced-sodium chicken broth
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Mix flour and pepper in shallow dish. Add chicken; turn to evenly coat both sides of each breast. Gently shake off excess flour mixture.
  • Melt butter in large skillet on medium-high heat. Add chicken; cook 10 to 12 min. on each side or until done (165°F). Transfer chicken to platter; cover to keep warm.
  • Add tomatoes, tomato sauce and garlic to skillet; cook 3 min. or until heated through, stirring frequently. Stir in broth; bring to boil. Simmer on medium-low heat 3 min., stirring frequently. Whisk in sour cream; cook and stir 2 min. or until heated through. (Do not let sauce come to boil.) Spoon over chicken.

1 cup sour cream
¼ cup mayonnaise
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
1 ½ teaspoons salt
1 teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon pepper
3-4 boneless, skinless chicken breasts (about 2 lbs. total)
¾ cup crushed Ritz crackers (about 15 whole crackers or half of a sleeve)
2 tablespoons salted butter, melted
2 tablespoons Parmesan cheese
Optional garnish: chopped fresh herbs such as parsley, basil or thyme

Steps:

  • Whisk together sour cream, mayonnaise, lemon juice, Worcestershire sauce, salt, paprika, garlic powder and pepper. Add the chicken to the sour cream mixture and toss to coat. Cover and marinate in the refrigerator for at least 1 hour (or overnight).
  • Preheat oven to 375°F. Spray a large baking dish or rimmed baking sheet with cooking spray (about 9 x 13-inches or any other size dish that comfortably holds your chicken).
  • Remove the chicken from the sour cream mixture and place in the prepared baking dish. Discard marinade.
  • In a small bowl, combine cracker crumbs and melted butter. Press buttered cracker crumbs on top of each chicken breast. Sprinkle with Parmesan.

1 clove garlic, minced
1 cup heavy cream
1 cup chicken broth

Steps:

  • Brown chicken breast.

3 slices bacon
⅓ cup butter
4 skinless, boneless chicken breast halves
1 (4.5 ounce) can sliced mushrooms, drained
4 green onions (white part only), chopped
2 teaspoons paprika
3 tablespoons all-purpose flour
1 cube chicken bouillon
¼ cup hot water
1 cup dry white wine
½ cup sour cream
2 cups uncooked white rice
4 cups water
1 tablespoon toasted slivered almonds

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble when cool; set bacon aside.
  • Preheat oven to 350 degrees F (175 degrees C). Spray a 7x11-inch baking dish with cooking spray.
  • Melt the butter in a large skillet over medium heat, and pan-fry the chicken breast halves until brown on both sides, about 6 minutes per side (meat will still be pink inside). Arrange the chicken breasts in the baking dish, and scatter the mushrooms over the chicken. Cook the green onions in the hot skillet over medium heat until softened, about 3 minutes; stir in paprika and flour. Fry the flour mixture for about 1 minute. Mash the bouillon cube in 1/4 cup of hot water in a small bowl, and whisk the bouillon into the flour mixture. Bring to a boil (sauce will be thick). Gradually whisk white wine into the skillet, and bring to a simmer. Stir the sour cream into the sauce. Pour the sauce over the chicken breasts in the baking dish.
  • Cover the baking dish with foil, and bake in the preheated oven for 1 hour.
  • About half an hour before chicken is done, bring the rice and 4 cups of water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes. Let rice stand covered for about 10 minutes.
  • To serve, spoon the cooked rice onto a serving platter, and top with the chicken breasts. Stir remaining sauce in the dish, and spoon over the chicken; garnish with crumbled bacon and slivered almonds.

5 lbs chicken pieces
salt and freshly ground pepper
3 Tbs. STAR Originale Olive Oil
1 large onion, chopped
4 cloves garlic, minced
2 Tbs. all-purpose flour
1 1/2 cups chicken broth
1 bay leaf
pinch saffron strands
1/2 cup slivered almonds
3 Tbs. minced parsley
2 hard-cooked eggs, chopped
2 Tbs. STAR Capers

Steps:

  • 1.Sprinkle chicken with salt and pepper to taste. Heat olive oil in 1 very large or 2 medium skillets over medium-high heat. Add chicken and brown on all sides, about 3-5 minutes per side. Remove chicken and set aside. Pour off all but 2 Tbs. of pan drippings. In same pan, saute onion and half of garlic until soft. Stir in flour to blend, then slowly stir in 1 cup broth, bay leaf and saffron. Return chicken to pan, cover and simmer over medium-low heat 30 minutes.
  • 2. Meanwhile, in blender, combine almonds, 2 Tbs. parsley, remaining garlic and broth. Process until almonds are finely ground. With tongs or slotted spoon, transfer chicken to platter. 2 nice size chicken breast cut into chunks (or chicken parts)
2 Tablespoons vegetable oil
2 Tablespoons butter
1/2 a medium onion (chopped)
1 sweet red pepper (chopped)
1 Tablespoon minced jarred garlic
1 Teaspoon Paprika
1 cup chicken broth
1 cup sour cream
3 Tablespoons all purpose flour
Salt and pepper to taste

Steps:

  • 1. Place the oil and butter in a large skillet over medium to low heat. Melt the butter, place chicken breast in skillet and brown on both sides, remove from skillet to a platter.
  • 2. Place the chopped onion, sweet red peppers and minced garlic in the skillet and saute until onion is translucent and peppers are tender. Add paprika and blend together.
  • 3. Add chicken broth to the skillet and place chicken breasts in pan to cook covered for 25 minutes or till chicken is tender. Note, using cut up chicken parts ( bone in) will increase the simmering time to about 45 minutes.
  • 4. Remove chicken to a plate and keep warm. Blend the sour cream and flour together, whisk into the liquid in the skillet and cook until thickened, salt and pepper to taste. Pour over chicken. Serve.

4 skinless boneless chicken breasts
50g slightly salted butter , softened
1 tsp finely chopped fresh tarragon , plus extra for scattering
1 tsp finely chopped fresh parsley
½ tsp finely snipped fresh chives
25g ground almond
4 large thin slices of prosciutto

Steps:

  • Preheat the oven to fan 180C/ conventional 200C/gas 6. Pat each chicken breast dry with kitchen paper. Make three lengthways slits in the top of each breast, cutting halfway through the meat.
  • Cream the butter with the herbs until smooth, then blend in the almonds and a pinch of salt. Divide into 4 equal parts and spread one portion in the slits in each breast. Gently press the meat together to reform the shape.
  • Wrap the prosciutto well around each breast, overlapping the ends (you shouldn't need cocktail sticks to secure it). Lay the parcels in an oiled ovenproof dish and cover loosely with a piece of buttered grease proof paper or foil. (The chicken breasts can be kept like this in the fridge for 2-8 hours, but let them come to room temperature for about 30 minutes before cooking.)
  • Bake the chicken for 20 minutes, removing the butter paper or foil for the last 5 minutes. Remove the dish from the oven and allow the chicken to cool for 5 minutes, then transfer to individual plates and spoon over the melted butter that has collected in the bottom of the dish. Scatter with extra tarragon and some freshly ground pepper.

  • Salt both sides of chicken breast halves with garlic salt. Dip in melted butter to which paprika and lemon juice has been added. Place in shallow baking dish . Bake for 30 minutes at 350℉ (180℃). Mix remaining ingredients listed and spoon over chicken breasts. Sprinkle with slivered almonds and continue baking for 30 additional minutes. Remove chicken; thicken sauce with 2 tablespoons flour and stir in ¼ cup fat free sour cream (I did not include these in the counts since I didn't use them - Reggie). Serve chicken breasts over rice. *You can use boneless breasts and cut the cooking time to 15 minutes, add other ingredients and cook another 15 minutes, then thicken sauce and serve over rice. 1/4 teaspoon Worcestershire sauce

3/4 cup sliced almonds
6 skinless boneless chicken breast halves (2 lb total)
1 teaspoon salt
1 (3-inch) cinnamon stick
1 teaspoon dried oregano (preferably Mexican), crumbled
2 Turkish bay leaves or 1 California
2 tablespoons vegetable oil
3 bacon slices, chopped
1 cup chopped onion (1 medium)
1 tablespoon chopped garlic (2 to 3 cloves)
1 cup low-sodium chicken broth or water
1/2 teaspoon black pepper
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Spread 1/4 cup almonds on a baking sheet and toast in oven until golden, 8 to 10 minutes.
  • Meanwhile, finely grind remaining 1/2 cup almonds in a food processor about 1 minute (don't grind to a paste).
  • Pat chicken dry and sprinkle with 1/2 teaspoon salt.
  • Heat a dry 12-inch heavy skillet over moderate heat, then toast ground almonds, cinnamon stick, oregano, and bay leaves, stirring constantly, until almonds are pale golden, about 2 minutes. Transfer to a bowl and wipe skillet clean.
  • Heat oil in skillet over high heat until hot but not smoking, then sauté chicken, turning over once, until golden, about 5 minutes total. Transfer chicken to a plate.
  • Add bacon to skillet and cook over moderate heat, stirring, until bacon begins to render fat and turn golden, about 1 minute. Add onion and garlic and cook, stirring occasionally, until golden, about 3 minutes. Stir in ground- almond mixture and chicken broth and boil, scraping up brown bits, 1 minute. Stir in pepper and remaining 1/2 teaspoon salt. Add chicken, turning to coat, then reduce heat to moderate and simmer, covered, until chicken is just cooked through, about 5 minutes. Stir in parsley and sliced almonds. Discard cinnamon stick and bay leaves. Serve chicken with sauce spooned on top.

  • Make the sauce: Add the mushrooms to the remaining butter and sauté them for 1-2 minutes or until they soften. Pour in 1 1/4 cup of chicken broth and the sour cream, use a whisk to help break up any of the flavor bits that may be stuck to the pan. Let the sauce come to a simmer and thicken. It should thicken enough to coat the back of a spoon in about 1-3 minutes, if you prefer your sauce slightly thinner, adjust with the remaining 1/4 cup of broth. Once the broth has reached your desired consistency, taste and adjust seasonings to preference. Add the chicken and beans into the skillet and drizzle with sauce. Sprinkle with the toasted almonds and serve immediately with the rice pilaf.
