4 (6-ounce) boneless center-cut pork medallions
Kosher salt and freshly ground pepper
2 tablespoons olive oil
1 large red or white onion, cut in wedges
2 tablespoons apple cider vinegar
1 tablespoon unsalted butter, plus up to 2 tablespoons (optional)
1 cooking apple, like Rome, Gravenstein, or Golden Delicious, peeled, halved, cored, and cut in wedges
2 tablespoons torn fresh sage leaves
1/2 cup low-sodium chicken broth
1 tablespoon whole-grain mustard

Steps:

  • 1. Heat a large heavy-bottomed skillet over medium-high heat. Dry the pork medallions well and season with salt and pepper. Add the oil to the skillet and heat until shimmering. Lay the pork in the pan and cook until browned on the first side, about 4 minutes. Turn and cook until the second side browns, about 3 minutes more. Transfer the pork to a plate, and cover loosely with foil.
  • 2. Add the onions to the skillet, stir and season with salt and pepper. Cover, and reduce heat to medium and cook until soft, about 8 minutes. Add the cider vinegar and stir, scraping up the browned bits that cling to the skillet. Add the onions to the pork.
  • 3. Add the 1 tablespoon butter to skillet, raise heat to medium-high. Add the apples and sage; cook, stirring occasionally, until golden, about 3 minutes. Stir in the broth and mustard, and simmer until the apples soften, about 2 minutes. Return the onions and any accumulated juices from the pork to the skillet. Simmer to thicken slightly, about 2 minutes. (If desired swirl in up to 2 tablespoons of butter to thicken the sauce). Nestle the pork in the onions and heat until just warmed through. Divide the pork among 4 plates and top with the apples and onions. Serve.

4 pounds pork tenderloin, fat trimmed and silver skin removed
4 cups oatmeal stout or other dark beer
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 cup vegetable oil
4 large sweet potatoes, peeled and cut lengthwise into 1/8-inch thick slices
2 tablespoons unsalted butter
4 bunches mustard greens, rinsed
4 shallots, finely chopped
1/2 bunch fresh parsley, chopped
1 sprig fresh thyme
2 cups demi-glace

Steps:

  • Slice the pork into 1/4-inch thick medallions (about 3 ounces each). Place the pork in a large shallow dish. Add 3 cups of the oatmeal stout, the salt and pepper. Cover with plastic wrap and marinate in the refrigerator for at least 4 hours or overnight.
  • Prepare the potatoes: Pour the oil into a deep-fat fryer or a heavy medium saucepan. Heat the oil over medium heat to 350 degrees F. Carefully add the potatoes, several slices at a time into the heated oil and cook for 4 minutes, until crispy. Using a slotted spoon or a French fry skimmer, remove the potatoes from the oil and place on paper towels to absorb any excess oil. Reserve and keep warm in a 300 degree oven.
  • Remove the pork from the marinade; discard the marinade. Pat the pork dry with paper towels. In a large skillet, cook the pork in the butter over high heat for 2 minutes on each side, until brown. Remove the pork from the skillet. Reserve and keep warm.
  • Reduce the heat to medium and add the mustard greens, shallots, parsley and thyme. Saute for 2 minutes, until wilted. Add the remaining 1 cup oatmeal stout to deglaze the pan, loosening any browned bits on the bottom of the pan with a wooden spoon. Stir in the demi-glace and cook over medium to high heat about 5 minutes, until the liquid is reduced by half.
  • To serve, arrange a bed of the mustard greens mixture in the center of each plate. Top with the pork medallions and fried sweet potatoes.

12 (1/2-inch) slices center cut pork, tenderized and pounded with a mallet
Cajun spices, recipe follows
Flour, for dredging
Kosher salt
Freshly ground pepper
3 eggs
2 tablespoons water
Smother Gravy, recipe to follow
Scallions sliced on the bias, for garnish
1/4 cup kosher salt
1/4 cup cayenne powder
1/4 cup paprika
1/4 cup garlic granules
1/4 cup black pepper
2 tablespoons onion granules
2 tablespoons dried oregano
2 tablespoons dried thyme
4 tablespoons unsalted butter
1/4 cup small diced onions
1/4 cup small diced red pepper
1/4 cup small diced celery
1/4 cup brunoised carrot
2 teaspoons chopped garlic
1 tablespoon fresh thyme
1 tablespoon Cajun spices
2 to 4 tablespoons flour
3 cups unsalted chicken stock
2 tablespoons Worcestershire sauce
Kosher salt
Freshly ground black pepper

Steps:

  • In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way.
  • Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F.
  • Season the pork with the Cajun spices, according to your taste. Season the flour with salt and pepper. Whisk the eggs until foamy and add water.
  • Prepare the pork by dredging in the flour, then dipping in the egg wash, then back in the flour again. Fry the pork in batches, until crust is golden, about 3 to 4 minutes. Drain on paper towels to remove any excess oil. Serve with Smother Gravy and garnish with scallions.
  • Mix well. Store in glass or plastic container with lid.
  • Yield: about 1 1/2 cups
  • In a heavy bottom saucepan melt the butter over medium heat, add the onions, and cook for 1 minute before adding the red pepper, celery, carrots, garlic, and the thyme. Cook over low heat for 5 minutes, until vegetables are tender.
  • Turn the heat up to medium and add the Cajun spices and flour. Stirring constantly, saute until you can smell the spices and the flour starts to get a little golden.
  • Pour the chicken stock into the pan while stirring constantly with a whisk. The gravy will start to thicken as it comes to a boil. Add the Worcestershire and reduce the heat to low to prevent the gravy from burning. Allow the gravy to simmer for 5 minutes. Season with salt and pepper, to taste.
  • Yield: 4 cups

1/2 cup apple juice
1/2 cup chicken broth
1 tablespoon brown sugar
1 1/2 teaspoons cornstarch
1/2 teaspoon salt
1/4 teaspoon dried rubbed sage
1/8 teaspoon fresh coarse ground black pepper
1 (1 lb) pork tenderloin, trimmed
1 tablespoon flour
4 teaspoons olive oil, divided
cooking spray
1/2 cup finely chopped onion
1 cup thinly sliced peeled apple
3/4 cup fresh cranberries
fresh sage sprig (optional)

Steps:

  • Combine first 7 ingredients in a small bowl and stir well.
  • Cut pork crosswise into 8 pieces.
  • Flatten each piece to 3/4-inch thick using a meat mallet or rolling pin.
  • Coat each piece with flour, shaking off excess.
  • Heat 3 teaspoons olive oil in a large non-stick skillet coated with cooking spray over medium-high heat.
  • Add pork and saute 2 1/2 minutes on each side or until browned.
  • Remove from pan.
  • Add 1 teaspoon oil to pan.
  • Add onion, cover, reduce heat, and cook 5 minutes or until golden brown, stirring frequently.
  • Return pork to pan; add juice mixture, apple and cranberries.
  • Bring to a simmer, cover and cook 3 minutes or until cranberries pop and pork is cooked through, stirring occasionally.
  • Garnich with sage sprigs.
