THE BEST GRILLED ASPARAGUS
We found that the best way to grill asparagus is to lay it right on the grill grates at an angle--no foil packet or grilling basket necessary. We jazzed ours up with tangy, creamy feta and fresh mint. To get a good char, be sure to use medium-sized asparagus -- no pencil-thin stalks here!

- Prepare a grill for medium heat. Chop the tough, woody ends off the asparagus (about 1 inch) and peel another inch of the stalks.
- Whisk the lemon juice, olive oil, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Add the asparagus and toss until well coated.
- Put the asparagus on the grill at an angle so the stalks don't fall through the grates. Grill, flipping halfway through cooking, until the asparagus begin to char, the pointy ends start to crisp and the stalks are just tender, 3 to 5 minutes. Remove to a platter and sprinkle with the feta and mint.

- 1. In a large bowl, stir together the yeast & warm water, add honey and set aside for 10 minutes.
- 2. Meanwhile in a glass measuring cup, combine the cold water, oil and salt. Add the cold water mixture to the yeast and stir in flour.
- 3. Knead the dough on a heavily floured board until smooth and elastic (about 8 minutes)
- 4. Put the dough in a lightly greased bowl and turn to coat. Let the dough rise, covered loosely with plastic food wrap in a warm, draft free place for 1 hour.
- 5. Preheat oven to 425 degrees.
- 6. While dough is rising, whisk together 2 Tbsp. flour and skim milk until perfectly smooth. Pour all ingredients for white sauce into small saucepan and heat over medium heat until cheese has melted and sauce is thickened. Remove from heat, salt to taste. Set aside.
- 7. Press your crust into a greased pizza pan.
- 8. Ladle and spread your white sauce onto pizza crust and sprinkle with 1/2 teaspoon minced garlic.
- 9. Top with a layer of grilled chicken, then a layer of mushrooms and asparagus.
- 10. Sprinkle with mozzarella cheese
- 11. Bake until crust and cheese are golden brown, usually 12-15 minutes.

- Preheat oven to 475°F with a rack in lower third. Brush a 12-inch ovenproof skillet with oil. Place dough in skillet; turn to coat. Press evenly into bottom of skillet, leaving a 1/2-inch border undisturbed. Cover with plastic wrap and let stand until soft and puffy, about 20 minutes.
- Toss chicken with salsa and sour cream; season with salt and pepper. Layer ingredients onto dough in this order: cheese, chicken mixture, cilantro, corn, scallions. Drizzle with oil; season with salt and pepper.
- Bake until crust is golden brown and cheese is bubbly, about 25 minutes. Let stand 10 minutes. Slice and serve, sprinkled with more cilantro and topped with more salsa and dollops of sour cream.

- Place a grill-safe pizza stone (see Cook's Note) that is at least 14 inches in diameter on a grill. For gas grills with 3 or more burners: Turn all the burners to high heat and close the lid. Let the stone heat until the internal temperature of the grill is 500 degrees F, about 15 minutes. For charcoal grills: Fill a chimney starter with enough charcoal for high heat, then light it (be sure to consult the grill manufacturer's guide for the best results for high-heat cooking). Close the lid and let the stone heat until the internal temperature of the grill is 500 degrees F, about 30 minutes.
- Meanwhile, make the marinade. Mix the olive oil, chili powder, chipotle in adobo sauce, cumin, garlic powder, lime juice, 2 teaspoons salt and a few grinds of black pepper in a medium bowl. Transfer half of the mixture (about 1/4 cup) to another medium bowl. Add the peppers and onions to one bowl and mix to combine. Add the chicken to the other bowl and mix to combine.
- Place the chicken on one half of the pizza stone and the peppers and onions on the other half. Close the grill and cook until the chicken is cooked through, has a nice char on the bottom and the vegetables are softened and caramelized on the bottom, 10 to 12 minutes (3 to 5 minutes if using a charcoal grill).
- Transfer the chicken and vegetables to a platter and serve in the tortillas with the guacamole, pico de gallo, hot sauce and sour cream, if desired.

- In large bowl, combine 1 cup flour, yeast, thyme, salt and sugar. Add water; beat until blended.
