QUICK AND EASY BACON, EGG AND CHEESE
Any New Yorker will tell you a good bacon, egg and cheese (BEC) sandwich is the best way to start your day, and most likely you already have everything you need in your pantry to whip one up. The key elements to a great BEC are the melted cheese, scrambled egg that nestles perfectly onto the bread without falling off and salty crispy bacon. To make sure the cheese stays melted, we fold it into the center of the eggs just as they finish cooking so it stays warm. We found that by preparing eggs like an omelet ''package'' instead of scrambling them and topping them with cheese allowed us to adjust the size of our eggs to perfectly fit the size of our bread and hold our cheese in the ideal melted state. When you can't get to your corner deli or coffee cart, you can whip up this breakfast icon in the time it takes to walk out the door.

Steps:
- Whisk the eggs, milk, a pinch of salt and a couple of grinds of black pepper in a small bowl until smooth and combined. Heat the vegetable in a medium non-stick skillet over medium-low heat.
- Once the skillet is warm, pour the egg mixture in and allow it to cook undisturbed until the edges are set, about 1 minute. Use a spatula to gently lift the edges of the egg and allow the uncooked egg to run underneath. Once the egg is fully set, about 4 minutes, place the slices of cheese in the center of the egg. Carefully lift each side of the egg and folder it over the cheese to form a square package about the size of your toasted bread. Flip the eggs over gently, keeping the package intact, and allow the folded side to cook and melt the cheese, about 30 seconds more.
- Assemble the sandwich by layering the bacon on 1 slice of toast and then topping with the warm eggs. Top with the remaining slice of toast and serve immediately.
BACON, EGG, AND CHEESE BREAKFAST BURRITO RECIPE
Soft scrambled eggs, melted cheddar cheese, crisply browned potato hash, guac, sour cream, hot sauce, and bacon, all piled into a tender flour tortilla.

- In a medium bowl, whisk eggs with a large pinch of salt until homogenous and no visible egg whites remain. Set aside.
- In a medium cast iron or stainless steel skillet, heat oil over medium-high heat until shimmering. Add potatoes, season with salt, and cook, stirring only occasionally, until beginning to brown, about 8 minutes. Lower heat to medium, stir in onion, and continue to cook, stirring occasionally to prevent scorching, until potatoes are golden and crisp and onions are browned and tender, about 10 minutes longer. Season with additional salt and pepper to taste and set aside.
- In a medium nonstick skillet, melt butter over medium heat until foaming. Add eggs and cook, stirring constantly with a rubber spatula, until eggs have formed curds but are still runny, 1 to 2 minutes. Stir in cheese and continue to cook, stirring constantly, until cheese is melted and eggs are soft and fluffy, about 1 minute longer. Remove from heat.
BREAKFAST ESSENTIALS: EGG, BACON, CHEESE TACOS
Had some unexpected overnight guests, so I worked on a fun, unique breakfast to serve them. Came up with what I call my mini flour tortilla hack, and stuffed them with all things yummy. You can vary the ingredients to your particular tastes, and have at it. Easy/peasy to make... If you have your ingredients, you will have them...

- 1. PREP/PREPARE
- 2. Gather your ingredients (mise en place).
- 3. Place a rack in the middle position, and preheat the oven to 350f (175c).
- 4. Drape the taco over the wire rack, and shape until the edges are pointing down. Cook until the tortilla begins to crisp, and holds its form. Remove from the oven, and reserve.
- 5. Place a skillet over medium heat, and add the diced bacon.
- 6. Cook to your desired crispness, then remove from pan, and drain on paper towels.
- 7. Remove all but a teaspoon of grease from the pan, and add the whisked eggs.
- 8. Scramble until almost cooked, then remove from the heat, add the bacon and combine.
- 9. Chef's Note: Season with a bit of salt and pepper, if using.
- 10. THE ASSEMBLY
- 11. Add the salsa to the bottom of the taco. Stuff with the egg/bacon mixture. Top with the cheese. If you want the cheese melty (up to you), stick it under a broiler for about 20 seconds.
- 12. PLATE/PRESENT
- 13. I like to serve it with some sliced tomatoes, sprinkled with a bit of salt and pepper; however, that is totally up to you. Enjoy.
- 14. Keep the faith, and keep cooking.
BACON AND EGG TACOS
Some bacon and eggs on a flour tortilla for breakfast. Serve with salsa if desired.

- Whisk eggs together in a bowl; stir in bacon.
- Melt butter in a skillet over medium heat. Add egg mixture; cook and stir until eggs are completely set, 2 to 3 minutes. Stir in American cheese, salt, and pepper.
- Wrap tortillas in damp paper towels; microwave until warmed through, 30 seconds to 1 minute.
- Spoon 1/4 cup egg mixture into the center of each tortilla; fold sides to cover. Serve with salsa.

A fairly standard breakfast taco. I like to put in it in the microwave for 1 minute or grill on my George Foreman Grill to get the cheese all nice and melty.

- Mix egg, bacon, and pepper together.
- Pour egg/bacon into the skillet.
- Line the bottom of the tortilla with cheese and picante sauce.
- Cook two eggs like you're making scrambled eggs.
- Once the eggs are done (2-5 minutes), scoop out onto the cheese and picante sauce.
