2 cups cooked skinless chicken breast, shredded or cubed
1 cup chopped kale, packed (small pieces works best)
½ cup shredded red cabbage
½ sweet bell pepper, diced
2/3 cup mango*, diced (may use frozen, thawed)
1 large avocado, cubed
2-3 green onions (white and part of greens), chopped
3 Tbsp. cilantro, chopped
3 Tbsp. extra virgin olive oil
2 Tbsp. champagne vinegar (may substitute red wine, white wine or apple cider vinegar)
1 Tbsp. lime juice
1 Tbsp. lemon juice
1 tsp. organic honey (omit for Whole30)
Sea salt & pepper to taste
Black sesame seeds for garnishing, optional

Steps:

  • Whisk together the olive oil, vinegar, lime juice, lemon juice, honey, salt & pepper. Set aside.
  • In a medium bowl, combine the chicken, kale, red cabbage, bell peppers, mango, avocado, green onions and cilantro. Pour dressing over salad and toss gently to combine.
  • Let salad set for 5-10 minutes before serving to allow kale leaves to soften. Divide among 4 plates.

1/4 cup water
1/3 cup lime juice
1/2 cup chili-garlic sauce (such as Green Rooster sauce)
4 cups cooked chicken breasts, cooled and shredded
2 medium mangoes, peeled, seeded and diced
2 avocados, peeled, pitted and diced
1 (10 ounce) bag spring greens (baby salad greens blend)

Steps:

  • To make dressing, combine brown sugar and water in a small saucepan. Bring to a boil, then remove from heat and transfer mixture to a heat-resistant, non-reactive bowl (such as stainless steel or pre-warmed Pyrex). Add lime juice and chili-garlic sauce and stir to combine. Set aside to cool to room temperature.
  • Meanwhile, prepare salad ingredients. Gently toss chicken, mangoes, and avocados together in a bowl until well-mixed.
  • Arrange salad mix on individual plates. Top with equal amounts of chicken mixture. Stir dressing to combine again, and drizzle dressing over salad.

½ cup chili garlic sauce

Steps:

  • In a saucepan over medium-high heat, stir together the brown sugar and water. Bring to a boil, then pour into a medium bowl. Stir in the garlic chili sauce and lime juice. Set the dressing aside.

4 boneless chicken breast halves
salt, to taste
pepper, to taste
1 teaspoon salt

1 garlic clove, pressed
2 tablespoons balsamic vinegar
1 shallot, minced
1/2 cup sun-dried tomato packed in oil, drained and chopped

  • Heat 1 TBS olive oil in a large skillet over medium-high heat.

2 Tbspn olive oil
2 Tbspn lemon juice
1 teaspoon garlic, crushed
1/4 teaspoon salt
1/4 teaspoon black pepper
2 large chicken breasts (700gm/24oz)
1 Tbspn olive oil for cooking
6 cups cos lettuce
1 cup cherry tomatoes, chopped
1 cup cucumber, diced
1/2 red onion, thinly sliced
1/2 red bell pepper/capsicum thinly sliced
1 avocado, diced
3/4 mango, peeled and diced (you will need 1 whole mango, leave 1/4 cup aside for dressing)
3 Tbspn fresh coriander/cilantro leaves, chopped
1 small red chili, chopped *optional
1/4 cup mango, diced
1/3 cup olive oil
3 Tbspn lemon juice
1/4 cup cilantro/coriander leaves
1/4 tspn salt
1/4 tspn black pepper

Steps:

  • Place the ingredients for the marinade in a bowl and mix together, place the chicken breasts in the bowl and coat evenly in the marinade. Cover and leave for 30 min - overnight.
  • Preheat oven to 180C/355F.
  • Melt 1 Tbspn coconut oil or olive oil in a cast iron pan on a high heat. Once the pan is very hot turn the pan down to a medium high heat. Cook the chicken breasts for about 3 minutes on each side so that they are are golden brown on the outside.
  • Remove the chicken from the pan and place in an oven proof dish, poor over any remaining marinade. Cover the dish with foil and place chicken in the oven for 20 minutes or until cooked. To test, insert a skewer or knife and ensure that the juices run clear.
  • While the chicken is cooking assemble the ingredients for the salad into bowls.
  • Then prepare the dressing. Place all of the ingredients in a high speed blender. Blitz until you have a smooth liquid. Taste and add more salt and pepper if desired.
  • Once you have removed the chicken from the oven, leave to cool for 5 minutes then slice into strips.
  • Place the chicken on top of the salad and drizzle with the mango salad dressing.

  • Heat a grill over medium-high heat. Drizzle the olive oil over the chicken breasts and sprinkle with the chili powder and salt to taste.

200 g avocado flesh (cubed)
1 Red chilli (de-seeded and finely chopped)
1 juice of lime
1 handful fresh coriander leaves (roughly chopped)

  • Finely chop red onion and place in a large bowl
  • Cube and remove the skin of one fresh mango and add to the bowl
