GREEK ARTICHOKE APPETIZER

I got this recipe from my mother. This is one of the many great recipes my family and friends love.

Number Of Ingredients 12

2 (6 ounce) jars marinated artichoke hearts, divided
1 small onion, finely chopped
1 ½ cloves garlic, minced
4 large eggs, beaten
¼ cup dry bread crumbs
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ teaspoon dried oregano
½ teaspoon hot pepper sauce (such as Tabasco®)
¾ pound sharp Cheddar cheese, shredded
2 tablespoons minced fresh parsley
1 teaspoon grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Grease a 10x7x2-inch baking dish.
  • Drain marinade from one jar of artichoke hearts into a skillet.
  • Pour artichoke hearts from drained jar and the entire second jar (marinade and artichoke hearts) into a food processor. Blend until artichoke hearts are coarsely chopped and set aside.
  • Cook and stir onion and garlic in the skillet with marinade over medium-low heat until onions are light brown, 5 to 7 minutes. Remove from heat and transfer to a large bowl.
  • Stir onion mixture, eggs, bread crumbs, salt, black pepper, oregano, and hot pepper sauce together until well mixed.
  • Stir sharp Cheddar cheese, parsley, Parmesan cheese, and chopped artichoke heart mixture into the onion mixture. Pour mixture into prepared baking dish.
  • Bake in preheated oven until top is golden, 25 to 30 minutes. Cut into 1-inch squares and serve warm or cold.

1 bag (16 ounces) frozen spinach, (thawed and squeezed dry)
1 can (15 ounces) artichoke hearts, (drained and chopped)
1 medium red onion, (finely minced)
1/8 teaspoon freshly grated nutmeg
3 tablespoons butter, (melted)
3 large eggs, (lightly beaten)
1 cup milk
1 cup all-purpose flour
1 teaspoon baking powder
1 cup grated Parmesan cheese
1 teaspoon coarse salt
½ teaspoon black pepper

Steps:

  • Preheat oven to 350-degrees.
  • In a large bowl, combine the spinach, artichokes, onion, and nutmeg.
  • In a medium bowl, whisk together the butter, eggs, and milk.
  • Pour the wet ingredients into the spinach mixture and stir to combine.
  • Add the flour, baking powder, and Parmesan cheese into the spinach mixture and stir until just combined.
  • Pour the mixture into a 8 x 8 baking dish that has been sprayed with cooking spray.
  • Bake in a preheated oven for approximately 35-40 minutes or until the center is set.
  • Remove from oven and allow to cool slightly before cutting into appropriate sized squares.
  • Serve warm or at room temperature.

2 (8 ounce) packages refrigerated crescent rolls
1 (15 ounce) can artichoke hearts, drained and chopped
¾ cup grated Parmesan cheese
¾ cup shredded mozzarella cheese
½ cup creamy salad dressing (such as Miracle Whip®)
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Unroll crescent roll dough into rectangles; press into the bottom and sides of a 15x10x1-inch jelly roll pan or baking sheet. Seal perforations together.
  • Bake in the preheated oven until lightly browned, about 10 minutes.
  • Combine artichoke hearts, Parmesan cheese, mozzarella cheese, creamy salad dressing, and garlic powder in a bowl until well mixed.
  • Spread creamy artichoke mixture over the browned crust.
  • Return to oven and bake until cheese is melted and beginning to brown, about 15 minutes. Let cool for 5 minutes. Cut into desired shapes and serve.

1 tablespoon margarine
1 (8 ounce) package fresh mushrooms, chopped
1 onion, chopped
1 clove garlic, minced
4 eggs, beaten
¼ cup bread crumbs
¼ teaspoon salt
⅛ teaspoon hot pepper sauce (such as Tabasco®)
⅛ teaspoon ground black pepper
⅛ teaspoon dried oregano
⅛ teaspoon garlic salt
2 (6.5 ounce) jars marinated artichoke hearts, drained and chopped
¾ pound shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7-inch baking dish.
  • Melt margarine in a skillet over medium-high heat; saute mushrooms, onion, and garlic in hot butter until the onion is clear, 5 to 7 minutes.
  • Beat eggs, bread crumbs, salt, hot sauce, pepper, oregano, and garlic salt together in a bowl. Stir mushroom mixture, artichokes, and cheese into the egg mixture; pour into the prepared baking dish.
  • Bake in preheated oven until the egg is set in the middle, 35 to 40 minutes. Cool slightly in baking dish before cutting into squares to serve.

2 cans (14-ounce) artichoke hearts, drained and squeezed of excess water (may also use frozen)
1 package (10-ounce) frozen chopped spinach, thawed and squeezed of excess water
1 bunch scallions (white and light green part only), chopped
4 cloves garlic, minced
2 cups (8 ounces) shredded Swiss or Gruyere cheese
4 large eggs
1/2 cup mayonnaise
1/2 cup mascarpone cheese or 4 ounces softened cream cheese
1/2 cup half-and-half or whole milk
1 teaspoon salt
Freshly ground black pepper, to taste

Steps:

  • 1. Turn on the oven to 350 degrees. Use a non-stick cooking spray or olive oil to spray an 11 x 7-inch baking dish. Spread breadcrumbs to the bottom and sides of the baking dish. 2. Chop the artichoke hearts. 3. In a large bowl mix the artichoke hearts, spinach, scallions, garlic, and cheese. 4. Use a spoon to spread them into the baking dish, but make sure to be careful with the breadcrumbs. 5. Mix together in a blender or whisk together eggs, mayonnaise, mascarpone or cream cheese, half-and-half (or milk), salt and black pepper and pour them into the baking dish. 6. Put them into the oven and bake for about 30-35 minutes or until set and lightly browned. Leave them aside to cool slightly and cut into small squares.

1/2 cup vegetable oil, plus
3 tablespoons vegetable oil, divided
1 cup chopped mushroom
1/4 cup thinly sliced celery
1 (13 3/4 ounce) can artichoke hearts, drained and chopped
1/3 cup chopped green onion
1/2 teaspoon dried marjoram, crushed
1/4 teaspoon dried oregano, crushed
1/4 teaspoon ground red pepper
2 cloves garlic, minced
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
2 eggs, slightly beaten
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup milk

Steps:

  • Heat 3 tbs oil in medium skillet over medium-high heat.
  • Add mushrooms,celery and garlic and sautee till celery is tender.
  • Remove from heat, stir in artichoke hearts, onion, marjoram, oregano and ground red pepper Add cheeses and eggs, mix well and set aside.
  • Combine flour and salt in a medium bowl.
  • Combine 1/2 cup vegetable oil and the milk in a small bowl.
  • Add to flour mixture, stir until mixture forms a ball.
  • Press dough in bottom and 1 1/2 inches up sides of 13x9x2 inch pan.
  • Bake in preheated 350 degree oven for 10 minutes.
  • Spread artichoke mixture on baked crust.
  • Continue baking about 20 minutes more or until center is set.
  • Cool slightly, cut into 24 squares.
  • Serve warm.

1/2 medium onion, minced
1 clove garlic, minced
1 tablespoon olive oil
1 14 ounce can of artichoke hearts in water
2 tablespoon minced fresh parsley
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon dried oregano
4 large eggs
1/8 teaspoon Tabasco sauce or your favorite hot pepper sauce
1/4 cup fine dried bread crumbs
8 ounces sharp cheddar cheese, grated (about 2 cups)

Steps:

  • Preheat oven to 325 degrees. Spray a 1 1/2 or 2 quart baking dish or pan with nonstick cooking spray (11 x 7 inch rectangle, 8 inch square, or 9 inch square pans will all work).
  • Heat olive oil in a skillet over medium heat. Cook onion until softened and just starting to brown a bit. Add garlic and cook for another minute. Remove pan from heat and set aside.
  • Drain the can of artichoke hearts and pat them dry with a paper towel. Chop the hearts up into small pieces and place in a mixing bowl. Add minced parsley, salt, pepper, and oregano. Stir everything together.
  • In a separate small bowl, whisk together eggs and hot sauce. Add eggs to artichoke mixture along with the dry bread crumbs. Stir well to combine. Stir in cheddar cheese.
  • Spread mixture evenly in baking dish and bake at 325 degrees for 30 minutes. Let cool in pan for a few minutes before cutting and serving.

2 large garlic cloves, diced
6 1/2 ounces marinated artichokes, reserve marinate, cut in thirds

24 ounces swiss cheese, shredded (or can use Cheddar)
1 cup breadcrumbs (or can use cracker crumbs)

Steps:

  • Saute green onion and garlic in the oil marinade from the artickoke jar.
  • Combine all ingredients in greased, large casserole (11 X 7 X 1 inch).
  • Bake at 350 degrees for 40 minutes.
  • Cut into squares, hence the name of the dish!
  • Can serve hot or cold.

This is an old family favourite. I can't remember where I got the recipe, but I have been making these squares for 25 years. These spicy squares are excellent served hot or cold. If you are not a fan of alot of herbs, than please, add the amount you would prefer, this dish is very versatile.

1 onion, small, chopped
2 garlic cloves, chopped
1/2 cup breadcrumbs

1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme

  • Drain juice from one jar of artichokes into frying pan.
  • Sauté onion and garlic in the artichoke juice, simmer and cool.

  • Drain liquid from one jar of artichokes into skillet. Sauté the onion and garlic in liquid until soft. Drain liquid from remaining jar and discard. Chop all artichoke hearts.

  • Now turn on your heat (to medium-high) under the skillet with the artichoke oil in it.
  • Add the minced garlic and the onions and saute until golden, about 5-10 minutes.
  • Remove from the skillet and put into a large mixing bowl,along with the chopped artichoke hearts.
  • Beat eggs together until they are frothy and then stir in breadcrumbs and the seasonings.
  • Combine with the artichoke mixture and the cheese.
  • Pour into a greased rectangular casserole dish and bake for 30 minutes.

2 6- ounce jars artichoke hearts marinated in oil {mine were marinated in water}
2 tablespoons olive oil {Optional if NOT using heart marinated in oil}
1 small yellow onion (finely chopped { I used a Vidalia onion which added a nice touch of sweetness})
1 clove garlic (minced)
4 eggs
1/4 cup gluten free bread crumbs {or regular if not on a gluten free diet}
1/8 teaspoon each black pepper and dried oregano
1/8 teaspoon hot red pepper sauce (if desired)
8 ounces (or 2 cups cheese {I used a combo of cheddar and Swiss})

Steps:

  • Preheat oven to 350 degrees F.
  • Drain artichoke hearts and chop fine. If using hearts marinated in oil, reserve 2 tablespoons of the oil.
  • Heat the 2 tablespoons of the reserved oil OR 2 tablespoon of olive oil, in a small skillet over moderate heat. Add the onion and garlic, and cook, stirring frequently, until soft-about 5 minutes. Add the chopped artichoke hearts and saute with onion and garlic for an additional minute. Remove from heat and cool for about 5 minutes.
  • In a medium bowl, beat the eggs until frothy. Stir in the breadcrumbs, seasonings, cheese, and artichoke, onion, garlic mixture. Pour into greased 9 X 9 baking pan.
