This is another great cake for the fall. When apples are plentiful and delicious there are so many ways to thank mother nature for its bounty. I pick a lot of the wild apples in the fall, and turn them into great desserts.

½ cup shortening
1 cup white sugar
1 egg
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
¾ cup milk
2 apples - peeled, cored and cut into eighths
¼ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Sift flour with baking powder and salt.
  • In a large bowl, cream shortening and 1 cup sugar until light. Beat in egg and vanilla until fluffy. Add sifted ingredients to the creamed mixture alternately with milk, beginning and ending with the sifted ingredients. Spread the batter into a greased 7 x 11 inch baking pan.
  • Place apple pieces in rows on the batter with the sharp edges pressed in slightly. Sprinkle 1/4 cup sugar and cinnamon on top.
  • Bake at 350 degrees F (175 degrees C) for about 50 to 60 minutes, or until the apples are tender and the cake tests done.

This Dutch apple cake recipe is one of the best apple cake recipes of all time. It's moist, delicious and very easy to make.

2 cups AP flour (all purpose flour, sifted )
4 teaspoons baking powder
¼ teaspoon salt
¼ cup cane sugar
¼ cup unsalted butter (4 tablespoons )
1.5 teaspoons vanilla flavor
1 egg (beaten )
1 cup 2% milk
3 medium apples ( peeled and cubed, 2 honey crisp 1 granny smith )
1 teaspoon cinnamon
¼ cup cane sugar
1 tablespoon brown sugar

Steps:

  • Preheat the oven 375 degrees.
  • Grease a 9-inch spring form pan or metal baking dish. Set aside.
  • In a large mixing bowl, sift together the flour, baking powder, sugar and salt.
  • Next, using two knives or a fork gently cut the soft butter into the flour mixture. Making sure to incorporate it until there are no large lumps.
  • Next, add a whisked egg, vanilla and milk.
  • Gently fold everything together until the batter forms. It will be slightly sticky so don't worry. The juice from apples will moisten the cake as it bakes.
  • Next, peel and slice 3 medium sized apples. I used 2 honey crisp and 1 grnny smith apple.
  • If you opt to slice the apples, you should get about 4 slices per quarter. If you cube the apples, just give them a rough chop. Each piece should be about the size of a nickel.
  • In a separate mixing bowl, add the cubed apples, cinnamon, cane and brown sugar. Toss until the apples are evenly coated.
  • Next, pour the batter into the greased pan. Spread the batter and place the apples on top of the batter.
  • Gently press the apples into the batter.
  • Bake for 40 minutes or until the center is fully cooked.
  • Remove from the oven and serve slightly warm.

6 ounces superfine sugar, plus extra for sprinkling
1/2 teaspoon vanilla extract
3 1/2 ounces butter
4 tablespoons milk
4 1/2 ounces all-purpose flour
1/2 teaspoon ground cinnamon
2 1/4 teaspoons baking powder
2 cooking apples, peeled, cored and thinly sliced
heavy cream, to serve

Steps:

  • Preheat the oven to 400°F Line the sides and base of a 8 x 8in square cake tin with parchment paper.
  • Using an electric whisk, whisk the eggs, superfine sugar and vanilla extract in a large bowl until the mixture is thick and mousse-like and the whisk leaves a figure of eight pattern (this will take about 5 minutes).
  • Melt the butter in a saucepan with the milk, then pour onto the eggs, whisking all the time. Sift in the flour, cinnamon and baking powder and fold carefully into the batter so that there are no lumps of flour. Pour the mixture into the prepared tin and smooth the surface.
  • Arrange the apple slices over the batter. (They will sink to the bottom.) Sprinkle over a tablespoon of sugar and bake in the oven for ten minutes, then reduce the oven temperature to 350F and bake for a further 20-25 minutes or until well risen and golden brown.
  • Remove the cake from the oven and allow to cool in the tin. Cut into squares and serve warm with cream.

3 medium tart apples, peeled and cut into 1/4-inch slices (3 cups)
3 tablespoons plus 1 cup sugar, divided
1 teaspoon ground cinnamon
2/3 cup butter, softened
4 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1/8 teaspoon salt

Steps:

  • In a large bowl, combine the apples, 3 tablespoons sugar and cinnamon; let stand for 1 hour. , In another bowl, cream butter and remaining sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Add vanilla. Combine flour and salt; gradually add to creamed mixture and beat until smooth. , Transfer to a greased 9x5-in. loaf pan. Push apple slices vertically into batter, placing them close together. , Bake at 300° for 1-1/2 to 1-3/4 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Serve warm.

  • This cake has been made at Ballymaloe for years. We even have guests who ask for it specifically every time they visit. The fruit sinks to the bottom as it cooks, leaving a light sponge on top with a lovely sugary crust.
  • Preheat the oven to 400 degrees F. Line the sides and base of a 8 by 8-inch square cake pan with parchment paper.
  • Using an electric whisk or hand held mixer, whisk the eggs, 6 ounces caster sugar, and vanilla extract in a large bowl, until the mixture is thick and mousse-like, and the whisk leaves a figure of eight pattern, this will take about 5 minutes.
  • Melt the butter in a saucepan with the milk, and then pour the mixture onto the eggs, whisking continuously. Sift in the flour, cinnamon, and baking powder, and fold carefully into the batter so that there are no lumps of flour. Pour the mixture into the prepared pan, and smooth the surface.
  • Peel and core the apples, and cut them into thin slices, and then arrange them over the batter. They will sink to the bottom. This is meant to happen! 1 1/2 cups milk
4 eggs
1/4 cup apple juice
2 tablespoons sugar
1/2 grated golden delicious apple
5 golden delicious apples
1/3 cup raisins
1 1/2 tablespoons honey
Dash of cinnamon
1/4 cup apple juice

Steps:

  • Crepes: In an electric mixer mix together flour, milk, eggs, apple juice, sugar, beat until smooth. Add apple. In a hot, non-stick, crepe pan heat 1 teaspoon butter or vegetable oil. Pour about 2 tablespoons batter into pan, spread batter evenly to cover entire surface. Cook until it browns around the edges, about 30 seconds. Flip it over with a spatula (or fingers) and cook until it starts to brown, another 30 seconds. Slide the crepe onto a plate and continue until all batter is used. Set aside.
  • Filling: Peel, core and dice apples. Gently simmer apples, raisins, honey, cinnamon and apple juice until apples are soft but not mushy. Using a potato masher break up the apple mixture to make the apple pieces smaller.
  • Spoon some sauce on a crepe and fold twice Dust with powdered sugar. Serve.

3 lbs apples, peeled and sliced

1/2 white sugar or 1/2 brown sugar
2 tablespoons sugar

Steps:

  • Set oven to 350 degrees.
  • Grease a 9 x 12 OR a 9 x 13-inch baking pan.
  • In a medium bowl, combine the sugar, eggs, oil and the orange juice; beat well.
  • Combine the flour and baking powder in a small bowl.
  • Add to the egg/oil mixture slowly; kneading in the flour to make a soft dough (you might use less than 3-1/2 cups of flour).
  • Divide the dough in half.
  • Transfer to a lightly floured surface.
  • Roll out into a 9x12 rectangle, and place in the bottom of the baking pan (if using a 13x9in pan, roll out the dough to one more inch).
  • Top with sliced apples (which have been tossed with 1/2 cup sugar and 2 tsp cinnamon).
  • Roll out the remaining dough, and cover the apples with the dough.
  • Sprinkle the dough with 2 Tbsp sugar (or more if desired).
  • Bake for 40-45 minutes, or until lightly browned-- delicious.

3/4 cup sugar
2 tablespoons all-purpose flour
Pinch salt
1 large egg, beaten
1/2 teaspoon vanilla extract
1 cup sour cream
2 cups chopped peeled tart apples
1 unbaked pie shell (9 inches)
STREUSEL TOPPING:
1/3 cup all-purpose flour
1/3 cup packed brown sugar
2 tablespoons cold butter

Steps:

  • In a large bowl, combine the sugar, flour and salt. Stir in the egg, vanilla and sour cream; stir until smooth. Add apples; mix well. Pour into pie crust. Bake at 375° for 15 minutes. Reduce heat to 325° and bake for 30 minutes more. , For topping, combine flour and sugar in a small bowl. Cut in butter until crumbly. 100g caster sugar
100g soft margarine
2 eggs
100g self-raising flour
1tsp baking powder
1 eating apple
1tsp cinnamon
2tsp demerara sugar

Steps:

  • Preheat oven to 180C/gas mark 4/fan 160C. Grease and line a 20cm cake tin.
  • Cream the margarine and sugar together until light and fluffy. In a separate bowl, beat the eggs with a fork.
  • Mix the eggs, a little at a time to the margarine and sugar. Sieve in the flour and baking powder.
  • Spread the mixture into the cake tin.
  • Core the apple and slice thinly. Arrange the apple slices over the cake mix and then sprinkle the cinnamon and sugar on top.
