3/4 cup butter, softened
1/2 cup confectioners' sugar
2 cups all-purpose flour
1/2 teaspoon salt
FILLING:
2 ounces unsweetened chocolate, chopped
4 large eggs
1-1/2 cups packed brown sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
3 cups chopped pecans

Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well. Press into an ungreased 15x10x1-in. baking pan. Bake at 375° for 12-15 minutes or until lightly browned. Cool for 5 minutes on a wire rack. Reduce temperature to 350°., To make filling, in a microwave-safe bowl, melt chocolate; stir until smooth. Cool. In a large bowl, combine the eggs, brown sugar, vanilla, salt and melted chocolate; fold in pecans. , Pour filling over crust. Bake for 18-20 minutes or until filling is set. Cool completely on a wire rack. Cut into diamond-shaped bars.

1 ½ teaspoons vanilla extract
3 cups chopped pecans
3 cups self-rising flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan, or for thinner bars, use a 10x15 inch jellyroll pan.
  • Melt butter in a saucepan over medium heat. Stir in brown sugar until smooth. Remove from heat and let cool slightly.
  • Stir the eggs and vanilla into the brown sugar and butter. Mix in the chopped pecans, and then the flour. Spread evenly in the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until golden brown. Allow to cool before cutting into bars.

2 cups ground pecans
1/2 cup all-purpose flour
1-1/4 cups sugar, divided
4 egg whites
1/2 teaspoon vanilla extract
5 to 6 maraschino cherries, coarsely chopped

Steps:

  • In a large bowl, combine pecans, flour and 1 cup sugar; set aside. In a small bowl, beat egg whites until foamy. Gradually add remaining sugar, beating until stiff peaks form. Fold in vanilla and half of the flour mixture. Fold in remaining flour mixture. Drop by rounded teaspoonfuls 2 in. apart onto ungreased foil-lined baking sheets. Top each with a cherry piece. Bake at 325° for 20-25 minutes or until edges are lightly browned. Cool completely before removing from pans.

1 pound brown sugar
2 cups self rising flour
3 each large eggs
1 1/2 cups pecans (roughly chopped (you can also use walnuts))
2 tsp vanilla

Steps:

  • Preheat oven to 375 degrees and grease or spray cooking spray in 9 X 13 pan.
  • Melt Butter. Add one box of brown sugar and mix together until well incorporated.
  • Next add two cups of self rising flour, three eggs, one and one half cups of pecans and vanilla. Mix until combined.
  • Pour into greased 9 X 13 pan and bake for 20-25 minutes. Remove pan and drop the pan onto the counter top to settle the cake and bake for 5 more minutes.

1 3/4 cups all-purpose flour
2/3 cup confectioners' sugar
1/4 cup cornstarch
1/2 teaspoon salt
1 cup chilled cold butter, preferably unsalted, divided
1 1/2 cups packed light brown sugar
1/2 cup light corn syrup
4 cups coarsley chopped pecans
1/2 cup whipping cream, unwhipped
2 teaspoons vanilla
8 ounces unwrapped caramels (about 28)
2 -3 teaspoons whipping cream

Steps:

  • Set oven to 350 degrees.
  • Line a 13 x 9-inch baking pan with foil, leaving a 1-inch overhang on all sides; butter foil.
  • In a food processor, blend the flour confectioner's sugar, cornstarch and salt for a couple of seconds.
  • Add in 3/4 cup COld butter (cut into chunks); process until mixture begins to clump together.
  • Press the dough evenly onto the bottom of the foil-lined baking pan.
  • Bake until light and golden, about 25 minutes (don't overbake).
  • Remove from oven; let stand while preparing the topping.
  • Reduce the oven temperature to 325 degrees.
  • FOR TOPPING: stir the brown sugar, corn syrup, and 1/4 cup butter in a heavy-bottomed saucepan over medium-high heat, until the sugar dissolves, and the mixture boils; boil for 1 minute.
  • Add in the pecans and the whipping cream; boil until the mixture thickens slightly (about 3 minutes).
  • Stir in vanilla.
  • Pour over the warm baked crust.
  • Bake for 20 minutes, or until the topping is darker, and bubbles thickly.
  • Transfer pan to a wire rack; cool completely in the pan (topping will harden).
  • In a double boiler, melt the caramels with 2-3 tsp whipping cream.
  • Drizzle over the top of the cooked nut topping; cool.
  • Lift foil out of the pan onto a cutting board.
  • Using a heavy, sharp knife, cut the crust with nut topping into 1-1/2 x 1-inch diamonds.
  • These keep for up to 1 week.

  • Preheat oven to 300° F. Spray a 9x13 baking dish with nonstick cooking spray. Optionally, line the 9x13 baking dish with parchment long enough that the edges extend for easily lifting the Pecan Chewies from the baking dish for cooling and cutting.
  • Melt butter in a medium saucepan set over medium heat. Once melted, pour the butter into a large mixing bowl and beat together with granulated, brown sugar, and vanilla extract until well combined. Mix in eggs until well combined, followed by the flour. Scrumptious brown sugar and chocolate are ooey, gooey, and satisfying, and they're the perfect reward for a day of hard work.

Number Of Ingredients 15

2 cups all-purpose flour
1 teaspoon table salt
1/4 teaspoon baking powder
1/2 cup (1 stick) butter, at room temperature
1/2 cup light-brown sugar
1 teaspoon pure vanilla extract
1 1/2 packed cups light-brown sugar
1/2 cup light corn syrup
2 tablespoons all-purpose flour
1 tablespoon bourbon
1 tablespoon pure vanilla extract
3/4 teaspoon table salt
2 large eggs, lightly beaten
2 cups pecans, toasted, roughly chopped
1 cup mini-chocolate chips

Steps:

  • Preheat the oven to 350 degrees F.
  • Line a 9-by-13-inch baking pan with foil, leaving 2 inches of overhang to use as handles to remove the bars at the end of baking.
  • Whisk together the flour, salt, and baking powder in a small bowl. Cream together the butter and light-brown sugar, using a hand mixer, in a separate, large bowl, until light and fluffy. Beat in the vanilla. Gradually pour in the dry mixture, and beat until the dough looks like coarse, pea-sized lumps. Use your hands to form the dough into a ball, then transfer it to your prepared baking pan and press down evenly to fill the pan. Bake for 20 minutes, or until lightly golden.
  • To make the filling: Combine the brown sugar, corn syrup, flour, bourbon, vanilla, salt, eggs, pecans, and chocolate chips in a large bowl. Remove the hot half-baked dough from the oven, and spread the filling over the crust. Return the pan to the oven, and bake for another 25 minutes, or until the top is puffed and brown and cracks begin to form (like a pecan-pie topping). Let cool for 45 minutes before slicing into squares.
