3 skinless, boneless chicken breast halves
1 lemon, quartered
2 teaspoons garlic powder, divided
1 teaspoon ground black pepper, divided
2 (14.5 ounce) cans chicken broth
¼ cup fresh lemon juice
1 (8 ounce) package rotelle pasta
1 cup heavy cream
1 teaspoon grated lemon zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place chicken in a lightly greased baking dish. Squeeze lemon over both sides of the chicken breasts and season both sides using 1 1/2 teaspoons garlic powder and 3/4 teaspoon pepper. Bake for 40 minutes, or until juices run clear and chicken is no longer pink inside.
  • Meanwhile, in a large saucepan, season the chicken broth with the remaining 1/2 teaspoon garlic powder and 1/4 teaspoon pepper. Bring to a boil and add lemon juice and pasta. Cook over medium heat, stirring occasionally, until all liquid is absorbed, about 25 minutes.
  • Cut cooked chicken into bite-sized pieces and stir into cooked pasta, along with the cream and lemon zest. Cook, stirring, over low heat for 5 minutes. Remove from heat and let stand 5 minutes. Stir thoroughly before serving.

4 boneless skinless chicken breasts (OR 4-6 chicken thighs)
salt and pepper (to taste)
1 tablespoon oil
2 tablespoons butter
1 tablespoon honey
½ teaspoon each dried oregano, dried basil, garlic powder
1 tablespoon butter
2 teaspoons minced garlic
½ cup chicken broth (I used low sodium )
⅔ cup heavy cream (OR half & half plus 1 tablespoon corn starch)
juice of ½ lemon (about 2 tablespoons)
1 tablespoon chopped fresh dill
cracked black pepper (to taste)

Steps:

  • Preheat oven to 375 degrees. Season chicken with salt and pepper, to taste along with garlic powder, oregano, and basil. Combine butter and oil in a large oven-safe skillet (see note), once butter is melted add honey and stir to combine.
  • Add chicken to pan, brown chicken 2-3 minutes on each side. Transfer chicken to a plate (it won't be cooked through at this point). Add butter and garlic and saute for 1 minute until fragrant. Add chicken broth, heavy cream, and lemon juice and stir over medium heat for 2-3 minutes.
  • Return chicken to pan and transfer to preheated oven. Bake for 15 minutes or until chicken is cooked through. Spoon pan sauce over the chicken and sprinkle dill over the chicken and sauce, add cracked black pepper to taste and serve.

1 TB flour
1 TB salted butter
3 TB freshly cut dill leaves

Steps:

  • Use paper towels to thoroughly dry chicken pieces, ensuring all excess moisture is removed. Set aside.
  • In a small bowl, combine kosher salt, garlic powder, onion powder, and black pepper to form seasoning mixture. Evenly sprinkle seasoning over both sides of each chicken breast, pressing in to adhere mixture.
  • Heat olive oil in a large skillet over medium high heat. When oil is hot, add chicken, taking care not to overcrowd. Cover skillet, leaving about a quarter of pan uncovered, to allow steam to escape. Cook until chicken is browned on both sides and center is no longer pink, no more than 165F internal temp for thickest center portions (approx 3-4 min per side, depending on thickness and starting temp of your chicken) Transfer cooked chicken to separate plate and keep warm.
  • In a bowl, gently whisk together the lemon dill sauce ingredients until well incorporated. Pour sauce into same skillet (now empty) and constantly stir over medium-high heat, uncovered, until reduced by half (about 5 min.) You should end up with about 1 cup of sauce.
  • Pour sauce over chicken and serve with garnish, if desired.

Steps:

  • Boil a salted pot of water for your pasta. Cook it al dente according to package directions. I suggest starting the sauce once the water's boiling.
  • Season the salmon with salt & pepper and coat it in the flour.
  • Add the oil and butter to a skillet over medium-high heat. Once the pan is hot, add the salmon and cook it for 2 minutes/side, then take the fish out of the pan and set it aside.
  • Add the chicken broth, lemon juice, and garlic to the pan. Let it bubble for about 30 seconds. Reduce the heat to medium.
  • Add the cream, dill, and salmon back into the pan. Break the fish up with your spoon into bite-size pieces. Cook it for a few more minutes until it's cooked through and the sauce has reduced and thickened a bit.

200 ml (1 cup) double cream
1 tablespoon fresh dill, chopped

Steps:

  • 1. Boil the pasta according to the instructions on the package until it's al dente. When it's done, drain it, but not before reserving a cup of pasta water. 2. In a large pan, add the olive oil and shallow fry the salmon on medium heat until it's done to your liking. Remove it from the pan and set aside. 3. Add the butter to the same pan (don't remove the remaining olive oil) and cook the shallot for a couple of minutes, then add the minced garlic, lemon juice, and white wine and cook for another couple of minutes. 4. Stir in the double cream, cook for a minute or two until it thickens and tip the salmon back in. 5. Add the dill, reserving some for serving, and season to taste. Serve immediately, with extra freshly ground black pepper on top, if you like.

2 skinless/boneless Salmon Fillets, (at room temp (7oz/200g total))
7oz / 200g Spaghetti ((or long cut pasta of choice))
3/4 cup / 180ml Heavy/Double Cream, (at room temp)
1/3 cup / 80ml Dry White Wine
2 sprigs of Fresh Dill
1 tsp Fresh Dill, (finely diced)
1 tbsp Fresh Parsley, (finely diced + extra for serving)
2 small Shallots, (very finely diced)
1 large clove of Garlic, (very finely diced)
1 heaped tbsp Butter
gentle squeeze of Lemon Juice, (to taste (see notes))
Parmesan, (to serve)
Salt & Black Pepper, (to taste)
Olive Oil, (as needed)

Steps:

  • Generously season both of the salmon fillets with salt and pepper.
  • Add to a non-stick pan over medium-high heat in a small drizzle of olive oil. Once golden on the bottom side, flip over and place a sprig of dill on top of each fillet. Melt 1 heaped tbsp butter into the pan and baste the salmon until golden on the other side and just about cooked through the centre. Remove and place to one side. Break up into large chunks just before needed (discard dill).
  • Cook the pasta in salted boiling water until al dente, reserving a cup of starchy pasta water. Drain when needed.
  • Lower to medium heat and fry the shallots in the leftover brown butter until soft and deep golden, then fry the garlic for a further minute or so.
  • Pour in 1/3cup/80ml wine and leave to simmer for a good 4-5mins to reduce, deglazing the pan as necessary. Reducing the wine is important so it burns off the alcohol and doesn't end up too bitter. Once almost completely reduced/evaporated, stir in 3/4cup/180ml heavy/double cream.
  • Stir in 1 tsp finely diced dill, 1 heaped tbsp finely diced parsley and a small squeeze of lemon juice to taste (careful, you won't need much). Season with salt and pepper. Keep on a gentle simmer.
  • Toss through the pasta until the sauce clings to it, adding a dash of starchy pasta water if you needed to loosen up the sauce. Add salmon and gently toss to combine.
  • Serve with parmesan & parsley and enjoy!

3 tablespoons butter (divided)

⅓ cup chicken broth

1 lb medium pasta shell
1/3 cup white wine
1/4 cup extra-strong chicken stock
3 tablespoons fresh finely chopped dill
1 lb boneless skinless chicken breast, cut into small bite size pieces
1 1/2 cups whipping cream (35%)
1 lemon, juice of, fresh
grated parmesan cheese

Steps:

  • • In a large pot of boiling water, cook pasta shells for 3 minutes to partly cook them. Drain, rinse with cold water and set pasta aside.
  • •In a separate skillet over moderately high heat, add wine, stock, dill and chicken to pot; bring to a boil and then simmer, stirring occasionally until the liquid is reduced by half (~10 mins as the chicken will also release liquid).
  • • Add cream and lemon juice to the chicken and bring the liquid back to a boil. Add the drained pasta shells and simmer over moderately high heat, stirring constantly until the liquid is reduced by half again and the sauce has thickened (~5-7 mins).
  • • Add parmesan to the pasta and salt & pepper if desired.
  • • Stir to mix thoroughly and serve immediately.

1 teaspoon Dijon mustard

1/2 teaspoon kosher salt (more or less, to taste)
1/4 teaspoon freshly cracked black pepper (more or less, to taste)
1 pound large shrimp, peeled and deveined
2 tablespoons unsalted butter
1 tablespoon freshly minced garlic
1/4 cup lemon juice
1 cup heavy cream
3/4 cup shredded Parmesan cheese
2 teaspoons chopped fresh dill

Steps:

  • Rinse shrimp and pat dry with a paper towel. Season both sides with salt and pepper.

Season with salt and pepper to taste. SPICY CREAM SAUCE (CAJUN OR RED PEPPER FLAKES) In a sauce pan over medium heat add heavy cream and chicken base. Stir to combine and bring to simmer. Add Cajun seasoning OR red pepper flakes (plus optional Parmesan). Simmer until sauce thickens to your liking or thicken with slurry. SIMPLE CHEESE CREAM SAUCE Add the heavy cream to a sauce pan, place on stove and heat over the highest setting of low available before you get to medium-low. 1 pound chicken cutlets
Kosher salt and freshly cracked black pepper (to taste)
¼ cup heavy cream
3 tablespoons lemon juice
4 teaspoons cornstarch
1 clove garlic (minced)
1 cup unsalted chicken broth
1 14 ounces can artichoke hearts, rinsed and chopped
1 tablespoon chopped fresh dill
Lemon wedges (for serving (optional))

Steps:

  • Cut the whole chicken breast in half. Then fillet the two halves into four thin cutlets. Season with salt and pepper, to taste.
  • Heat the olive oil in a large stainless steel or cast-iron skillet over medium-high heat. Add the chicken cutlets to the pan. Don't overcrowd the pan. If there isn't enough room, only cook two chicken cutlets at a time.
  • Cook the chicken for 3 to 4 minutes, then flip and cook until cooked through; about 3 to 4 more minutes. Transfer to a plate and loosely tent with foil to keep warm.
  • Pour the broth into the pan and bring to a simmer over high heat, scraping up the brown bits from the bottom of the pan. Cook the broth until it reduces by half; about 5 minutes.
  • Whisk the cream, lemon juice, and cornstarch in a small bowl then pour it in the skillet with the broth. Whisk the cream mixture until it thickens; about 2 to 3 minutes.
  • When the sauce has thickened, add the chicken and any juices from the chicken in the bottom of the plate to the pan along with the artichokes and dill; cook for 1 to 2 minutes or until warmed through.
  • Serve immediately, with your favorite rice, potatoes, or pasta with, lemon wedges on the side.

4 boneless chicken breast halves (or cutlets, about 1 1/4 to 1 1/2 pounds)
1/2 teaspoon seasoned salt
1 tablespoons butter
1 tablespoon extra virgin olive oil
1/2 cup chicken broth (low sodium)
1/2 cup half-and-half (or light cream)
1 tablespoon flour
1 teaspoon dried dill weed (or 2 teaspoons freshly chopped dill weed)
Optional: garnish with fresh chopped parsley

Steps:

  • Gather the ingredients.
  • Sprinkle the chicken breasts with seasoned salt. If the chicken breasts are quite large, slice each one in half horizontally to make two cutlets. For faster and more uniform cooking, put each chicken breast or cutlet between two sheets of plastic wrap and gently pound with the smooth side of a meat tenderizer.
  • In a large skillet over medium-high heat, melt the butter and olive oil.
  • When the butter and oil are hot and sizzling, add the chicken breast halves or cutlets to the skillet. Cook for about 3 to 5 minutes on each side or until chicken is browned. Reduce the heat to low.

This creamy lemon-dill sauce comes together SO quickly with just a simple roux, chicken stock, light cream (or whole milk), and plenty of lemon and dill. While the fond from the scallops helps add loads of extra flavor to this creamy lemon-dill pasta.

16 ounces pasta (linguine is great!)
1 pound bay scallops
1 tablespoon butter plus 1 tablespoon oil
Salt and pepper to taste
Juice of 1 lemon
2 tablespoons butter
2 tablespoons flour
1¼ chicken stock
1 cup light cream (or whole milk)
A good shake of paprika (optional)
1 lemon
1 cup grated Parmigiano-Reggiano
4 tablespoons fresh dill
⅓ cup fresh parsley
Salt (pepper, and crushed red pepper to taste)

Steps:

  • Bring a large pot of salted water to a boil and cook the pasta according to the pasta instructions and reserve ¼ cup of the pasta cooking water. Pat the scallops dry and transfer to a bowl. Season with salt and pepper and keep in the fridge until ready to cook.
  • While the pasta water is coming to a boil, prepare the ingredients for the creamy lemon-dill sauce.
  • First, mince the parsley and fresh dill. Next, zest the lemon into one bowl and then juice the lemon into a second bowl. Finally, add the minced herbs to the bowl of lemon juice and set aside. To the bowl of lemon zest, add the grated Parmigiano-Reggiano with a sprinkle of salt, pepper, and crushed red pepper and toss to combine. Set aside.
  • Heat 1 tablespoon butter and 1 tablespoon oil in a large skillet (large enough to later hold the pasta) over medium-high heat until very hot.
  • Add the bay scallops in an even layer and cook without moving for 1 minute. Flip and cook another minute or so until almost cooked through. Do not overcook the scallops - they should have just turned pearly white when you remove them from the skillet. Using a slotted spoon, remove the scallops from the skillet and transfer to a bowl.
  • If the scallops produce a lot of liquid while cooking, turn the heat up a bit and cook until the liquid turns golden brown and begins to evaporate. Then, move on to preparing the sauce.
  • To the skillet add the remaining 2 tablespoons butter over medium heat and cook until frothy and melted. Add the flour and cook until browned (the flour should be completely spread out through the butter), about 1-3 minutes.
  • Slowly add the chicken stock one ladle at a time, whisking after each addition until the liquid is completely incorporated and the sauce is smooth. Continue whisking until there are no more clumps of flour. Turn the heat to low and slowly whisk in the light cream until incorporated.
  • Taste and season with salt, pepper, and paprika. Add the fresh minced herbs in lemon juice and stir to combine. Simmer, stirring regularly, for 10-15 minutes until the sauce has thickened and reduced a bit.
  • Taste the sauce and season to your preferences. Add the ¼ cup reserved pasta cooking water along with all but a couple of pinches of the grated cheese and whisk to incorporate.
  • Add the pasta and toss to combine. Cook for just about 1-3 minutes or until the pasta is well coated with the sauce. Add the bay scallops along with the remaining juice from 1 lemon and toss to combine until the scallops have just reheated, about 1-2 minutes more. Remove from heat.
  • Divide the lemon-dill pasta with bay scallops between shallow pasta bowls. Sprinkle a bit of the remaining grated cheese on top of each plate. Enjoy!
