Ingredients

crushed ice
1-1/2 oz cuervo gold tequila
4 oz orange juice
splash grenadine

Steps:

1. Note: Fresh squeezed orange is best, but if you don't have that available, use Minute Maid no pulp pure orange juice (not frozen).
2. Fill margarita or 8 ounce wine glass with crushed ice.
3. Pour tequila and orange juice over ice; then gently stir to blend
4. Very slowly and carefully dribble the grenadine on top of the mixture **** DO NOT STIR!!
5. As the heavier grenadine begins to settle to the bottom, it will create streaks that simulate an Acapulco sunrise.

A light, somewhat tart cocktail, that blends the flavors of lime, orange and black currant with tequilla. If you like tequilla, I think you'll enjoy this. Mix up a shaker or 2, sit back, and imagine yourself in a beach chair watching the Acapulco sun rise.

Ingredients

2 ounces tequila (good quality)
1 tablespoon lime juice
1 tablespoon Curacao (such as Triple Sec)
2 tablespoons creme de cassis
1 cup club soda
lime slice (to garnish)

Steps:

Into a cocktail shaker, pour tequila, lime juice, curacao, creme de cassis, and plenty of crushed ice.
Shake until well combined.
Fill a tall glass half way with ice.
Strain drink into the glass.
Pour some club soda on top.
Stir and garnish with the slice of lime.

This is the recipe for the rice that is served at Acapulco Restaurant. It's amazingly easy and VERY yummy.

Ingredients

1 large onion
2 cups long grain rice
2 ounces lard or 2 ounces chicken fat
2 cups chicken broth
1 cup tomato juice
1 cup diced tomato
1 tablespoon parsley, chopped
1 teaspoon garlic, minced
1 dash ground cumin
1 teaspoon salt
1 dash white pepper

Steps:

Sauté onion and rice in lard until browned, 6 to 10 minutes, stirring constantly.
Turn into baking dish.
In large saucepan, combine broth, tomato juice, tomatoes, parsley, garlic, cumin and salt and pepper and bring to boil.
Add broth to rice.
Cover and bake at 350 degrees F for 20 to 30 minutes or until rice is fluffy.
Use fork to fluff rice.
