We love King Cakes in the Test Kitchen, but don't make them often because the process can take a while. Well, we may be making them more after trying this easy King Cake recipe. It's simple and delicious. The dough is nice and soft. The filling is slightly spicy thanks to the nutmeg (but not overpowering). With a slight citrus flavor, the glaze is fantastic. Even if you don't celebrate Mardi Gras, we suggest giving these a try. You will not be disappointed.

1 can(s) Hungry Jack Buttermilk Biscuits
2 tablespoon(s) cinnamon
2 teaspoon(s) nutmeg
4 tablespoon(s) sugar
- butter or margarine
- lemon rind, grated
GLAZE
3/4 cup(s) powdered sugar
1 teaspoon(s) lemon juice
- water
- purple, green and gold sugars

Steps:

  • Preheat oven 350 degrees.
  • Take each biscuit, flatten and roll to oblong shape.
  • Spread amount of butter or margarine on each biscuit.
  • Combine cinnamon, sugar, and nutmeg in a small bowl.
  • Sprinkle biscuits with sugar, cinnamon, and nutmeg.
  • Grate lemon peel and sprinkle over biscuits.
  • Roll each biscuit beginning at wide end.
  • Close each end forming a small donut shape.
  • Place in round cake pan or cookie sheet.
  • Bake 350 for 15-20 minutes. Cool completely.
  • For glaze, combine the confectioners' sugar, lemon juice, and enough water to achieve desired consistency.
  • Spread over cakes.
  • Sprinkle with colored sugars.

Just as tasty as the big cakes, and really cute on a platter.. I made these for a friend's brunch, and her verdict was, "insanely delicious!" Hide a tiny plastic baby in one of them for extra good luck to whomever gets it. Note: prep time includes rising time.

1/2 cup milk
1/2 cup sugar
1 1/2 teaspoons salt
1/4 cup butter, melted
1/2 cup warm water (105-115 degrees)
2 1/4 ounces pkg dry yeast
2 large eggs, beaten
4 1/2 cups all-purpose flour
1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1/2 teaspoon almond flavoring
additional sugar to make colored sprinkles
glaze
1 cup confectioners' sugar
1 tablespoon cream
1/2 teaspoon vanilla

Steps:

  • Proof yeast in warm water until bubbly, about 5 minutes.
  • Mix raised yeast with rest of roll dough ingredients, flour your hands, and knead until dough is elastic (will still be sticky! Keep flouring your hands).
  • On floured surface, roll dough out into an 8" x 12" rectangle,
  • Blend cream cheese, sugar, and almond flavoring. Spread mixture atop dough, all the way to edges. Slice width-wise into 12 one-inch strips.
  • Carefully roll up into pinwheels and place in nonstick muffin tins (I like to use paper muffin cups; gold or silver ones are pretty for Mardi Gras) and let rise in warm place until double in volume.
  • Bake at 350 until tops are slightly golden.
  • Mix glaze well, and spoon over warm muffins. While the glaze is still sticky, mix three small bowls of colored sugar---yellow, green, and purple, using food coloring. Sprinkle over tops.

  • Preheat oven to 350 degrees F. Spray mini muffin pans (you will need 2) with baking cooking spray. Set aside.
  • Unroll crescent rolls and place on cutting board. Separate at vertical perforations, pinching the diagonal perforations together well. You should have 4 rectangles. Sprinkle each rectangle evenly with about 1 1/2 teaspoons cinnamon sugar and 1 tablespoon of the pecans, if using. Starting at long end roll up jelly roll style pinching seam well. Repeat with each rectangle. Cut into 28 total pieces.
  • Place 2 pieces in each mini muffin cup. Snuggle them in together. Bake at 350 degrees F. for 10 - 12 minutes, until golden. Remove pans to cooling rack. Cool completely in pan. Remove when cool.

  • For the Dough: Add the dough ingredients to the bread machine in the order listed. Select the dough cycle, and start the machine. Check the dough after five minutes of mixing, and add 1 to 2 more Tablespoons of water or flour if the dough is too dry or wet. If making the night before, remove dough to large oiled bowl as soon as the kneading finishes. Cover with plastic wrap and refrigerate. If using the same day, allow the machine to complete the dough cycle. Makes approximately 32 ounces of dough.
  • For the Fillings: Beat 8 ounces of cream cheese with ½ cup confectioners' sugar until smooth. Set aside. Mix 1/2 cup granulated sugar, 2 teaspoons cinnamon and 4 Tablespoons melted butter until combined. Set aside.
  • Place dough on a floured surface. Divide into 4 pieces, 8 ounces each. Form each piece into a 12-inch log. Roll into a 15-inch x 6-inch rectangle. Trim the edges as needed. Spread the cream cheese mixture on the dough to within 1-inch of the edges. Spread cinnamon/sugar mixture on the cream cheese to within 1-inch of the edges of the dough.
