CHIC CHAMPAGNE FRUIT CUP
Chic and refreshing! Serve this delightful champagne fruit cup garnished with mint sprigs, lemon balm, or fresh edible flowers such as violets or rose petals. Would be lovely for a garden party or a ladies luncheon. Courtesy 'Famous French Cookery' by Woman's Day.

Steps:
- Drain mandarin orange sections and cherries. Combine with grapes and apples. Cover and chill until serving time.
- At serving time spoon fruits into saucer shaped champagne or sherbert glasses. Fill glasses with chilled champagne.
- Garnish these elegant champagne fruit cups with a mint sprig, lemon balm, or fresh edible flowers such as violets or rose petals.
- Makes 8 to 10 servings. Salute!

CHAMPAGNE ZABAGLIONE WITH FRESH FRUIT COMPOTE

- For zabaglione:
- Whisk Champagne, sugar, yolks and corn syrup in large metal bowl to blend. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until mixture has tripled in volume and candy thermometer registers 160°F., about 10 minutes. Remove from over water. Using electric mixer, beat zabaglione until completely cool, about 5 minutes.
- Beat cream to soft peaks in medium bowl. Fold cream into cooled zabaglione. Chill until ready to use. (Can be prepared 1 day ahead. Cover and keep refrigerated. Stir lightly to lessen texture before serving.)
- For fruit compote:
- Using small sharp knife, cut off peel and white pith from oranges. Working over bowl, cut between membranes to release orange segments. (Oranges can be prepared 6 hours ahead. Cover; refrigerate.)
- Using tip of vegetable peeler, cut out eyes from pineapple; discard eyes. Dice pineapple. Combine pineapple, quartered strawberries, kiwis and pear in large bowl. Mix in oranges.
- Spoon fruit into 6 stemmed glasses. Pour 1 tablespoon Champagne over fruit in each goblet. Top fruit with zabaglione. Garnish each serving with whole strawberry and serve immediately.

One of my favorite ways to make fruit salad. You can use any fruit you like. This is what I usually use when making it.

- Combine the champagne and honey in a small bowl and microwave for 30 seconds.
- Pour the mixture over the fruit and toss to coat well. Serve slightly chilled.

- Heat 1 cup champagne in a saucepan to a boil and mix in the sugar to completely dissolve. Remove from heat and mix in the gelatin mixture. Pour in the remaining champagne, mix thoroughly and set to cool over a bowl of ice.
- Pour cooled mixture into wine or dessert glasses and chill for 45 mins to an hour till it's just barely setting. Arrange the fruit equally in all the glasses and chill till for 3-4 hours till completely set.
