I was fortunate to grow up around fabulous cooks. My mother and grandmother taught me to experiment with recipes, and we tried a lot of variations on this one. 1 cup cooked long grain rice
1 cup whole milk
5 teaspoons sugar
Dash salt
1/2 teaspoon vanilla extract
Optional toppings: Whipped cream, sliced almonds, raisins, ground cinnamon and cinnamon stick.

Steps:

  • In a small heavy saucepan, combine rice, milk, sugar and salt; bring to a boil over medium heat. Reduce heat to maintain a low simmer. Cook, uncovered, until thickened, about 20 minutes, stirring often. Remove from the heat; stir in vanilla. Spoon into serving dishes. Serve warm or cold; serve with desired toppings.

CREAMY APRICOT RICE PUDDING

3/4 cup uncooked short grain white rice
2 cups milk, divided
1/3 cup sugar
1/4 teaspoon fine sea salt
1 egg
1 cup dried apricots, diced
1 tablespoon unsalted butter
1/2 teaspoon vanilla extract
1 orange, zested
1/2 teaspoon ground cardamom
Freshly grated nutmeg, for serving

Steps:

  • Bring 1 1/2 cups water to a boil over high heat in a saucepan. Stir in your rice. Then, turn down the heat, cover the pan and let simmer for 20 minutes.
  • When the rice is done, put it in a clean saucepan with 1 1/2 cups milk, the sugar and salt. Cook this over medium heat, giving it a stir every once in awhile, until it thickens up and gets creamy, 15 to 20 minutes. Crack your egg into a small bowl and beat it with the remaining 1/2 cup milk. Slowly stir this mixture into the rice. Stir in your diced apricots and cook 2 minutes more. Take off the stove and stir in your butter, vanilla, orange zest, and cardamom. Grate some nutmeg over top.

This is a great creamy stove top version of rice pudding. I like it while it's still warm, but it's great cold too.

3/4 cup rice
3 cups water
1/4 teaspoon salt
2 tablespoons butter
3 cups milk
3 eggs
3/4 cup sugar
1 teaspoon vanilla
1/2 cup raisins (optional)

Steps:

  • Combine rice, water, salt, and butter in a pan.
  • Cover and simmer for 15 minutes.
  • At the same time, heat the milk to scalding.
  • Stir hot milk into rice, add raisins if using, cover, and simmer 15 more minutes.
  • Beat eggs and sugar together.
  • Add some of the hot mixture to them, stirring constantly.
  • Return egg mixture to rice mixture and cook 5 minutes, stirring constantly.
  • It should start to bubble.
  • Pour into a bowl.
  • Add the vanilla.
  • Cool.

1 cup instant rice
1/4 cup raisins
2 egg yolks, beaten
1 1/3 cups milk
2 1/4 tablespoons butter or 2 1/4 tablespoons margarine
1/4 cup sugar
1 teaspoon cornstarch
1/4 teaspoon vanilla extract
nutmeg, as needed
cinnamon, as needed
1 cup water
1/4 teaspoon salt

Steps:

  • Combine rice, water and salt in 3-quart saucepan.
  • Bring to a vigorous boil. Reduce heat, cover and simmer until all water is absorbed, about 3 minutes.
  • Combine sugar and cornstarch.
  • Add milk, sugar mixture and raisins to rice.
  • Heat to boiling; boil 1 minute, stirring constantly.
  • Remove from heat. Stir in butter and vanilla.
  • Slowly stir about 1 cup of the hot rice mixture into egg yolks in bowl.
  • Stir into remaining mixture in saucepan.
  • Cook over medium heat, stirring frequently, just until mixture starts to bubble.
  • Serve warm or chilled. Garnish with cinnamon and nutmeg.

1/2-3/4 cup rice
2 eggs
1 teaspoon vanilla
1 (5 ounce) can evaporated milk

Steps:

  • Cook milk, sugar, and rice on medium heat for 1 1/2 hours on stove top. Stir often.
  • Take rice mixture off heat. Beat eggs with vanilla. Remove 1 cup of the rice mixture and stir in beaten eggs. Add evaporated milk.
  • Add mix back to pot and simmer gently for 2 minutes, just until thick enough to coat the back of a spoon. Chill and top with cinnamon if desired.

Steps:

  • Combine rice with boiling water in a medium-sized saucepan.
  • Cover.
  • Simmer gently 15 minutes or until water is absorbed.
  • Combine sugar with cornstarch and salt.

  • Stir until smooth.
  • Add sugar mixture along with remaining milk and cream to the saucepan with the rice.
  • Combine well.
