2 packages (8.8 ounces each) ready-to-serve long grain and wild rice
1/4 cup butter, cubed
2 celery ribs, chopped
1 medium onion, chopped
3 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
1 teaspoon seafood seasoning
3/4 teaspoon salt
1/2 teaspoon hot pepper sauce
1/4 teaspoon pepper
1-1/2 pounds uncooked shrimp (31-40 per pound), peeled and deveined
2 cans (6 ounces each) lump crabmeat, drained
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350°. Spread rice into a greased 13x9-in. baking dish. In a large skillet, heat butter over medium-high heat. Add celery and onion; cook and stir until tender, 6-8 minutes. Stir in flour until blended; gradually whisk in cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes., Stir in seafood seasoning, salt, pepper sauce and pepper. Fold in shrimp and crab. Spoon over rice. Sprinkle with cheese. Bake, covered, until shrimp turn pink, 40-45 minutes. Let stand 5 minutes. To Make Ahead: Can be made a day in advance. Prepare recipe as directed, cooling sauce slightly before adding shrimp and crab. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake as directed.

1 pound lump crabmeat, picked clean
1/2 butter crackers, crushed (recommended: Ritz)
3 scallions, tops and whites finely chopped
1/2 red bell pepper, finely chopped
1/4 cup mayonnaise
1 egg, beaten
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1/2 lemon, juiced
1/4 teaspoon garlic powder
1 teaspoon table salt
Pinch cayenne pepper
16 large shrimp, peeled
16 slices bacon
2 lightly packed cups fresh basil
1 cup walnuts
1 cup freshly grated Parmesan
1 tablespoon minced fresh garlic
1 cup olive oil
1/4 cup fresh lemon juice
1 cup all-purpose flour
8 tablespoons butter
1 tablespoon olive oil
2 tablespoons butter
1 teaspoon minced onion
1 teaspoon minced fresh garlic
1/4 cup dry white wine
1 cup heavy cream
3 tablespoons pesto (see recipe above)
1 teaspoon roux (see recipe above)

Steps:

  • Preheat the oven for 350 degrees F.
  • To make the crab stuffing: Combine the crab, crackers, scallions, pepper, mayonnaise, egg, Worcestershire sauce, mustard, lemon, and garlic. Season the stuffing with salt and pepper and mix well. Set the stuffing aside.
  • Using a paring knife, slice the shrimp down the backs and remove and discard the 'veins'. Deepen the incisions if necessary, then spoon stuffing into each shrimp. Wrap each stuffed shrimp with bacon and arrange them in a large baking dish.
  • To make the pesto: pulse the basil, walnuts, cheese, and garlic together in a food processor (or grind in a mortar) then gradually incorporate the oil. Adjust the seasoning with lemon juice and set aside.
  • To make the roux: Heat the butter in a saucepan over medium heat. Add the flour, and cook, stirring, until the mixture, although still pale, looks dryer and no longer smells raw, about 5 minutes. Remove the roux from the heat.
  • Transfer the shrimp to the oven and roast until the bacon begins to render and brown, about 10 minutes. Flip the shrimp and roast on the second side until the shrimp are opaque, 5 to 10 minutes more.
  • Meanwhile, make the lemon basil cream: Heat the oil and butter in a small skillet over medium heat. Add the onions and garlic and cook, stirring frequently, until the mixture is fragrant and golden, about 7 minutes. Add the wine and simmer for 5 minutes then add the cream. Simmer until the sauce has reduced by half. Add the lemon juice and pesto, then whisk in the roux a tablespoon at a time (use just enough to thicken the sauce). Keep the sauce warm over very low heat.
  • Arrange the shrimp on 4 warm plates and serve with lemon basil cream sauce on the side.

1/4 cup finely chopped fresh parsley leaves
1 tablespoon minced garlic
1/4 cup mayonnaise

Steps:

  • Preheat the oven to 375 degrees F. Butter a large baking dish and set aside.
  • Place the crabmeat in a large bowl and season with the Essence. Cover and refrigerate until ready to use.
  • In a large skillet, melt 4 tablespoons butter over medium-high heat. Add the onions, celery, and bell peppers and cook, stirring, until softened, about 4 minutes. Add the parsley and the garlic, and cook, stirring, for 1 minute. Remove from heat and let cool.
  • Add the cooled vegetables to the crabmeat and toss to combine. Add the mayonnaise, egg, lemon juice, Worcestershire and hot sauce and stir gently with a large wooden spoon. Add 1 cup of the cracker crumbs, the salt, and pepper, and stir gently, being careful not to break up the crabmeat.
  • Mound about 2 tablespoons of the crabmeat stuffing into each shrimp, press gently to close, and place, stuffed sides up, in the prepared baking dish. Sprinkle the remaining 1/2 cup of the flaky, buttery cracker crumbs over the stuffed shrimp and drizzle with the remaining melted butter. Bake until golden, about 20 minutes.
  • While the shrimp are baking, heat a large saute pan over medium-high heat. When the pan is hot, add the olive oil. Add the garlic and crushed red pepper and cook, stirring continuously, for 1 minute. Add the kale and saute until the kale is just wilted, about 3 to 5 minutes. Season with salt and pepper.
  • Place the kale on 4 plates. Remove the shrimp from the oven and divide among plates, on top of the kale. Garnish with parsley and lemon wedges. Serve immediately.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

Wife and I love Tilapia, but I'm not a fan of Crab Imperial so I decided to make the imperial with shrimp. You can substitute crab for the shrimp and use this recipe too.

2 tilapia fillets
1/2 lb shrimp
1/2 red bell pepper
1/2 cup mayonnaise
1/4 cup breadcrumbs
1/4 teaspoon lemon juice
1/4 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon Old Bay Seasoning
1 teaspoon Dijon mustard
1 tablespoon butter
2 tablespoons parmesan cheese

Steps:

  • Dice red pepper.
  • Peel, devein and dice shrimp.
  • Heat butter in nonstick skillet, add red pepper and cook for 3 minutes. Add shrimp, salt and pepper to taste and cook until shrimp are just fully cooked. Transfer to a bowl and allow to cool a few minutes.
  • Butter a 9 X 13 casserole dish. Season fish on both sides with salt and pepper and place in dish.
  • Add remaining ingredients except parmesan cheese to the pepper and shrimp mixture and mix well.
  • Spread mixture equally on to the top of both filet's making sure the thickness of the topping remains equal. Sprinkle with parmesan Cheese.
  • Heat oven to 350 degrees. Cover casserole dish and bake for 18 minutes covered.
  • Remove cover, place under broiler and broil on low for 5 minutes. Watch to make sure it doesn't burn.
  • Switch oven back to bake at 350 degrees for another 5 minutes.
  • Remove from oven, let rest 2 or 3 minutes and serve.

1 (6 1/2 ounce) can crabmeat, drained
1/4 cup seafood cocktail sauce
1/4 cup finely-chopped red pepper
2 tablespoons seasoned dry bread crumbs
3 drops red pepper sauce
1/4 teaspoon white pepper
paprika

Steps:

  • Rinse shrimp; pat dry; butterfly the shrimp.
  • Combine the rest of the ingredients.
  • Spoon 1 tbsp of the mixture into the shrimp.
  • Lay in a greased baking dish.
  • Sprinkle with paprika.
  • Bake at 375 degrees F.
  • for 12 to 15 minutes.
  • Serve with additional cocktail sauce.

How to make Crab-Topped Shrimp

12 large shrimp, fresh or frozen
2 tablespoon(s) green onion, sliced
1 tablespoon(s) butter
1 teaspoon(s) lemon juice
1 dash(es) hot pepper sauce
5.5 ounce(s) canned crab meat, drained, flaked, cartilage removed
2 tablespoon(s) fine dried bread crumbs
- lemon wedges

Steps:

  • Thaw large shrimp, if fozen.
  • To shell fresh or thawed shrimp, open each shell lengthwise down the body.
  • Hold the shrimp in one hand and carefully peel back the shell starting with the head end.
  • Gently pull on the tail portion of the shell to remove the entire shell.
  • Butterfly shrimp by cutting down the back almost but not all the way through; remove vein.
  • Repeat with remaining shrimp and set aside.
  • In a small nonmetal bowl, micro-cook sliced green onion and the butter or margarine, uncovered, on 100% power for 1 1/2 to 2 minutes or until the green onion is tender.
  • Stir in lemon juice and bottled hot pepper sauce.
  • Toss with the flaked crab meat and fine dry bread crumbs.
  • Spread shrimp open and place, cut side up, in two 10-ounce oval casseroles.
  • Cover with vented clear plastic wrap.
  • Micro-cook, covered, on 100% power for 1 1/2 minutes, rotating the casseroles a half-turn once.
  • Drain off liquid and rearrange shrimp, placing the least-cooked portions to the outside of the casseroles.
  • Spoon crab mixture over shrimp.
  • Micro-cook, covered, on 100% power about 2 1/2 minutes or until shrimp are done and crab mixture is heated through, rotating the casseroles a half-turn once.
  • Serve with lemon wedges.

20 large shrimp, peeled but leave the tails on (extra large or jumbo shrimp)
12 slices bacon, halved crosswise
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon minced garlic
3 tablespoons minced yellow onions
1/4 cup white wine
2 cups whipping cream
1 chicken bouillon cubes, crushed or 1 teaspoon chicken bouillon granule
3 tablespoons basil pesto (homemade or store-bought)

Steps:

  • FOR THE SHRIMP:.
  • Preheat the oven to 350°F.
  • Melt the butter in a large skillet over medium heat and sauté the green onions, green pepper, and garlic powder until the pepper is limp. Place in a mixing bowl and add the cream, mustard, and cayenne pepper. Mix well.
  • Add the cracker crumbs, mayonnaise, egg, parsley, and lemon juice. Mix well. Gently fold in the crabmeat.
  • Split the shrimp down the bottom center to the tail, being careful not to cut through the back. Stuff each shrimp with a small mound of the crabmeat mixture. Wrap the shrimp in bacon and secure with a toothpick. Place the shrimp on a baking sheet and cook in the top third of the oven for 15-20 minutes, until the bacon is cooked through. Turn the oven to broil and broil for 4 minutes to crisp the bacon.
  • WHILE THE SHRIMP COOKS: BASIL CREAM SAUCE.
  • Heat the butter and olive oil in a skillet over medium heat. Add the garlic and onion and cook until light brown, about 3 minutes. Add the wine and reduce the sauce by half. Add the cream and bouillon and reduce by half again. Add the pesto, bring to a simmer, and heat until slightly thickened, about 2-3 minutes.
  • To serve, arrange 4 shrimp on a plate and drizzle with Basil Sauce.

  • Season the filets on both sides with salt and pepper. Let sit at room temperature for 15 minutes. Preheat the oven to 450 F Degrees.
  • In a medium cast iron skillet or heavy duty skillet, turn heat to medium high heat (closer to high heat). Add the olive oil. Place the filets on one side in the skillet and sizzle on both sides for 3 minutes. The steaks should have a crust and browned on each side. Once cooked on both sides, add to the oven and cook for 10 minutes.
  • Once removed from the oven, immediately add the butter spring of rosemary, and garlic cloves to the pan. Once the butter has melted, begin to baste the filets with spoons with the juice, butter, and garlic. Do this for about 3 minutes. Cover with aluminum foil and set aside.
  • To make the sauce, take a separate large shallow pan and turn on medium heat. Add the butter and allow to melt. One melted and bubbling, add the garlic and cook until fragrant.
