This recipe is an unusual dish that all the family loves and is requested by all from the smallest to the adults. Don't let the 'lentil' ingredient scare you. It is absolutely delicious and very nutritious. It is the dish most often requested in our home. The recipe directions look complicated, but are very simple.

1 tablespoon olive oil
2 pounds bone-in chicken pieces
1 large onion, finely chopped
1 small carrot, finely chopped
2 cloves garlic, finely chopped
¾ cup dried lentils
1 (14 ounce) can chicken broth
½ teaspoon salt
1 (10 ounce) can tomato sauce
½ teaspoon dried rosemary
½ teaspoon dried basil
1 tablespoon lemon juice

Steps:

  • Heat the oil in a skillet over medium heat, and cook the chicken pieces 5 minutes on each side, or until juices run clear. Remove chicken from skillet, and set aside.
  • Place onion in the skillet, and cook 5 minutes, until tender. Mix in the carrot and garlic. Stir in the lentils and broth, and season with salt. Bring to a boil, cover, reduce heat to low, and simmer 20 minutes.
  • Return chicken to skillet. Cover, and continue cooking 20 minutes. If the mixture becomes too dry, add a little water to just moisten.
  • Stir tomato sauce into the skillet. Season with rosemary and basil. Continue cooking 10 minutes, or until lentils are tender. Stir in lemon juice, and serve warm.

2 tbsp olive oil
8 skinless boneless chicken thighs
2 garlic cloves , crushed
1 tbsp ground cumin
1 tbsp ground coriander seeds
1 tbsp sweet paprika
1 large onion , finely sliced
50g split red lentil
400g can chopped tomato
1 tbsp tomato ketchup
700ml chicken stock
1 cinnamon stick
200g whole dried apricot
handful mint leaves, to serve (optional)

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Rub 1 tbsp olive oil into the chicken thighs. Mix the garlic, cumin, coriander and paprika together, then rub all over the chicken thighs on both sides.
  • Heat a large flameproof casserole, add the chicken thighs and cook over a medium heat for 5 mins until golden on both sides. You might need to do this in 2 batches, depending on the size of the casserole. Set the chicken aside. Turn down the heat, add the remaining oil and fry the onion for 5 mins until softened.
  • Stir in the rest of the ingredients, apart from the mint and bring to the boil. Place the chicken thighs on top and pour in any juices. Cover and cook for 1½ hrs, until the meat is tender and the sauce thickened. Can be cooled and frozen at this stage for up to 1 month. Defrost thoroughly in the fridge, then gently warm through. Scatter with fresh mint leaves and serve with couscous or rice.

2 6-oz boneless, skinless chicken breasts, sliced into 1-oz pieces
Pinch each sea salt and fresh ground black pepper (TRY: Simply Organic Ground Black Pepper)
2 tsp extra-virgin olive oil
2 tsp curry powder (TRY: Simply Organic Curry Powder)
2 cloves garlic, minced
1½ cups dry green lentils, rinsed
1 cup low-sodium chicken broth
3 cups water
1 cup plain Greek yogurt
½ cup chopped fresh cilantro

Steps:

  • Season chicken with salt and pepper. In a large saucepan or Dutch oven, heat oil on medium-high. Add chicken and cook, turning occasionally, for 7 to 8 minutes, or until lightly browned and just cooked through. Remove to a plate. To saucepan, add curry powder and garlic and cook, stirring, for about 1 minute, or until fragrant. Add lentils to saucepan and stir to coat. Stir in broth and water; bring to a boil. Reduce heat to medium and cook, stirring occasionally, for about 15 minutes. Return chicken to pan along with any accumulated juices and continue to cook until lentils are tender and most liquid is absorbed, 10 to 15 minutes more. Divide evenly among serving bowls, season to taste with salt and pepper, and garnish each with yogurt and cilantro. 2 rasher lean dry-cure back bacon, trimmed and chopped
2 large bone-in chicken thighs, skin removed
1 medium onion, thinly sliced
1 garlic clove, thinly sliced
2 tsp plain flour
2 tsp tomato purée
150ml dry white wine
200ml chicken stock
50g green lentil
½ tsp dried thyme
85g chestnut mushroom, halved if large
1 tsp vegetable oil

3 teaspoons salt, divided
1 pound dried brown lentils, rinsed, drained
1 cup plus 2 tablespoons olive oil
1/2 cup red wine vinegar
3 tablespoons ground cumin, divided
2 tablespoons plus 2 teaspoons chili powder
2 garlic cloves, minced
1 large onion, chopped
1 1/2 pounds skinless boneless chicken breast halves, thinly sliced
1/4 teaspoon ground cinnamon
1 cup chopped fresh parsley

Steps:

  • Combine 8 cups water and 1 teaspoon salt in heavy large saucepan over high heat. Add lentils; bring to boil. Cover, reduce heat to medium, and simmer until lentils are tender, about 20 minutes. Drain well; rinse with cold water and drain again. Place in large bowl.
  • Whisk 1 cup olive oil, vinegar, 2 tablespoons cumin, 2 tablespoons chili powder, garlic, and 1 teaspoon salt in large measuring cup. Pour 1 cup dressing over warm lentils and toss. Cool.
  • Heat 2 tablespoons olive oil in large skillet over high heat. Add onion; sauté until dark brown and soft, about 5 minutes. Add chicken; sauté 2 minutes. Add 1 teaspoon salt, 1 tablespoon cumin, 2 teaspoons chili powder, and cinnamon. Sauté until chicken is cooked through, about 3 minutes longer.
  • Arrange lentils on large platter. Place sliced chicken atop lentils. Drizzle with remaining dressing and sprinkle with parsley. (Can be made 2 hours ahead. Let stand at room temperature.)

1/4 pound dried chickpeas
3 tablespoons olive oil
1 1/2 pounds boneless, skinless chicken thighs, cut into 2-inch pieces
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup diced onions
1/2 cup diced celery
2 teaspoons ground ginger
2 teaspoons turmeric
1 teaspoon ground black pepper
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 (28-ounce) can diced tomatoes and their juices
1 1/2 quarts rich chicken stock
1/4 pound dried green lentils
1/2 cup long-grain rice
1/2 cup chopped fresh cilantro leaves

2 teaspoons fresh lemon juice
Cilantro sprigs, for garnishing

Steps:

  • Pick over the chickpeas, cover with cold water, and soak overnight at room temperature. Drain chickpeas and rinse well with cold running water. Drain and set aside.
  • Heat the olive oil in a medium stockpot or Dutch oven over medium-high heat. Season the chicken pieces with 1/4 teaspoon each of salt and pepper. Add the chicken in batches, and cook until well browned, about 4 minutes per batch. Remove the chicken from the pot and set aside. Add the onions and celery and cook until softened, about 4 minutes. Add the ginger, turmeric, pepper, cinnamon, and nutmeg and cook, stirring constantly, for 1 minute. Return the chicken to the pan and add the tomatoes and their juices, stirring well. Stir in the chicken stock, lentils, and chickpeas and bring to a boil. Reduce heat to medium-low, cover, and cook at a gentle simmer for 1 hour.
  • Add the rice and the remaining 1/2 teaspoon of salt and return the soup to a simmer. Cook covered for 30 minutes. Remove the lid, add the cilantro, parsley, and lemon juice and cook, uncovered for 5 minutes.
  • Ladle into warmed soup bowls and garnish with fresh cilantro sprigs.

  • Put the quinoa in a fine mesh strainer and rinse under cold running water until the water runs clear. Bring a small saucepan of water to a boil, add the quinoa and cook until it is translucent and tender and the threadlike germ wraps around each kernel, 8 to 12 minutes. Strain the quinoa well, return it to the saucepan and stir in the lentils; cover and keep warm.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the onions and cook, stirring frequently, until deep golden brown, 5 to 7 minutes. Add the garlic, cumin, cinnamon, lemon zest, 3/4 teaspoon salt and a few grinds of pepper and stir until toasted and fragrant, about 1 minute. Add 1/2 cup water and scrape up any brown bits. Add the chicken, bring to a simmer and cook until almost all of the liquid evaporates and the chicken is moistened, about 2 minutes.
  • Meanwhile, put the green beans in a microwave-safe bowl with 1 tablespoon water. Cover and microwave until hot, about 3 minutes
  • Add the chicken-onion mixture, lemon juice and 1/4 teaspoon salt to the quinoa-lentil mixture and stir to combine. Divide among four bowls. Top each with greens beans, almonds and a dollop of yogurt.

2 teaspoons seasoned salt (eg. LAWRY'S®)
1 tablespoon vegetable oil
1 large onion, finely chopped
3 carrots, finely chopped

1 (2 ounce) jar pimento peppers, drained and chopped
2 cups chicken broth
½ cup dry red wine
1 (16 ounce) package steamed lentils
1 teaspoon chopped fresh rosemary
2 tablespoons white balsamic vinegar

Steps:

  • Season the chicken liberally with seasoned salt. Heat oil in a large skillet over medium-high heat; add chicken and cook until well browned on all sides, about 10 minutes. Remove chicken from pan and set aside.
  • Lower the heat, add the onion, and cook and stir until translucent, about 5 minutes. Stir in the garlic, carrot, and pimento, and cook and stir an additional 3 minutes. I clipped this recipe from the January 2004 Bon Appetit, and just got around to trying it... we absolutely loved it and I can't wait to make it again. It's really a quick and easy weeknight supper, and it makes the kitchen smell luscious! Since this serves 12, I cut the recipe by 1/4 when I made it (and it fed two happy people), but I'll include the original measurements and serving size here.

1 teaspoon salt
1 lb dried lentils, rinsed and drained
1 cup olive oil (I used a little less...)

  • Combine 8 cups water and 1 teaspoons of the salt in a heavy large saucepan over low heat.

  • Cover, reduce heat to medium and simmer about 20 to 25 minutes, or until lentils are tender but not mushy.
  • Drain, rinse with cold water, then drain well again.
  • Transfer to a large bowl.
  • Whisk together the 1 cup of olive oil, red wine vinegar, cumin, chili powder, garlic and salt; pour 1 cup of this dressing over the warm lentils and toss gently.
  • Allow to cool.
  • In a large skillet,heat 2 tablespoons olive oil and saute onions until dark brown and soft, about 5 to 10 minutes.
  • Add chicken and saute 2 minutes.
  • Add 1 teaspoons salt, the cumin, chili powder and cinnamon.
  • Saute until chicken is cooked through, about 5 more minutes.
  • Arrange lentils on a large platter and place sliced chicken on top.
  • Drizzle with remaining dressing and sprinkle with the fresh parsley.

250 g basmati rice, cleaned and washed and soaked in sakted lukewarm water for 4 hours
250 g chicken breasts, washed,drained and cut into medium sized pcs
2 medium onions, peeled,washed and sliced
1/4 cup oil
salt
black pepper
60 g raisins, soaked in warm water for 20 minutes,drained and patted dry
120 g dates, pitted and halved
1/4 teaspoon powdered saffron
75 g lentils, boiled with a little salt,cumin and red chilli powder

Steps:

  • Heat oil in a skillet.
  • Once its hot, toss in 1 onion and stir-fry till it is golden brown.
  • Add the chicken breasts, cover and cook over low heat until done.
  • Sprinkle salt and pepper to taste.
  • Mix well.
  • In another pan, heat a tbsp.
  • of oil and fry the second onion in it until it turns golden.
  • Add dates and raisins.
  • Stir-fry for 3 minutes.
  • Mix in the saffron.
  • Keep aside.
  • Strain the lentils now and keep aside until you are ready to mix them with the rice later.
  • Now start preparing the rice.
  • To do so, bring 8 cups of water to a rapid boil in a pot.
  • Drain out the water from the soaked rice completely.
  • Add the drained rice to the boiling water.
  • Bring the rice to a boil for 3 minutes.
  • After checking whether the rice is cooked, strain the rice and rinse it with lukewarm water in a strainer.
  • Bring 1/4 cup of water and 2 tbsps.
  • of oil to a rapid bowl in a pot.
  • Add layers of rice and lentils, alternately, building these layers up to a dome shape.
  • The last layer should be of rice.
  • Poke 5-6 holes through the rice to the bottom with the handle of a spoon.
  • Close the lid.
  • Heat on medium flame for 3 minutes until the rice starts steaming.
  • In a separate pot, heat another 1/4 cup of water and 2 tbsps.
  • of oil.
  • Pour over the rice.
  • Cover the saucepan with a lid.
  • Seal the lid over the saucepan with atta dough.
  • Lower heat and cook for 45 minutes on a simmer.
  • Remove from heat and place the saucepan in the sink.
  • Run cold water under it to cool it down.
  • Remove/break the wheat flour{Atta} seal.
  • To serve: Very carefully and gently, remove the lentil rice and sprinkle lightly in a serving dish in a dome shape.
  • Spread the mixture of dates and raisins over the rice.
  • Spread the chicken on top.
  • Remove the crusty bottom and spread in a separate plate.
  • Enjoy!
