Provided by Good Food team

Categories     Dinner, Lunch, Main course, Supper

Time 30m

Number Of Ingredients 7

2 chicken breasts , skin on
1 tbsp olive oil
200g new potato , thinly sliced
500ml chicken stock
200g pack of mixed spring vegetables (broccoli, peas, broad beans and sliced courgette)
2 tbsp crème fraîche
handful tarragon leaves, roughly chopped

Steps:

  • Fry the chicken in the oil in a wide pan for 5 mins on each side. Throw in the potatoes and stir to coat. Pour over the chicken stock, cover and simmer for 10 mins until the potatoes are almost cooked through.
  • Remove the lid and turn the heat to high. Boil the stock down until it just coats the bottom of the pan. Scatter the vegetables into the pan, cover again and cook the veg for about 3 mins.
  • Stir in the crème fraîche to make a creamy sauce, season with pepper and salt, if you want, then add the tarragon. Serve straight from the pan.

ROAST CHICKEN WITH VEGETABLES

Roast Chicken with Vegetables image

New cooks are intimidated by the idea of roasting a chicken, but nothing could be simpler. If you roast the chicken with some vegetables in the same pan for about an hour, you will have a moist, golden bird and savory accompaniments - all ready to eat at the same time. While they cook, you can set the table, watch the news, maybe make a dessert.

Provided by Food Network

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 6

8 whole carrots
1 teaspoon black pepper
2 medium-size yellow onions 4 sprigs fresh or 1 tablespoon dried rosemary
8 small white or red potatoes (about 1H inches in diameter)
1 whole chicken, about 3 1/2 pounds
3 teaspoons salt

Steps:

  • Preheat oven to 425 degrees F.
  • Preparing the Vegetables Peel the carrots and cut them crosswise into 1 1/2-inch-long pieces. Cut the thicker pieces in half lengthwise as well. Peel each onion and cut into quarters. Wash the potatoes under cold water to get rid of any dirt. Leave them whole and unpeeled. Scatter the carrots, onions, and potatoes on the bottom of a 9-by-13-inch baking or roasting pan. Sprinkle 1 1/2 teaspoons of the salt and 1/2 teaspoon of the pepper over them, and lay 2 sprigs of the rosemary on top. If you are using dried rosemary, put 1 tablespoon in the palm of your hand and crumble it over the vegetables.
  • Preparing the Chicken The giblets, which consist of the liver, gizzard, and heart, plus the neck, are usually in a package inside the cavity of the chicken, between the legs. Remove them and discard or refrigerate them to use later. If there is a pale-yellow chunk of fat on either side of the cavity, pull or cut it off and discard. Hold the chicken under cold running water and rinse it inside and out. Shake off excess water and pat dry with paper towels. Sprinkle the remaining 11/2 teaspoons of salt and 1/2 teaspoon of pepper over the outside of the chicken, rubbing them all over the skin. Set the chicken, the breast side facing up, on top of some of the vegetables, with the remaining ones surrounding the bird. Insert a dial-type (not instant-read) thermometer into the breast, taking care that the rod of the thermometer does not touch any bones.
  • Roasting the Chicken Put the chicken in the center of the oven and set the timer for 30 minutes. When the timer rings, remove the pan from the oven and, using a large spoon, turn over the vegetables that surround the chicken. Don't bother with the vegetables under the chicken. Return the pan to the oven and set the timer for 30 more minutes. After 30 minutes, take the chicken out of the oven to check for doneness. Insert the tip of a small paring knife into the meat of the thigh where it attaches to the body. If the juices that run out are pink, the chicken needs to continue cooking for another 10 to 15 minutes. If the juices are clear, it is done. The meat thermometer should show a temperature of 170 degrees F to 180 degrees F when the chicken is done.
  • Carving the Chicken Carve the chicken according to the instructions on the preceding page. Scoop the vegetables out of the roasting pan and onto a serving platter. Remove the fat from the pan juices. Arrange the cut chicken pieces on top of vegetables, spoon some pan juices over the chicken and vegetables, scatter the 2 remaining rosemary sprigs on top and bring the dish to the table for serving.

PAN-ROASTED CHICKEN AND VEGETABLES

Pan-Roasted Chicken and Vegetables image

This one-dish roast chicken with vegetables tastes as if it took hours of hands-on time to put together, but the simple ingredients can be prepped in mere minutes. The rosemary gives it a rich flavor, and the meat juices cook the veggies to perfection. It's unbelievably easy! -Sherri Melotik, Oak Creek, Wisconsin

CHICKEN AND VEGETABLES CONGEE (CHOK)

Chicken and Vegetables Congee (Chok) image

This is totally and utterly comfort food for Asians. Posted this recipe for Skipper/Sy. It is a total self-creation that has become a staple in my family. We actually have craving for this. A total balanced meal, all in one. You can substitute the chicken with beef or pork. Still good. :) It can be served to toddlers cos it is very soft. Asian toddlers eat congee quite a bit.

Provided by KitchenManiac

Categories     Stew

Time 2h20m

Yield 6 serving(s)

Number Of Ingredients 19

1 1/2 cups of washed rice
8 cups of room temperature water
6 large chicken thighs (can use any part of the chicken)
1/2 cup dried scallops
5 garlic cloves, skinned and crushed
1 slice fresh ginger, thick, crushed (2cm) (optional)
3 tablespoons oyster sauce
2 tablespoons Chinese wine or 2 tablespoons sherry wine
1 tablespoon soya sauce
1 tablespoon white pepper or 1 tablespoon black pepper
1 1/2 teaspoons sugar
1 tablespoon low-sodium worcestershire sauce
1 tablespoon sesame oil
1 carrot (sliced about 1 cm in thickness)
1 head broccoli (chopped up to bite size)
2 eggs
chopped green onion
chopped cilantro
1 dash white pepper

Steps:

  • Cut the chicken thighs up into two inch lengths.
  • Marinate the chicken with the oyster sauce, Chinese wine/sherry, soy sauce, pepper, sugar, Worcestershire sauce and sesame oil.
  • Leave the chicken to marinate in the fridge for about 30 min or longer.
  • (the longer it is left to marinate, the tastier the chicken will be.) Grab a large pot, pour the rice, water, ginger, garlic and dried scallops inches.
  • Let this boil on a low heat for about 1 hour.
  • (this is to bring out the flavor or the spices and scallops) Do check on the congee frequently and give it a stir, so that the rice doesn't stick and burn at the bottom of the pot.
  • NOTE: The congee is boiled at low heat, so that the congee will be smooth.
  • NOTE: The more frequently you stir the congee, the faster the rice grains will break down, making the porridge smoother and tastier.
  • Pour in the carrots, and allow the congee to continue simmering.
  • Take the chicken out of the fridge, and pour it into the congee.
  • (a fair bit of water would have disappeared by now; thus adding the chicken won't cause it to overflow) Add 2 cups boiling hot water into the pot, and stir the congee.
  • Allow this to cook for about 15 minutes.
  • Add the broccoli into the pot.
  • Allow the congee to cook until you are happy with the thickness of the congee.
  • Bring the congee to a boil, while continuously stirring it.
  • Once it boils, turn the heat off, and drop the two eggs into the pot of congee.
  • Leave it for about 30 seconds, and give it a good stir to break up the egg totally and it mixes very well into the congee.
  • Ladle into bowls, and garnish.
  • Enjoy a bowl of smooth yummy congee.

CHICKEN AND VEGETABLE BAKE

Chicken and Vegetable Bake image

Super simple and tasty...minimal prep time. This came from Fix it and Forget it Litely...A compilation of crockpot cooker recipes. I used the garlic powder liberally, and did not limit it to the 1 tsp. listed in the original recipe. I also used a 6 qt. crockpot and only made 1/2 a recipe so it took less than the 4 hours when cooked on the high setting. If you are halving the recipe, I still recommend using the entire amount of potatoes and vege's!

Provided by Laura36

Categories     One Dish Meal

Time 4h10m

Yield 8 serving(s)

Number Of Ingredients 7

8 boneless skinless chicken breast halves
black pepper, to taste
1 teaspoon garlic powder
1 (16 ounce) bottle fat-free Italian salad dressing, divided
2 (15 ounce) cans whole potatoes, drained

1 (8 ounce) can water chestnuts (optional)

  • Sprinkle chicken with pepper and garlic powder.
  • Put chicken in bottom of slow cooker.
  • Pour half of the dressing over meat, making sure all pieces are glazed.
  • Add potatoes, vege's and water chestnuts.
  • Pour remaining dressing over them, making sure vege's are all lightly coated.
  • Cover.
  • Cook on high 4 hrs or on low 7-8 hours.
