  • Add chicken to the slow cooker and sprinkle with Ranch seasoning mix. Place a block of cream cheese on top of the chicken. Cover and cook on high for 2.5-3 hours or low for about 4-5 hours.
  • Meanwhile, bake potatoes using any method you like (oven or microwave). Set aside until cool enough to handle. (Note - if baking, do this about an hour before you are planning to serve, microwaving will take about 15 minutes)
  • When the chicken is done cooking, remove the lid and shred the chicken right in the pot using two forks. Stir in the ¾ of the chopped bacon and 1 cup of shredded cheddar.
  • With a sharp knife, make slit lengthwise across the top of each potato, careful not to cut the potato completely in half. Squeeze the ends gently to open the potatoes as much as possible without it falling all the way open. Season insides with salt and pepper and fluff the flesh gently with a fork. Then stuff with the chicken mixture.

  • Preheat oven to 400° and line two sheet trays with parchment paper. On one, place the potatoes. Rub with a little oil and sprinkle with salt if desired. One the other, place the chicken tenders. Sprinkle evenly with the salt. Place them in the oven at the same time. Remove the chicken tenders after 15 minutes and continues baking the potatoes 25-35 more minutes, for a total of 40-50 minutes. Check to see if they are fork tender.
  • While the chicken and potatoes cook, make the ranch. In a small bowl, combine the mayo, chives, dill, parsley, garlic oil and pepper. Stir until well mixed. (If you don't need this low FODMAP, feel free to use your favorite ranch dressing.)
  • After removing the chicken from the oven, chop and place in a large bowl. Add in the ranch and 1/3 of the bacon. Stir to combine.
  • Once potatoes are done, remove them from the oven and let cook about 10 minutes so they are easier to handle. Cut in half lengthwise and scoop out the inside, leaving 1/4 inch of potato. The easiest way to do this is with a cookie scoop. Brush the potatoes lightly with avocado oil and place cut side down on the sheet tray. Bake for 7 minutes, flip over and bake 5 more minutes.

  • Brown chicken: Set instant pot to "sauté" and melt one tablespoon butter in the inner pot. Rub chicken thighs with Ranch seasoning mix, then add the chicken thighs to the instant pot in batches and cook on both sides until browned. Remove and set aside on a plate.
  • Start sauce: Melt one extra tablespoon of butter in the instant pot, then brown the bacon and garlic. Add chicken stock, scraping the bottom of the pot to scratch away any browned bits (do this properly or you may trigger the burn warning). Switch off the instant pot.
  • Pressure cook: Place chicken thighs back into the pot (it's fine to stack them), then place the potatoes on top. Close the lid and set the valve to the "sealing" position. Choose "pressure cook" (or "manual" on some models) and set the timer to 10 minutes to start the cooking process.
  • Release pressure: Once the timer is up, do a 10 minute natural pressure release (just switch the instant pot off and leave it alone). Then release any remaining pressure manually according to manufacturer's instructions.
