RANCH PASTA SALAD WITH BACON

Ranch Pasta Salad With Bacon image

A delightful pasta salad with the great taste of bacon, cheddar cheese and a creamy sauce made from a packet of ranch dressing. My coworkers ask me to bring this to covered luncheons often. Time does not include chill time.

Time 25m

CHICKEN BACON RANCH PASTA

Chicken Bacon Ranch Pasta image

Super easy to make and ridiculously delicious!

Categories     Entrée

Number Of Ingredients 10

10-12 oz penne pasta
2 cups cooked and chopped chicken
¾ cup cooked and crumbled bacon
¼ cup butter
¼ cup flour
2 cups heavy cream (milk would be fine, too)
1 tsp. onion powder
1 tsp. garlic salt
⅓ cup ranch dressing, I used Lite House
¾ cup shredded cheddar cheese

Steps:

  • Cook pasta according to its package's directions. Drain. I always add a little olive oil after I drain it and stir in around so the pasta noodles don't stick together or the pot.
  • Toss in cooked and chopped chicken as well as cooked and crumbled bacon into the pasta.
  • TO MAKE RANCH ALFREDO SAUCE: Melt butter in saucepan, add flour and stir to combine. Once you have your roux, add heavy cream (or milk) stir constantly until sauce thickens. Remove from heat and stir in Garlic salt, onion powder and ranch dressing until well combined.
  • Pour ranch alfredo over pasta, chicken and bacon. Stir to evenly combine.
  • Add in shredded cheddar cheese and stir to combine.
  • Pour into a casserole pan and bake at 350 degrees F for 15 minutes.

  • Make sure you have your grilled or cooked chicken done ahead of time, or feel free to grill it first. This is a great recipe for using leftover chicken! Check out our post on how to make the best chicken breasts here. You can either dice it into ½ inch cubes or feel free to shred it. I prefer diced for this recipe, but it’s up to you and what you have on hand.
  • Next cook your bacon: add bacon to a large skillet or pan and place over medium heat, cook bacon on both sides until crispy and golden brown. If the pan starts to smoke at any point, simply lower the heat. I always cook my bacon on medium low heat. Once bacon is done, blot with a paper towel to absorb excess grease, then chop into bite sized pieces and set aside.
  • While your bacon cooks, you can cook your pasta until al dente, drain and then place in a large bowl.
  • Mix together your greek yogurt ranch by combining greek yogurt and ranch dressing until smooth and creamy. Pour over the pasta and stir until well combined. Next add the chicken, chopped bacon, corn, halved cherry tomatoes, sliced red onion and avocado. Gently toss again, then taste and adjust seasonings as necessary, adding more salt and pepper or extra ranch dressing, if you’d like. Serves 6, or 4 as a larger meal. Garnish with extra corn, tomatoes, red onion, avocado and bacon.

  • Boil a salted pot of water and cook the pasta al dente according to package directions. If you haven't had time to let the cream cheese soften on the counter prior to starting the recipe, microwave it for 20-30 seconds or until it's very soft.
  • Meanwhile, cut the bacon into small pieces (kitchen shears make the job easy), and cook it over medium-high heat until crispy. Once it's done, spoon the bacon onto a paper towel lined plate. Leave the bacon fat in the pan.
  • While the bacon is cooking, cut the chicken in half lengthwise so you've got 4 thinner pieces. Season the chicken with the garlic powder and some salt & pepper (but go easy on the salt since the ranch seasoning and bacon are fairly salty).
  • Add the chicken to the skillet and cook it in the remaining bacon grease for 5-6 minutes/side or until golden and cooked through. Transfer cooked chicken to a plate and keep warm (cover loosely with foil).
