SMOKY PAPRIKA HOME FRIES
Steps:
- Heat the oil in a cast iron pan, on the grill or stove, over medium heat. Add the onion and cook until caramelized. Add the potatoes, and garlic and cook until warmed through. Stir in the paprika and parsley and transfer to a serving bowl. Garnish with cilantro sprigs, if desired, and serve.

Steps:
- Preheat oven to 400 degrees.
- In a small bowl mix together all the spices.
- Peel the potatoes and cut them into wedges. Place potatoes in a large sauce pan of water. Slowly bring them to a boil and let them cook until about 3/4 of the way done. Drain well, place the potatoes on a very clean kitchen towel. Using another towel, pat as dry as you can get them.
- Toss potato wedges in olive oil. Add spices, toss gently to coat.
- Arrange, in one layer, on a baking sheet that's been sprayed with PAM. Bake for 30 minutes, or until potatoes are golden and crisped. Turning once half way through the cooking time.

- Preheat oven to 400°. Cut each potato into 12 wedges. In a large bowl, combine oil, paprika, salt and garlic powder. Add potatoes; toss to coat., Transfer to a greased 15x10x1-in. baking pan. Bake until tender, 40-45 minutes, turning once.

- Heat 3 tablespoons oil in a large nonstick skillet over medium-high heat. Cook potatoes, covered, for 5 minutes. Season with salt. Add remaining 2 tablespoons oil and the onions; stir. Reduce heat to medium, and cook, covered, for 5 minutes more. Uncover, and cook, tossing often, until potatoes and onions begin to brown, about 8 minutes.
- Sprinkle with pimenton, and cook until potatoes and onions are golden brown and tender, about 8 minutes more. Toss with parsley, and season with salt.
