Flakes of coconut give my pudding it's snow-like texture- and plenty of taste besides! The crimson currant-raspberry sauce is delicious and pretty, too.

- In a small saucepan, sprinkle gelatin over 1/4 cup milk; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved., In a large saucepan, combine the sugar, salt and remaining milk; heat just until sugar is dissolved. Remove from the heat; stir in gelatin mixture and vanilla. Refrigerate until partially set. Fold in coconut and whipped cream. Pour into dessert dishes; refrigerate for at least 2 hours., Meanwhile, strain raspberries to remove seeds. In a small saucepan, combine the cornstarch, raspberry pulp and currant jelly; stir until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Chill for at least 1 hour. Serve with pudding.

- In a small bowl, sprinkle unflavored gelatin over cold water; let stand for 1 minute. In a small saucepan, combine half-and-half and sugar. Cook and stir just until mixture comes to a simmer. FRESH RASPBERRY SAUCE

- Sprinkle gelatin over the 1/3 cup water in a small cup; let stand 5 minutes to soften.
- Pour 2 cups cream into small heavy saucepan. Bring to boiling. Remove from heat; add gelatin; stir to dissolve. Stir in 1-1/3 cups sugar. Transfer to medium-size bowl. Cool.
- Add sour cream, cream cheese and vanilla to cooled cream mixture; beat until smooth. Pour into a service bowl or 12 individual dessert dishes. Refrigerate until firm, about 2 hours.
- Prepare Red Raspberry Sauce: Place raspberries in blender. Combine cornstarch with 2/3 cup water in small bowl. Stir in the sugar. Add to blender. Whirl until puréed. Strain into small saucepan. Heat over low heat, stirring constrantly, until slightly thickened. Add liqueur (or red wine or orange juice). Chill.
- To serve, spoon 1 tablespoon of the Red Raspberry sauce over each serving.

SNOW PUDDING (LEMON MOUSSE) WITH RASPBERRY SAUCE

- MOUSSE In a large bowl sprinkle the gelatin over 1/4 c cold water and let it soften for 10 minutes. Add 1 c boiling water and 1/2 c of the sugar and stir the mixture until the sugar is dissolved. Stir in the lemon juice and rind and chill the mixture for 1 hours, or until it just begins to set. With an electric mixer beat the mixture until it is light an frothy. In another large bowl beat the egg whites with a pinch of salt until they are frothy, add the cream of tartar, and beat the whites until they hold soft peaks. Beat in the remaining 1/4 c sugar, a little at a time, and beat the meringue until it holds stiff glossy peaks. Stir the meringue gnetly into the lemon mixture and chill the mouse, covered, for 1 hour, or until it is set. SAUCE In a food processor puree the raspberries with the sugar and the cream and force the mixture through a sieve into a bowl. SERVE Divide the sauce among 6 chilled plates, with a soup spoon or an oval ice-cream scoop dipped in water spoon out the mousse in egg shapes, arranging 3 scoops on each plate, and sprinkle each dessert with 1 T of the almonds.

- In a small saucepan, mix sugar, cornstarch and salt; stir in juices until smooth. Add raspberries; bring to a boil, stirring constantly. Cook and stir 1-2 minutes or until thickened. - Combine and press in 9x12"pan. Bake 10 minutes at 300*.
- Filling:.
- Combine jello and boiling water per jello box directions and instead of adding cold water add lemon juice; set aside after dissolved to cool in the refrigerator.
- When it starts to thicken, beat until fluffy.
- In another bowl beat sugar, vanilla and cream cheese. Beat into thickened jello.

- Cut a piece of cheesecloth into four 6-inch squares. Dampen and wring out lightly. Press one square into each of four perforated heart-shaped ceramic molds and set aside.
- In the bowl of an electric mixer, whip the mascarpone cheese, 1/4 cup of the cream, the vanilla, the 1 tablespoon lemon juice and the Chambord until thoroughly blended. Refrigerate.
- In a small bowl, whip the remaining 1 cup cream and the confectioners' sugar until the cream forms stiff peaks. With a rubber spatula, fold the whipped cream into the chilled cheese mixture in three batches. Spoon the finished mixture into the prepared molds and fold the edges of the cheesecloth over the tops. Lightly tap at the bottoms of the molds on the counter to remove and air spaces between the mixture and the molds. Refrigerate on a tray or baking sheet a minimum of 2 to 3 hours.
- Meanwhile, make raspberry sauce:
- In a blender or food processor, purée the raspberries, granulated sugar and 1 teaspoon lemon juice. Taste the sauce for sweetness and adjust the sugar or lemon juice as needed. Strain and refrigerate.
- Assemble and serve:
- Unfold the cheesecloth and drape it over the sides of the molds. Invert each mold onto a serving plate. While pressing down on the corners of the cheesecloth carefully lift off the mold. Smooth the top with the back of a spoon and remove the cheesecloth slowly.
- Spoon raspberry sauce onto the plate around the heart and garnish with fresh berries and mint leaves.

RED RASPBERRY SAUCE
This simple, three-ingredient sauce is very versatile. Right now I am enjoying it with freshly baked angel food cake, but I would love to try it with grilled peaches, and also with something chocolatey! I also think it would be nice with chicken or maybe a wheel of warm brie. It is a chunky sauce, with the texture determined by how much you crush the berries when you mix it. I more or less mashed mine, but I think leaving at least some of the berries whole would make a more elegant sauce. Add in a bit of your favorite liqueor or extract to vary the possibilities even more (I tried it with some Triple Sec - very good!). This recipe originates from The Complete Cooking Light Cookbook, and it makes approximately 1 1/2 cups.
