LOBSTER CEVICHE WITH PASSION FRUIT
Steps:
- Dice the lobsters into large pieces and place in a large mixing bowl. Add the onion, tomatoes, scallions, and orange segments.
- In a separate bowl, combine the mango nectar, lime juice, and the passion fruit juice. Add the juice mixture to the lobster mixture and season with cilantro, salt, and pepper, to taste.
- Arrange sliced mango and grapefruit segments on a plate and top with ceviche.
SEARED TUNA WITH MANGO SALSA
Steps:
- Saute the olive oil, onions, and ginger in a large saute pan over medium-low heat for 10 minutes, or until the onions are translucent. Add the garlic and cook for 1 more minute. Add the mangos, reduce the heat to low and cook for 10 more minutes. Add the orange juice, brown sugar, salt, black pepper, and jalapeno; cook for 10 more minutes, until orange juice is reduced, stirring occasionally. Remove from the heat and add the mint. Serve warm, at room temperature, or chilled.
- Heat a saute pan over high heat for 5 minutes until very hot. Season the tuna liberally with salt and pepper. When the pan is very hot, add a drizzle of olive oil and then the tuna steaks. Sear for 2 to 3 minutes on each side, or until the outside is browned, but the inside is very rare.
- Serve the tuna on top of the mango salsa.

- Cut off small ends of passion fruits. Scoop out pulp and seeds into mesh strainer placed over blender container; press down on pulp with back of spoon to extract juice. Add sour cream and honey to juice; cover. Blend well; set aside.
- Mix corn flake crumbs, cornmeal and pepper in shallow dish; set aside. Beat egg lightly in separate shallow dish. Dip shrimp in egg, then in corn flake mixture, turning over to evenly coat both sides. Gently shake off excess crumb mixture.
- Heat oil in large deep skillet or saucepan on medium-high heat to 350°F to 375°F. Add shrimp, in batches; cook 2 to 3 min. or until golden brown and cooked through. Drain on paper towels. Serve with the passion fruit sauce.

SEARED AHI TUNA WITH BLACKBERRY-PASSION FRUIT MARINADE
This is a great summer dish. The marinade is great for grilling tuna, too. I usually serve this with a spinach salad with my passion fruit-dijon vinaigrette or my fennel salad. You can serve it with steamed white rice or over lettuce, thinly sliced cabbage, or fennel. Pair it with a passion fruit lemonade, a fruity cocktail, or a glass of light and fruity wine.

Steps:
- Crush blackberries in a bowl until smooth. Add passion fruit juice, soy sauce, lemon juice, honey, parsley, sea salt, and pepper and stir until marinade is thoroughly mixed.
- Place tuna in a glass dish and pour marinade over top; flip several times to coat. Cover the dish with plastic wrap and marinate in the refrigerator for 2 hours.
- Remove tuna from the marinade and shake off excess. Discard the remaining marinade.
- Heat a nonstick skillet over medium-high to high heat. Sear tuna in the hot skillet for 1 to 1 1/2 minutes per side.
- Remove from the skillet and slice into 1/4-inch thick slices.
