- Heat a medium skillet with the butter over medium heat. Add the peaches and the juice of 1/2 lemon, and cook until tender and lightly golden, 10 minutes. Turn off the heat.
- While the peaches cook, heat 1 tablespoon extra-virgin olive oil, a turn of the pan, in a large skillet over medium-high to high heat. Cut the chicken breasts in half across the center of each breast to make 4 equal portions. Add the chicken breasts and thighs to the pan and season with salt and pepper, to taste. Cook until the chicken is cooked through, about 12 minutes, then remove to a plate and cover with foil.
- Drizzle the pan with the remaining extra-virgin olive oil, half a turn of the pan. Add the chopped shallot, and the ginger, and cook for 1 to 2 minutes. Stir in the stock, the preserves, hot sauce and Worcestershire sauce and season with black pepper, to taste. Cook over medium heat for a couple of minutes to thicken. Arrange the chicken and peaches on a platter and douse with peach sauce. Portions are 1 piece of light meat and 1 thigh per person.
BAKED CHICKEN WITH PEACHES

This dish is not only easy and quick, it serves up beautifully as well. My family loves it. Tip: For a delicious sauce to serve over the chicken and peaches, mix 1/2 tablespoon cornstarch with 1/2 cup cold water and pour mixture into cooking juices. This mixture will thicken and become a sauce to pour over the chicken and peaches.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Place chicken in the prepared baking dish, and sprinkle with 1/2 cup of brown sugar. Place peach slices over chicken, then sprinkle with remaining 1/2 cup brown sugar, ginger, cloves, and lemon juice.
- Bake for about 30 minutes in the preheated oven, basting often with juices, until chicken is cooked through and juices run clear.

SAUCY CHICKEN AND PEACHES

- Heat oil in large nonstick skillet over medium heat until hot. Add chicken; cook 4 to 5 minutes, or until lightly browned. Turn chicken; cover and cook an additional 4 to 5 minutes or until chicken is for- tender and juices run clear. Remove from skillet; cover to keep warm.
- Meanwhile, drain peach syrup into glass measuring cup; add water to make 1 cup liquid. Stir in cornstarch, brown sugar, vinegar, soy sauce and basil.
- Pour liquid into hot skillet; cook and stir until thickened and bubbly. Gently stir in peach slices and chicken. If desired, serve with hot cooked rice.

CHICKEN WITH PEACH SAUCE
This simple and flavourful dish is best made when peaches are in season.

Steps:
- Cut each breast lengthwise in 4 to 6 strips of equal size.
- In a small saucepan, boil half of the peaches, 150 mL (⅔ cup) of the light syrup or juice, the stock and the ginger for 5 minutes over high heat.
- Remove from heat and puree sauce in the blender or in the saucepan using a stick blender.
- Return sauce to the heat. In a small bowl, stir cornstarch with a little bit of the sauce to dissolve and add to saucepan. Cook, stirring, until thickened.
- When the sauce is thick and smooth, remove from heat and add cold butter, stirring with a wooden spoon.
- In a large frying pan, cook chicken in oil over high heat for about 15 minutes or until the internal temperature reaches 77°C (170°F).
- Cut the remaining peaches in a fan, top with chicken strips and sauce. Serve with basmati rice and carrots on the side.

SAVORY PEACH CHICKEN
Steps:
- Heat the oil in a large skillet over a medium-high heat. Season the chicken on both sides with salt and pepper, add to the skillet and cook until browned, about 2 minutes per side. Meanwhile combine the brown sugar, soy sauce, rice vinegar and orange juice in a small bowl and set aside. When the chicken is browned, transfer to a plate and set aside.
- Add the ginger and garlic to the pan and cook, stirring, for 30 seconds. Add the chicken broth, the soy sauce mixture, and the peaches to the pan. Turn the heat up to high and cook, uncovered, for about 6 minutes, stirring occasionally until the sauce is nicely thickened and the peaches soften. Add the chicken back to the pan with the sauce, turn the heat down to moderate-low, cover and cook for about 5 minutes, or until chicken is cooked through.
- In the meantime, toast the almonds in a dry skillet over a medium-high heat stirring frequently, until golden brown and fragrant, about 2 minutes.
- Serve the chicken topped with the sauce and sprinkled with the toasted almonds.
BYRDHOUSE SPICY CHICKEN AND PEACHES
This was a recipe of my mom's that I manipulated in true Byrdhouse form. Everyone loves this one, even the kids if you take it easy with the red pepper. I always serve this on broad, flat noodles.

- Bring peaches, garlic, orange juice, vinegar, sugar, nutmeg, red pepper flakes, and basil to a boil in a saucepan over high heat. Reduce heat to medium-low, and simmer for 15 minutes, stirring occasionally.
- Meanwhile, season the chicken to taste with salt and pepper, then dust with flour and shake off the excess. Melt the butter in a large skillet over medium-high heat. Add the chicken, and cook until lightly brown on both sides, but still pink in the center.

- In a shallow dish, combine flour and half of the salt and pepper, set aside 2 teaspoons for sauce.
- In remaining flour mixture, coat chicken well; shake of excess.
- In a large frypan, heat oil over medium heat; cook chicken, turning once, for 15 to 20 minutes or until no longer pink inside.
- Transfer to plate and keep warm.
- Meanwhile, peel and pit peaches; cut into wedges.
- Add onion, garlic and reserved flour mixture to skillet; cook, stirring for 3 minutes.
- Pour in stock and lemon juice; bring to boil, stirring to scrape up any brown bits from bottom of pan.
- Add peaches; reduce heat to medium and cook, stirring for 3 minutes.
- Stir in basil and remaining salt and pepper.
- Pour over chicken to serve.

- Season chicken with salt and pepper
- Sear chicken in a pan with olive oil
- Arrange chicken in a roasting tray and pour in the wine and chicken stock to at least cover the chicken pieces. Add garlic and rosemary.
- Cover with foil and roast for 1 hr at 140 C, or until done.
- remove foil and add peaches, increase heat to 180 C and roast for 10-15mins
BAKED CHICKEN WITH PEACHES AND SWEET POTATOES
This is a very nice recipe I found on the web. The chicken comes out lightly sweet, it's low in fat, and it's very easy to prepare. I enjoyed it very much, will definitely make it again, and I hope you enjoy it too. Note: Although the recipe calls for peeling the potatoes, I leave the peel on.

- Arrange chicken in one layer in covered dish (I spray the pan with non-stick spray).
- Scatter potatoes and onions around chicken, sprinkle with salt and pepper, cover and bake for 30 minutes.
