This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

3 tablespoons butter or 3 tablespoons bacon fat
1 small green cabbage, chopped
1/2 cup onion, chopped
1/2-3/4 lb smoked sausage, sliced (I like Conecuh, Original)
1 (15 ounce) can diced tomatoes, undrained (I like Hunt's Petite Diced)
1/4 teaspoon garlic salt, to taste
1/4 teaspoon Tony Chachere's Seasoning, to taste (optional)
salt, to taste
black pepper, to taste

Steps:

  • Chop/slice the sausage, cabbage, and onion.
  • In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
  • In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
  • Add remaining ingredients, and the sausage.
  • Cover the skillet and cook for about 10 minutes.
  • Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

This easy skillet dinner comes together quickly, making it a perfect option for a weeknight. We used spicy andouille sausages to give the dish a little kick, but any type of sausage would work. Cooking at medium-high heat allows the sausage and vegetables to get nice and caramelized in a short amount of time, but if they ever start to overcook, stir in a splash of cold water to cool the pan down.

2 tablespoons canola oil
8 ounces chicken andouille sausages, sliced diagonally 1/4-inch thick (about 1 heaping cup)
1 small yellow onion, thinly sliced (about 2 scant cups)
Kosher salt
1/2 small head green cabbage, cored, halved crosswise and sliced 1/4-inch thick (about 6 cups)
1/4 teaspoon crushed red pepper
2 cloves garlic, minced
3 tablespoons apple cider vinegar
1 tablespoon unsalted butter
1/2 small sweet-tart apple such as Gala or McIntosh, cored and sliced 1/8-inch thick (about 3/4 cup)
1 large scallion, thinly sliced (about 1/4 cup)
Hot sauce, for serving

Steps:

  • Heat a large cast-iron skillet or high-sided saute pan over medium-high heat. Add the oil and swirl the pan to coat evenly. Add the sausage slices in a single layer and cook until browned on the first side, about 2 minutes. Flip and cook until browned on the second side, about 2 minutes. Use a slotted spoon to remove the sausage slices to a bowl and set aside.
  • Add the onion, a splash of water and large pinch salt to the pan and cook over medium-high heat, using a wooden spoon or heatproof rubber spatula to scrape up any browned bits from the bottom of the pan. Cook, stirring occasionally, until the onion is lightly browned in spots and starting to get tender, 5 to 7 minutes. Add the cabbage, crushed red pepper and another pinch salt and cook until cabbage is crisp-tender, 6 to 8 minutes, stirring occasionally. If the pan seems dry at any point, stir in another splash of water.
  • Add the garlic and cider vinegar and cook until the vinegar is mostly evaporated, about 1 minute, stirring constantly. Stir in the butter until melted, then return the sausage to the pan along with the apple and cook until the apple slices are just tender, 3 to 4 minutes, stirring occasionally.
  • Sprinkle with the scallion and serve immediately with hot sauce alongside.

1 pound hot Italian sausage (for paleo/whole30 be sure to read ingredients to determine if they are compliant)
1 tablespoon olive oil (or oil of choice)
1 large onion (sliced)
1 bag of slaw with kale
4 garlic cloves (minced)
1/2 teaspoon paprika
1/2 teaspoon dried oregano
salt (to taste)
pepper (to taste)

Steps:

  • In a high sided saute pan over medium high heat, brown the sausage until cooked through. Remove from pan.
  • Reduce heat to medium and add 1 tablespoon of oil to the pan. Once hot, add the onions and season with a little salt. Cook for 5-10 minutes, until softened and golden.
  • Add the garlic and spices, cook for about 30 seconds, until fragrant.
  • Add the cabbage/kale slaw to the pan. The pan will be very full at first, carefully mix the slaw in and it will start to wilt and reduce in volume. You my need to add it in a few batches. Continue to stir, until everything is combined and slaw is wilted, about 5 minutes.
  • Add the sausage back to the pan, stir to combine. Cook for another minute or two, until sausage is warmed. Taste and add more salt and pepper if needed. Serve.

Steps:

  • Heat butter in large pan on medium-high heat until melted and foamy.
  • Add diced onions to pan, cook until soft and transparent, about 4 minutes. Stir to prevent sticking or burning.
  • Add garlic to pan, cook until fragrant and soft, about 3 minutes.
  • Add cabbage to pan and toss well to coat in butter.
  • Generously season with salt.
  • Let cabbage reduce by half, about 10 minutes, stirring occasionally as it cooks down to prevent burning and allow it to cook evenly.
  • Slice smoked polska kielbasa into thin rounds and add to pan with cabbage and onions.
  • When cabbage has lost much of it's volume and started to turn shiny, slightly translucent, and has lovely browned bits - and polska kielbasa has browned slightly (smoked kielbasa has been cooked already, so you're just adding some browning and flavor to it), it is ready to serve.
  • Remove from heat and plate with your favorite meat, casserole, fish, or other main dish!

1 tablespoon olive oil
1 pound smoked kielbasa (thinly sliced)
1 onion (finely chopped)
3 cloves garlic (minced)
1 small head Savoy or green cabbage (cored and thinly sliced)
1/2 cup dry white wine
Salt and freshly ground pepper (to taste)

Steps:

  • In a large skillet, over medium heat, heat the olive oil. Working in batches if necessary, add the sliced kielbasa and cook until browned, about 1-2 minutes per side. Remove with a slotted spoon and reserve.
  • Add more oil if necessary, then sauté the onion until translucent, about 2-3 minutes. Stir in the garlic and continue cooking until fragrant, about 1 minute.
  • Add the cabbage and stir to combine. Then, pour in the white wine, using a wooden spoon to deglaze the bottom of the pan. Cover and cook - stirring every now and then, until the cabbage is soft, about 10 minutes. Uncover and continue cooking another 5 minutes, to let the cabbage caramelize.
  • Season with salt and pepper. Then, stir back the sausage, tossing to combine, and cook for another couple of minutes, until the sausage is warmed through.
  • Serve immediately!

2 1/2 tbsp olive or avocado oil
4 full cooked sausages (sliced into circles 1/4 inch thick)
1 tbsp garlic (minced)
1 small head of cabbage (shredded)
1 tsp salt
1/2 tsp black pepper

Steps:

  • Heat 1 tablespoon of olive oil in a large skillet (I use my 12" for this recipe) over medium-high heat. Once the oil is hot, add sliced sausage. Sautè, flipping sausage frequently, for 1 to 2 minutes or until sausage slices have some browning. Remove from pan and set aside.
  • Add remaining 1 1/2 tablespoons of oil to skillet with the garlic. Sauté for 1 minute or until garlic starts to get that golden color.
  • Add shredded cabbage, salt, pepper, and crushed red pepper flakes (optional). Stir. Let cook, stirring occasionally, until cabbage is close to tender, about 10 minutes.
