This is cooked the old-fashioned way - seasoned after cooking. This method ensures that each ingredient retains it's own individual flavor. This is the way our grandmothers cooked.

1 tablespoon olive oil
2 chicken thighs
1/2 large onion, sliced in half moons
3 garlic cloves, peeled
1/4 cup dry white wine
8 ounces canned red beans (1/2 can)
8 ounces canned cannellini (1/2 can)
8 ounces canned black beans (1/2 can)
2 cups chicken broth
1/4 lb yucca root, peeled
1 large russet potato, peeled and halved
1 celery, chopped
10 baby carrots
8 ounces diced fire-roasted tomatoes (canned)
salt & freshly ground black pepper

Steps:

  • In a large oven safe saucepan or Dutch oven, brown chicken, on both sides, over medium high heat; set aside.
  • Add onions and cook until translucent, about 5 minutes.
  • Add garlic; cook 2 minutes more.
  • Deglaze pot with wine.
  • Add beans, broth, yuca, potatoes, celery, and carrots; bring to a boil.
  • Stir in tomatoes, cover and place in 350 degree F oven for 1 hour; season to taste.

This one-pot meal is a wink and a nudge to cassoulet -- in 30 minutes.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
3/4 pound bulk Italian hot sausage
3/4 pound, 1 package, andouille sausage, cut into 1-inch lengths on an angle
1 1/2 pounds boneless, skinless chicken thighs, cut into large chunks
Salt and freshly ground black pepper
1 large onion, quartered and thinly sliced
2 carrots, shredded
3 to 4 ribs celery from the heart, thinly sliced
1 fresh bay leaf
2 (15-ounce) cans white cannellini beans
5 to 6 fresh sage leaves, thinly sliced
1 cup dry white wine
2 cups chicken stock
1/2 loaf baguette
3 tablespoons butter, melted
A handful fresh parsley sprigs, left whole
3 to 4 sprigs fresh thyme, left whole

Steps:

  • Heat a Dutch oven over medium-high heat with extra-virgin olive oil. Crumble the Italian sausage into large pieces, add to Dutch oven and begin to brown, about 2 to 3 minutes. Add the andouille and crisp at edges, 2 to 3 minutes. Remove browned sausages to a paper towel lined plate and add chicken, season with salt and pepper. Lightly brown chicken a couple of minutes on each side then add veggies and bay leaf, add more salt and pepper and cook 7 to 8 minutes more to soften veggies. Add sausages back to the pan along with the beans and sage. Deglaze with wine and stir in the stock.
  • Turn broiler on and set rack in the middle of the oven.
  • Coarsely chop the bread in food processor into large crumbs, remove blade and toss with melted butter (it melts in 15 seconds in microwave) and the parsley, thyme, salt and pepper. Cover the sausage and chicken with bread and set in oven to brown 2 to 3 minutes. Serve directly from the pot. Keep an eye out for that bay leaf and sprigs!

1 medium onion, finely chopped
4 celery ribs, finely chopped
3 carrots, peeled and finely chopped
1 tablespoon minced garlic
1/2 teaspoon salt
1 teaspoon black pepper
2 lbs cooked chicken breasts, cut into bite size pieces (about 4 cups)
2 tablespoons butter
3 (14 1/2 ounce) cans chicken broth
2 chicken bouillon cubes
1 (14 1/2 ounce) can diced tomatoes, drained
1 (14 1/2 ounce) can white beans, drained and rinsed
1/4 cup finely chopped fresh parsley
1/4 teaspoon Tabasco sauce

Steps:

  • Place vegetables, garlic, salt and pepper in crock pot. Top with the chicken pieces, butter, broth and bouillon. DO NOT STIR.
  • Cover and cook on LOW for 7 1/2 hours. Stir in drained tomatoes and beans; continue to cook 1/2 hour more.
  • Before serving, stir in parsley and Tabasco sauce.

Puff pastry topping
4 tablespoons butter
1 large onion, finely chopped
4 to 5 medium carrots, sliced diagonally into 1/4-inch-thick pieces (about 1 1/2 cups)
6 tablespoons all-purpose flour
1 cup dry white wine
3/4 teaspoon dried tarragon
Coarse salt and ground pepper
1 1/2 pounds green beans, trimmed and broken into 1-inch pieces
1 pound yellow squash, quartered lengthwise, cut crosswise into 1/2-inch pieces
3/4 cup plus 1 tablespoon heavy cream
Roasted Chicken

Steps:

  • Preheat oven to 400 degrees. Unfold 1 thawed sheet (half of a 17.3-ounce box) frozen puff pastry; roll out on a lightly floured surface until about 11 by 15 inches and 1/8 inch thick. Score with a sharp paring knife in several places. Transfer to a baking sheet; refrigerate at least 30 minutes (and up to 3 hours).
  • Meanwhile, heat butter in a large saucepan over medium-low. Add onion and carrots; cook, stirring occasionally, until softened, about 10 minutes. Add flour; cook, stirring, 2 minutes. Add wine, 2 cups water, and tarragon; season generously with salt and pepper. Stir briskly to prevent any lumps from forming.
  • Bring to a boil. Add beans and squash; reduce heat. Cover; simmer, stirring occasionally, until beans are crisp-tender, 8 to 10 minutes. Stir in 3/4 cup cream and chicken; remove from heat. Cover to keep warm.
  • Remove pastry from refrigerator; brush with remaining tablespoon cream. Bake until golden brown, 12 to 15 minutes. Transfer to a cutting board; cut into 8 pieces with a serrated knife.
  • Meanwhile, return chicken mixture to a simmer. Ladle into 8 dishes; top with pastry, and serve immediately.

1/2 cup thinly sliced sweet onion
2 cans (14-1/2 ounces each) chicken broth
2 tablespoons onion soup mix
2 teaspoons Worcestershire sauce
1 teaspoon grated lemon zest
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • Sprinkle chicken with lemon-pepper. In a large skillet, cook chicken in oil over medium heat for 4-5 minutes or until lightly browned., In a 5- or 6-qt. slow cooker, layer the green beans, potatoes, mushrooms and onion. In a small bowl, combine the remaining ingredients; pour over vegetables. Top with chicken., Cover and cook on low until vegetables are tender, 4-5 hours. Serve with a slotted spoon.

½ tbsp vegetable oil
2cm piece ginger , cut into matchsticks
1 garlic clove , chopped
½ onion , thinly sliced into half moons
1 tbsp fish sauce
½ tbsp soft brown sugar
250g skinless chicken thigh fillets, trimmed of all fat and cut in half
125ml chicken stock
50g green bean , trimmed and cut into 2.5cm lengths
1 tbsp chopped coriander
steamed rice , to serve

Steps:

  • Heat the oil in a saucepan over a medium-high heat. Add the ginger, garlic and onion, and stir-fry for about 5 mins or until lightly golden. Add the fish sauce, sugar, chicken and stock. Cover and cook over a medium heat for 15 mins.
  • For the final 3 mins of cooking, add the green beans. Remove from the heat and stir through half of the coriander. Serve with steamed rice and the remaining coriander scattered over.

8 chicken drumsticks
2 1/2 tsp. kosher salt, divided
1 tsp. freshly ground black pepper
3 Tbsp. extra-virgin olive oil
1 onion, finely chopped
1 tsp. ground cinnamon or cumin
1 tsp. ground turmeric, curry powder, or ground coriander
1/2 cup white rice (any type except for sticky rice)
1 (15-oz.) can chickpeas, white beans, black beans, or other beans, drained, rinsed
1/2 cup dried fruit, such as currants, raisins, cherries, or cranberries (optional)
1/2 tsp. crushed red pepper flakes (optional)
1/4 cup coarsely chopped tender herbs, such as cilantro, parsley, mint, basil, and/or dill

Steps:

  • Season drumsticks on all sides with 2 tsp. salt and 1 tsp. black pepper.
  • Heat oil in a large deep-sided skillet over medium-high. Add chicken and cook, turning once halfway through, until skin is golden brown, about 10 minutes total. Transfer to a plate.
  • Add onion, cinnamon, and turmeric to fat in skillet and cook over medium-high heat, stirring constantly, until fragrant, about 1 minute. Add rice and stir to coat. Add 1 1/4 cups hot water, scraping up browned bits from pan, then stir in chickpeas, dried fruit (if using), red pepper (if using), and remaining 1/2 tsp. salt. Nestle chicken back into skillet and bring liquid to a boil. Immediately reduce heat to low, cover, and cook until rice is tender and chicken is cooked through, 20-25 minutes.
  • Remove from heat and let sit 5 minutes. Fluff rice with a fork, then scatter herbs over.

1¼ kg chicken thighs and drumsticks (approx. weight, we used a 1.23kg mixed pack)
1 tbsp olive oil
2 onions, sliced
1 garlic clove, crushed
2 red chillies, deseeded and chopped
250g frozen peppers, defrosted
400g can chopped tomatoes
420g can kidney beans in chilli sauce
2 x 400g cans butter beans, drained
400ml hot chicken stock
small bunch coriander, chopped
150ml pot soured cream and crusty bread, to serve

Steps:

  • Pull the skin off the chicken and discard. Heat the oil in a large casserole dish, brown the chicken all over, then remove with a slotted spoon. Tip in the onions, garlic and chillies, then fry for 5 mins until starting to soften and turn golden.
  • Add the peppers, tomatoes, beans and hot stock. Put the chicken back on top, half-cover with a pan lid and cook for 50 mins, until the chicken is cooked through and tender.
  • Stir through the coriander and serve with soured cream and crusty bread.
