Deluxe Twice Baked Potatoes with Shrimp image

A delicious and fancy side dish that's great with a steak for surf and turf.

4 (6-8 oz) russet potatoes, scrubbed and pricked all over with a fork
vegetable oil, to coat potatoes
4 slices bacon
1 pound large shrimp, peeled and deveined, tails removed
1 1/2 teaspoons Cajun seasoning
1 teaspoon salt, plus a pinch
4 green onions, thinly sliced, white and light green parts; dark green parts chopped, for garnish
1 cup cheddar cheese, grated
6 tablespoons butter, softened
1/3 cup sour cream
4 tablespoons mayonnaise
3/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 450 °F.
  • Rub the potatoes with vegetable oil and put them on a baking sheet. Bake the potatoes until tender, about 1 hour.
  • While the potatoes are baking, cook the bacon in a skillet over medium-high heat until crisp, about 7 minutes. Transfer the slices to a paper towel-lined plate to drain, then crumble. Pour off all but 3 tablespoons of bacon grease from the skillet.
  • Cut the shrimp into thirds. Reheat the bacon grease over medium-high heat. Add the shrimp, Cajun seasoning, and a pinch of salt. Cook until the shrimp are opaque, stirring constantly, 2 to 3 minutes.
  • When the potatoes are done, let them cool slightly (leave the oven on). Slice off the top third of each potato and carefully scoop out the flesh into a bowl. Scoop out the potato from the top third, and add that to the bowl, then discard the skin. Leave about 1/4-inch border of potato inside the skin. Mash the potato flesh with 1 teaspoon salt, the green onion, cheese, butter, sour cream, mayonnaise and black pepper. Stuff the potato skins with the filling, mounding any extra on top. Divide the shrimp on top of the potatoes and sprinkle with the crumbled bacon. Return the potatoes to the oven on the baking sheet and bake them until heated through, about 15 minutes. Remove the potatoes from the oven, sprinkle with the reserved chopped green onions and serve.

8 large baking potatoes
2 tablespoons olive oil
1 tablespoon plus 2 teaspoons kosher salt, divided
1 (16-ounce) package bacon, chopped
½ cup butter
4 jalapeños, seeded and minced
1 (8-ounce) package shredded sharp Cheddar cheese
1 (8-ounce) package shredded Monterey Jack cheese
1 cup sour cream, plus more for serving
1 teaspoon ground black pepper
Sliced green onion
Chopped fresh parsley

Steps:

  • Preheat oven to 400°. Line a rimmed baking sheet with foil. Rub potatoes with oil, and sprinkle with 1 tablespoon kosher salt. Place on prepared pan. Bake for 1 hour or until potatoes are very tender. Let stand until cool enough to handle. Meanwhile, in a large skillet, cook bacon over medium heat until browned and crisp. Let drain on paper towels; reserve ½ cup bacon in a small bowl. Pour off drippings, and wipe skillet clean. In same skillet, melt butter over medium heat; add jalapeños, and cook, stirring occasionally, for 4 minutes or just until tender. Cut off top-third of each potato. Scoop pulp from each potato into a large bowl, leaving a ¼-inch-thick shell. Return potato shells to baking sheet. To pulp, add cheeses, sour cream, pepper, cooked bacon, jalapeño mixture, and remaining 2 teaspoons salt. Using a potato masher, mash potato mixture to desired consistency. Spoon mixture into potato shells. Bake for 30 minutes or until heated through. Top potatoes with sour cream, green onion, parsley, and reserved bacon.

4 garlic cloves, minced

5 lbs unpeeled medium shrimp
2 lemons, thinly sliced
French bread, for dipping

Steps:

  • Preheat the oven to 400 degrees F.
  • Stir together the butter, Worcestershire sauce, lemon juice, pepper, hot sauce, garlic, and salt. Pour half this mixture into a large heatproof dish.
  • Layer half the shrimp and half the lemon slices in the dish; then form a second layer with the remaining shrimp and lemon slices, and pour remaining sauce into the dish.
  • Bake, uncovered, for 20 minutes, or until the shrimp are pink, stirring twice. Pour off the sauce into individual serving dishes. Serve the shrimp with plenty of French bread for dipping in the spicy butter sauce.

Twice-Baked Shrimp Stuffed Potatoes image

Cheesy and creamy baked potatoes with tasty shrimp.

6 large baking potatoes
for coating vegetable oil
1 stick at room temperature butter
1 cup sour cream
1 lb sauteed and peeled shrimp
8 oz grated, plus more for sprinkling cheddar cheese
for sprinkling paprika

Steps:

  • Preheat the oven to 350 °F. Cover a baking sheet or pan with aluminum foil.
  • Begin by washing the potatoes, drying them and gently pricking them with a fork on the sides. Coat each potato with vegetable oil, place on the prepared baking sheet and bake for about 1 hour.
  • Remove the potatoes from the oven and slice the top third off of each potato. Gently scoop out the potato and place in a large bowl. Place the butter in the bowl. Using a mixer on high, mix together, and then add the sour cream and salt and pepper to taste.
  • Chop the shrimp into large pieces. Fold in the shrimp and cheese into the mixture. Gently stuff the mixture back into the potato shells, making sure not to break them. Pile the mixture as high as you can on top of the potato shells. Sprinkle each potato with more cheese and some paprika for color. Bake in the oven until browned on top, 20 to 25 minutes.

When I saw Paula demonstrate this, I knew I had to try it. Believe me, it is yummy -- thick and potato-y. And the shrimp are a tasty surprise! Paula says if you don't have shrimp, you can add corn instead. You may use whole milk, reduced fat milk (2 percent) or low-fat milk (1 percent) in this recipe

2 cups salt water
1 lb medium shrimp
1/8 lb butter (1/2 stick)
1 small onion, diced
2 medium carrots, diced about the same size as the onion
2 tablespoons all-purpose flour
8 medium russet potatoes, peeled and cubed
4 cups milk
2 chicken bouillon cubes, dissolved in 1/2 cup hot milk
1 cup half-and-half
1 teaspoon salt
1/4 teaspoon pepper
crumbled bacon bits, for garnish
grated sharp cheddar cheese, for garnish
dill sprigs, garnish (optional)

Steps:

  • In a small saucepan, bring the salted water to a boil. Add the shrimp all at once and stir well. Watch the shrimp closely; as soon as they all turn pink, about 2 or 3 mintes, turn off the heat and drain. The shrimp should be slightly undercooked. When they are cool, peel them and chop roughly into big chunks -- or not. Paula likes to leave her shrimp whole, so this is your preference.
  • In a 4-quart saucepan, melt the butter and saute the onion and carrots until both are slightly tender, about 5 minutes. Do not allow to take on color. Whisk in the flour and cook for 1 minute. Add the potatoes, milk, and dissolved bouillon cubes. Cook over medium heat for 15 minutes, until the potatoes are very soft and some of them have begun to dissolve into mush. Mine took longer to reach this point. I suggest covering the pot during this time. Add the half-and-half, salt and pepper.
  • When heated through, serve soup sprinkled with bacon bits and grated cheese. Garnish with dill sprigs, if desired.
