RESTAURANT STYLE SALSA
Recipe video above. Just like what you get at your favourite restaurant and those jars sold alongside corn chips at the grocery store.... but it's better, healthier and cheaper! The fresh flavour is so, so good. Make it chunkier or smoother, to your taste.

Steps:
- Place onion and jalapeno in the food processor first, then add remaining ingredients (start with 1/2 tbsp lime juice).
- Blitz to desired consistency - I like mine pretty smooth because you get better flavour out of the onion etc.
- Taste test with corn chip for salt and lime. Adjust if necessary.
- Refrigerate 1 hour before serving with corn chips, or other dippers (see in post for suggestions).
HOT SALSA DIP
Hot Salsa Dip - only 4 ingredients! This stuff is AMAZING!!!! Cream cheese, taco seasoning, cheddar cheese and salsa. There are never any leftovers when I take this to a party! Make ahead of time and bake when ready to serve. Easy and delicious Mexican dip!!

- Preheat oven to 350ºF.
- Combine cream cheese, 1 cup of cheese and seasoning. Spread into bottom of a 1-quart baking dish. Top cream cheese mixture with salsa. Sprinkle remaining 3/4 cup cheese on top of salsa.
- Bake for 15-20 minutes.
SO-SIMPLE SALSA DIP
Salsa's great served alone with chips, but mixing and heating it with cream cheese makes a wonderfully warm dip!

- In 1-quart saucepan, heat cream cheese and salsa over low heat about 5 minutes, stirring occasionally, until cream cheese is melted.

CHEDDAR SALSA DIP (HOT OR COLD)
Tis the season for dips and spreads. This is cheesy, tasty and easy to make. Originally from the Prodigy cooking site, circa 1/93; and it's still good after all these years. There are a lot of excellent Prodigy recipes in my "Olde" file. Way back then, I read Prodigy on a black screen with gold letters, called it my Steeler computer! Ahhhh, the good old days. Add 20-25 minutes to time if you want to serve this hot.

- In a bowl, with an electric mixer, at medium speed, beat cheese until creamy. Blend in remaining ingredients.
- Cover and chill for at least 2 hours before serving. Serve as a dip.
- Cooking Tip: FOR WARM: Prepare as above, spoon cheese mixture into a 1-quart casserole. Bake at 375 for 20-25 minutes or until browned and bubbly. Let stand 5 minutes.

- In a medium-size mixing bowl, combine tomatoes, onion, cilantro, garlic, lime juice, tomatillo, and salt to taste. Mix well. Add 1/2 of the jalapeno pepper, and taste. If you desire your salsa with more of a kick, add the remaining 1/2 jalapeno. If you are satisfied with the salsa's heat, do not add the remaining jalapeno pepper. Cover the salsa, and chill until ready to serve.
