I was fortunate to grow up around fabulous cooks. My mother and grandmother taught me to experiment with recipes, and we tried a lot of variations on this one. - In a small heavy saucepan, combine rice, milk, sugar and salt; bring to a boil over medium heat. Reduce heat to maintain a low simmer. Cook, uncovered, until thickened, about 20 minutes, stirring often. Remove from the heat; stir in vanilla. Spoon into serving dishes. Serve warm or cold; serve with desired toppings.

CREAMY APRICOT RICE PUDDING

Steps:
- Bring 1 1/2 cups water to a boil over high heat in a saucepan. Stir in your rice. Then, turn down the heat, cover the pan and let simmer for 20 minutes.
- When the rice is done, put it in a clean saucepan with 1 1/2 cups milk, the sugar and salt. Cook this over medium heat, giving it a stir every once in awhile, until it thickens up and gets creamy, 15 to 20 minutes. Crack your egg into a small bowl and beat it with the remaining 1/2 cup milk. Slowly stir this mixture into the rice. Stir in your diced apricots and cook 2 minutes more. Take off the stove and stir in your butter, vanilla, orange zest, and cardamom. Grate some nutmeg over top.
AGNES' CREAMY RICE PUDDING
This is a great creamy stove top version of rice pudding. I like it while it's still warm, but it's great cold too.

Steps:
- Combine rice, water, salt, and butter in a pan.
- Cover and simmer for 15 minutes.
- At the same time, heat the milk to scalding.
- Stir hot milk into rice, add raisins if using, cover, and simmer 15 more minutes.
- Beat eggs and sugar together.
- Add some of the hot mixture to them, stirring constantly.
- Return egg mixture to rice mixture and cook 5 minutes, stirring constantly.
- It should start to bubble.
- Pour into a bowl.
- Add the vanilla.
- Cool.
CREAMY RICE PUDDING
This is a very easy recipe to follow and has an interesting taste - it is without all the spices (cinnamon and nutmeg) that everyone else puts in. This makes it so easy to top with whipped cream, preserves, or dried fruit such as raisins or chopped apricots.

- Combine rice, water and salt in 3-quart saucepan.
- Bring to a vigorous boil. Reduce heat, cover and simmer until all water is absorbed, about 3 minutes.
- Combine sugar and cornstarch.
- Add milk, sugar mixture and raisins to rice.
- Heat to boiling; boil 1 minute, stirring constantly.
- Remove from heat. Stir in butter and vanilla.
- Slowly stir about 1 cup of the hot rice mixture into egg yolks in bowl.
- Stir into remaining mixture in saucepan.
- Cook over medium heat, stirring frequently, just until mixture starts to bubble.

- Cook milk, sugar, and rice on medium heat for 1 1/2 hours on stove top. Stir often.
- Take rice mixture off heat. Beat eggs with vanilla. Remove 1 cup of the rice mixture and stir in beaten eggs. Add evaporated milk.
- Add mix back to pot and simmer gently for 2 minutes, just until thick enough to coat the back of a spoon. Chill and top with cinnamon if desired.

- Cover.
- Simmer gently 15 minutes or until water is absorbed.

- Rinse the rice under cold water until it runs clear; drain. Combine remaining ingredients.
- Stir in the rice and transfer to a buttered baking dish. Bake in a slow oven (275F) for 2 - 2 1/2 hours, until rice is tender and creamy.
