GRILLED PORK SHISH KABOBS

Grilled Pork Shish Kabobs image

A simple, excellent recipe for grilled pork tenderloin kebabs. Learn our tips and tricks for flavorful and tender, crowd pleasing shish kabobs.

Provided by Natasha Kravchuk

Categories     Easy/Medium

Time 4h10m

Number Of Ingredients 8

2 1/2 lb pork tenderloin (trimmed and cut into 1 1/2" pieces)
1 Tbsp Italian seasoning
1 1/2 tsp sea salt
1/2 tsp garlic powder
1/2 tsp black pepper
2 Tbsp olive oil
1 large red onion (cut into 1" pieces)
1 Tbsp fresh parsley to garnish (optional)

Steps:

  • In a large mixing bowl (or ziploc bag), combine chopped pork, 1 Tbsp Italian seasoning, 1 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper and stir until well combined. Separate onion pieces and add them to the bowl. Add 2 Tbsp olive oil and toss to combine. Cover and marinate in the refrigerator for at least 4 hours and preferably overnight.
  • Thread the kabobs onto metal skewers*, alternating between meat and onion. For even browning, the meat and onions should be just touching on the skewers and not crowded together. Let your skewers stay at room temperature for 30 minutes before placing on the grill.
  • Preheat your grill to Medium/high heat (400˚F). Add skewers in a single layer and grill for 8-10 minutes total. Meat skewers turn like a triangle so we cook about 3 minutes per side on all 3 sides. Grill until cooked through and meat reaches at least 145˚F internal temperature. Rest skewers 3 minutes before serving.

  • Preheat the grill. If using a charcoal grill, build a 2-level fire in your grill, which means you put all the coals on 1 side of the grill and leave the other side free of coals. When the flames have died down, all the coals are covered with gray ash, and the temperature is medium-hot so you can hold your hand 6 inches above the grate for 3 to 4 seconds, you’re ready to grill. If using a gas grill, preheat it to medium-high.
  • In a small bowl, whisk together 3 tablespoons olive oil, vinegar, and honey to make the vinaigrette. Taste and, if desired, add up to 3 more tablespoons olive oil.
  • Toss the pork with 1/4 cup olive oil to lightly yet completely coat each piece. Season the pork with salt and pepper. Thread the pork onto skewers, being certain the pieces of pork touch one another but aren't jammed tightly together. (Figure no more than 8 pieces pork per skewer.)
  • Place the pork skewers on the grill directly over the heat and place the peaches on the grill, cut side down, along the edge of the fire. Grill the peaches until tender, 6 to 8 minutes, depending on the peaches' size and ripeness. Cook the pork, turning occasionally so all sides get nicely seared, 10 to 12 minutes total if you like your pork slightly pink in the center. (To check for doneness, cut into a pork chunk to be sure it's slightly less done than you like, since the meat will continue to cook after it’s taken off the heat. Timing will vary depending on the temperature of your grill, which means the total time can be considerably longer if your grill is less than medium-high or you prefer your pork more cooked than medium-rare.)

  • Cut the tenderloin into 1 - 1 ½-inch chunks. Cut each peach in half, discard pit, and cut into 5 or 6 slices each. Cut the onion into 1 - 1 ½-inch square pieces.
  • Thread onto skewers, alternating ingredients to make 4 or 5 mixed kabobs. For mine, I did two sets of pork and peach for every piece of onion.
  • In a small sauté pan over medium heat, melt the butter. Whisk in the flour and cook for 1 - 2 minutes until it darkens in color but does not burn. Whisk in the rest of the glaze ingredients and cook at a light boil while stirring occasionally until the mixture thickens enough to lightly coat a spoon, 5 - 10 minutes. Remove from heat.
  • Preheat a gas grill to medium-high heat, around 425° F (or prepare a charcoal fire), and place the skewers on the grill. Drizzle half the glaze over top of the skewers and cook for 5 - 6 minutes. Turn the skewers over, pour the remaining glaze on top, and cook until the pork is done (no longer pink in the middle), another 5 - 6 minutes.
