½ cup sugar
¾ cup dark brown sugar, packed
1 teaspoon salt
½ cup refined coconut oil, melted
¼ cup non-dairy milk
1 teaspoon vanilla extract
1 ½ cups flour
½ teaspoon baking soda
4 oz vegan semi-sweet chocolate, chunks
4 oz vegan dark chocolate, chunks

Steps:

  • In a large bowl, whisk together the sugar, brown sugar, salt, and coconut oil until combined.
  • Whisk in non-dairy milk and vanilla, until all sugar has dissolved and the batter is smooth.
  • Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix.
  • Fold in the chocolate chunks evenly.
  • Chill the dough for at least 30 minutes.
  • Preheat oven to 350°F (180°C).
  • Scoop the dough with an ice cream scoop onto a parchment paper-lined baking sheet. Be sure to leave at least 2 inches of space between cookies and the edges of the pan so cookies can spread evenly.
  • Bake for 12-15 minutes, or until cookies just begin to brown.

½ cup light brown sugar, packed

1 large egg
1 teaspoon vanilla extract
1 ¼ cups crispy rice cereal
½ cup semi-sweet chocolate chips
½ cup butterscotch chips
1 cup old-fashioned oat
½ teaspoon flakey sea salt, for sprinkling

Steps:

  • Preheat the oven to 375˚F (190˚C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, salt, baking powder, and baking soda.

¼ teaspoon salt
¼ cup melted coconut oil
1 tablespoon rose water
¼ cup coconut sugar
¼ cup pure maple syrup
2 flax-eggs, (2 tablespoons ground flax + 6 tbsp water, whisked together, set for 15 minutes)
2 tablespoons dried rose petal
1 ½ cups vegan white chocolate chips

Steps:

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper and set it aside.
  • Whisk together all of the dry ingredients in a mixing bowl: oat flour, baking soda, baking powder, and salt.
  • In a separate, large mixing bowl, combine the wet ingredients: coconut oil, coconut sugar, maple syrup, flax eggs, and rose water and mix until thoroughly combined.
  • Combine the dry and wet ingredients in a mixing bowl. Whisk until everything is well mixed. Stir in the chocolate chips and rose petals.
  • Cover the cookie dough bowl. Allow to remain at room temperature for 10 minutes to allow the dry mixture to absorb the liquid mixture.
  • Scoop about 2 teaspoons of cookie dough onto the baking sheet lined with parchment paper. Use your palm to softly flatten the cookies into a circular disc, they will not spread while baking. Chocolate chips can be pressed into the tops of the cookies if desired.
  • Bake for 8-10 minutes, or until lightly golden brown and set. With a flat, heatproof spatula, remove the cookies from the baking sheet and set them on a cooling rack to cool. Allow to thoroughly cool and serve.

½ teaspoon cornstarch, corn flour
½ teaspoon kosher salt
10 tablespoons butter, melted and cooled
⅔ cup light brown sugar
¼ cup granulated sugar
1 large egg, @ room temperature
1 teaspoon pure vanilla extract
¼ teaspoon almond extract
½ cup whole almonds, (lightly toasted, and chopped)
½ cup almond, slivered - lightly toasted, and roughly chopped
⅔ cup white chocolate chip, white chocolate chunks, or white baking chips

Steps:

  • Place butter in a heatproof bowl and melt in the microwave on the lowest heat setting in 10-second increments until completely melted; set aside to cool completely.
  • In another bowl, add the flour, baking soda, cornstarch (corn flour), and salt, and mix until well combined; set aside.
  • Once the butter has cooled down, add the brown sugar, granulated sugar, vanilla extract, and almond extract; whisk until the mixture has thickened, about 1-2 minutes. Next add the egg and mix until smooth and homogenous.
  • Add the flour mixture to the butter mixture and mix until well combined and a dough forms; add the chopped almonds and the white chocolate chips and mix until thoroughly distributed.
  • Cover the dough with plastic wrap, or foil and place in the fridge for AT LEAST 30 minutes.
  • Preheat the oven to 350℉ (175 C), and line two cookie sheets with parchment paper, or silicone place mats.
  • Portion the dough into 2 tablespoons/1 oz. balls and place on a lined baking sheet.
  • Bake cookies for 10-12 minutes, rotating cookie sheet halfway through baking time to ensure even browning. Let the cookies sit on the tray for minutes, then transfer to a cooling rack, store in an airtight container
