Spice up your average chicken by serving it grilled with peach chipotle sauce. This healthy meal is smoky and sweet, and ideal for summer.

4 peaches, peeled and sliced into quarters
2 stalks green onion, thinly sliced
1 canned chipotle pepper in adobo, plus 2 tsp sauce from the can
1/2 cup freshly chopped cilantro
1 1/2 tsp salt, divided
1 1/2 tsp ground black pepper, divided
1/2 tsp cayenne pepper
4 boneless, skinless chicken breasts

Steps:

  • Preheat grill to high heat.
  • Arrange peach quarters on the grill, and cook for approximately 3-4 minutes on each side. Remove from grill and set aside to cool.
  • Chop the peaches and chipotle pepper.
  • Place in a medium bowl with the scallion and adobo sauce. Toss to coat. Gently fold in cilantro, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Refrigerate until ready to serve.
  • In a small bowl, stir together with the cayenne, and remaining salt and black pepper.
  • Season chicken breasts on both sides with the spice mixture.
  • Place on the grill and cook for approximately 5-7 minutes per side, until the internal temperature reaches 165°F.

1/4 teaspoon fresh ground black pepper

Steps:

  • Spray grill with cooking spray. Heat grill for direct heat.
  • In a small saucepan combine preserves, lime juice, chipotle pepper, and adobo sauce. Heat mixture over low heat, until preserves melt. Stir in cilantro and set aside.
  • In a small dish combine garlic, pepper, cumin, and salt. Sprinkle mixture over chicken.
  • Cover and grill chicken over medium heat 15-20 minutes, turning once or twice and brushing with preserve mixture last 3 minutes of grilling. Cook until juices of chicken are clear and when the centers of the thickest pieces are cut they are no longer pink.
  • Heat any remaining preserve mixture to boiling. Boil and stir 1 minutes and serve with chicken as desired.

2 tablespoons olive oil
4 teaspoons reduced-sodium soy sauce
1 tablespoon ground mustard
1 garlic clove, minced

1 cup prepared GOOD SEASONS Italian Dressing Mix
4 small boneless skinless chicken breasts (1 lb.)
1/4 cup HEINZ Balsamic Vinegar
1/4 cup molasses
4 ripe peaches, halved, pitted

Steps:

  • Pour dressing over chicken; cover. Refrigerate 1 hour to marinate. Drain chicken; discard marinade. Mix vinegar and molasses until well blended; brush onto cut sides of peach halves. Set aside.
  • Preheat greased grill to medium heat. Grill chicken 8 min. on each side or until chicken is cooked through (180°F), adding peaches to the grill for the last 6 min. of the chicken grilling time and turning and brushing peaches occasionally with any remaining vinegar mixture.

1 tablespoon balsamic vinegar
1 tablespoon chopped shallot
1 teaspoon Dijon mustard
½ teaspoon salt, or more to taste
4 peaches, halved and pitted
4 skinless, boneless chicken breast halves
8 cups baby arugula

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk 1/4 cup olive oil, balsamic vinegar, shallot, Dijon mustard, and 1/2 teaspoon salt together in a bowl until dressing is well mixed.
  • Brush 1 teaspoon oil onto cut-side of peaches.
  • Place peaches, cut-side down, onto grill and cook until heated through, about 4 minutes. Transfer peaches to a plate.
  • Brush remaining oil onto both sides of chicken breasts and season with salt.

3 cups instant chicken-flavored stuffing mix

  • Drain peaches, reserving juice; set the peaches aside. Add enough water to juice to measure 1 cup; set aside., In a large skillet, brown chicken on both sides in oil.
