AROMATIC STICKY RICE



Aromatic Sticky Rice image

I made this in a cooking class at Leith's in London. It's a very simple rice that always turns out like the rice served in Thai restaurants in London.

225 g thai jasmine rice
425 ml water
1 stalk lemongrass, bruised
1 whole red chile
2 1/2 cm fresh gingerroot, peeled and bruised
1 clove garlic, peeled

Steps:

  • Put all the ingredients into a large saucepan and let stand for five minutes.
  • Cover the pan and bring to a boil, then reduce the heat and cook over a low heat for 10 minutes until the water is absorbed.
  • Remove the pan from the heat and allow to stand covered for five further minutes.
  • Remove the flavourings, if wished, and pile into a serving dish.
  • Serve immediately, while very hot.

Creamy coconut combined with a little bite from red pepper flakes and ginger, create a delicious rice dish to accompany a wide range of entrees.

1 cup jasmine rice or 1 cup long grain rice
1 (14 ounce) can coconut milk
1/4 cup water
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon crushed red pepper flakes
1/8 teaspoon turmeric
1 teaspoon finely chopped fresh ginger
finely chopped crystallized ginger (optional)
sliced almonds (optional)

Steps:

  • Combine all ingredients in a saucepan, except the crystallized ginger and sliced almonds.
  • Stir well to combine.
  • Cook over medium high heat, stirring until mixture comes to a low boil.
  • Immediately reduce heat to low.
  • Cover and cook for about 18 minutes.
  • Fluff with a fork.
  • The cover, and let sit for 5 more minutes.
  • Garnish the finished rice with the candied ginger and the sliced almonds.

THAI RED DUCK WITH STICKY PINEAPPLE RICE

Marinate duck breasts with red curry paste and lime, then serve with coconut rice, peas and beansprouts for a healthy weeknight dinner

2 duck breasts , skin removed and discarded
1 tbsp Thai red curry paste
zest and juice 1 lime , plus extra wedges to serve
140g jasmine rice
125ml light coconut milk , from a can
140g frozen peas
50g beansprouts
½ red onion , diced
100g fresh pineapple , cubed
1 red chilli , deseeded and finely chopped
¼ small pack coriander , stalks finely chopped, leaves roughly chopped

Steps:

  • Sit a duck breast between 2 sheets of cling film on a chopping board. Use a rolling pin to bash the duck until it is 0.5cm thick. Repeat with the other breast, then put them both in a dish. Mix the curry paste with the lime zest and juice, and rub all over the duck. Leave to marinate at room temperature for 20 mins.
  • Meanwhile, tip the rice into a small saucepan with some salt. Pour over the coconut milk with 150ml water. Bring to a simmer, then cover the pan, turn the heat down low and cook for 5 more mins. Stir in the peas, then cover, turn the heat off and leave for another 10 mins. Check the rice - all the liquid should be absorbed and the rice cooked through. Boil the kettle, put the beansprouts and red onion in a colander and pour over a kettleful of boiling water. Stir the beansprouts and onion into the rice with the pineapple, chilli and coriander stalks, and some more salt if it needs it, and put the lid back on to keep warm.
  • Heat a griddle pan and cook the duck for 1-2 mins each side or until cooked to your liking. Slice the duck, stir most of the coriander leaves through the rice with a fork to fluff up, and serve alongside the duck, scattered with the remaining coriander.

  • Perfect Thai Jasmine Rice Every Time. Native to Thailand, jasmine rice gets its name from the fragrant jasmine flower. This long-grain rice has a somewhat buttery aroma, reminiscent of popcorn.
  • Measure the Rice. Start with good-quality Thai jasmine rice. You will need about 2 cups of uncooked jasmine rice to make enough to serve four to five people.
  • Add Water and Salt. Add 2 1/2 cups water and 1/8 teaspoon salt to your rice pot. This rice can also be made without salt if you are watching your salt intake.
  • Bring to a Boil. Bring rice and water to a light boil. You should see bubbles forming on the surface of the water. If you place your ear close to the pot, you will hear it gently boiling.
  • Cover, Reduce Heat, and Simmer. Cover the pot tightly with a lid and reduce the heat to low. Let rice simmer while covered for 12 to 15 minutes. Continue to 6 of 8 below.
  • Check the Jasmine Rice. After 10 minutes, remove the lid. If most of the water has been absorbed by the rice, use a spoon to make a well in the middle, allowing you to see to the bottom of the pot.
  • Replace the Lid and Turn off the Heat. When all (or most) of the water has been absorbed, replace the lid and switch off the heat. Allow the pot to sit undisturbed for another 10 to 15 minutes, or until you're ready to eat.
  • Fluff the Jasmine Rice and Serve. When ready to eat, remove the lid and gently fluff rice with chopsticks or a fork. Transfer the rice to a serving bowl.
